EASY CHILI MAC RECIPE

This hearty Chili Mac Recipe will please a crowd and is easy to make ahead by a day or two.

1 pound elbow macaroni
2 tablespoons olive oil
3 cups diced onion (about 2 medium onions)
2 pounds ground beef (I like to use ground chuck)*
7 ounces canned diced green chiles
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon ground black pepper, plus more to taste
4 tablespoons chili powder
1 tablespoon garlic powder
8 ounces beef broth
64 ounces canned crushed tomatoes
3 (16) ounce cans BUSH'S Beans Chili Beans Kidney Beans in Mild Chili Sauce (do not drain)
1 pound shredded cheddar cheese (medium or sharp)
optional garnish: sour cream, shredded cheese, diced green onion

Steps:

  • Cook pasta according to package instructions.
  • While pasta is cooking, heat oil in large stock pot** over medium heat. Add onions; cook, stirring occasionally for 3-4 minutes, until slightly softened.
  • Add ground beef, canned chiles, salt, pepper, chili powder and garlic powder. Stir together and continue to cook to brown beef, breaking up any clumps of meat, about 5-7 minutes.
  • Once all meat has browned, stir in beef broth, crushed tomatoes and beans (along with bean sauce). Reduce heat to a simmer; allow to simmer for at least 15 minutes.
  • Drain pasta. Stir cooked pasta and shredded cheese into chili until combined well and cheese has melted. Salt and pepper to taste.*** (If a thinner consistency is desired add a bit more broth at a time until desired consistency is reached.)
  • Serve topped with optional garnish: sour cream, shredded cheese, sliced green onion, diced red onion, corn chips.

Steps:

  • In large saucepan, brown ground beef with onions; drain.
  • Add remaining ingredients except green pepper and kidney beans. Bring to a boil; reduce heat.
  • Simmer uncovered 1 hour, stirring occasionally. Stir in green pepper and kidney beans; simmer until thoroughly heated.

2 pounds ground beef
1 medium onion, chopped
1 can (46 ounces) tomato juice
1 can (28 ounces) diced tomatoes, undrained
2 celery ribs, chopped
3 tablespoons brown sugar
2 tablespoons chili powder
1 teaspoon salt
1 teaspoon prepared mustard
1/4 teaspoon pepper
2 cans (16 ounces each) kidney beans, rinsed and drained
1/2 cup uncooked elbow macaroni

Steps:

  • In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomato juice, tomatoes, celery, brown sugar, chili powder, salt, mustard and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour, stirring occasionally., Add the beans and macaroni; simmer 15-20 minutes longer or until macaroni is tender.

500 g ground sirloin beef (90% lean)
125 mL chopped onion
1 mL salt
1 can (540 mL) Aylmer® Accents® Diced Stewed Tomatoes with Chili Seasonings, drained
1 can (398 mL) red kidney beans, drained and rinsed
1 pkg (35 g) chili seasoning mix
250 mL Hunt's® Original Tomato Sauce with No Salt Added

Steps:

  • Cook macaroni according to package directions, omitting salt. Drain pasta.
  • Meanwhile, in large skillet set over medium-high heat, stir together beef, onion and salt. Cook, stirring occasionally, for 5 to 7 minutes or until beef is crumbled and no longer pink; drain. Stir in tomatoes, kidney beans, chili seasoning and tomato sauce. Bring to a boil. Cover, reduce heat to low and simmer, stirring occasionally, for 10 minutes or until thickened.
  • Stir macaroni into beef mixture.

1 medium onion, diced
15 ounce can kidney beans (rinsed and drained)
15 ounce can black beans (rinsed and drained)
1 medium green pepper (seeded and diced)
4 ounce can diced green chiles or diced jalapenos
24 ounce can tomato sauce
28 ounce can diced or whole tomatoes (if using whole tomatoes, break up with a spoon )
4 tablespoons chili powder
2 tablespoons cumin
2 teaspoons salt
1 teaspoon pepper
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoons Mexican oregano
1 teaspoon olive oil
12 ounces short cut pasta, like macaroni or shells (approximately half of a box)
2 cups shredded cheddar cheese (or more as desired)
optional toppings: green onions, sour cream, crushed chips

Steps:

  • Add olive oil, onion, and ground beef to saucepan over high heat. Cook until browned. Reduce heat to low and stir in half the salt and chili powder.
  • Add remaining chili ingredients. Let cook over low for a minimum of 1 hour, up to 4 hours, stirring frequently. Taste and add more seasoning as desired.
  • When chili is almost finished cooking, start boiling water for the pasta. Cook pasta according to package instructions.
  • To serve, scoop place a serving of pasta in a bowl and top with a serving of chili, then shredded cheese and any other optional toppings.

1 tablespoon olive oil
1 ½ pounds ground beef
1 small onion, chopped
1 stalk celery, chopped
½ green bell pepper, chopped
1 (28 ounce) can diced tomatoes
1 (15.5 ounce) can light red beans, drained
1 (15.5 ounce) can dark red beans, drained
1 (15.5 ounce) can black beans, drained
1 (14.5 ounce) can diced tomatoes with green chile peppers
3 tablespoons chili powder, or to taste
2 teaspoons white vinegar
sea salt and ground black pepper to taste
shredded Cheddar cheese, or to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Cook and stir ground beef in the hot pot until browned and crumbly, about 10 minutes. Add onion, celery, and green bell pepper. Cook until onion is translucent, about 5 minutes.
  • Stir diced tomatoes, light red beans, dark red beans, black beans, diced tomatoes with chile peppers, and chili powder into the meat mixture. Bring to a boil. Reduce heat to low and let simmer until chili has started to thicken, about 1 hour. Season with vinegar, salt, and pepper. Garnish with Cheddar cheese.

1 banana pepper, finely chopped
2 cans (28 ounces each) diced tomatoes, undrained

2-1/2 teaspoons chili powder
2 teaspoons ground cumin
2 cups uncooked elbow macaroni
4 cups shredded cheddar cheese

  • In a Dutch oven, cook beef, onion and peppers over medium-high heat until beef is no longer pink and vegetables are tender, breaking up beef into crumbles, 8-10 minutes; drain. 8 ounces cooked elbow macaroni

1 teaspoon chili powder
1/2 teaspoon cumin
1 teaspoon salt
1 cup cheddar cheese

Steps:

  • In a large skillet brown the ground beef with the onion and garlic powder.
  • Drain oil and return to the skillet.
  • Add kidney beans, tomato sauce, water, chili powder and salt.
  • Cover and simmer for 15-20 minutes.
  • Add cooked macaroni and stir.
  • Sprinkle cheddar cheese on top, cover and simmer just until the cheese melts.
