LEMON MUFFINS
Grated lemon peel adds flavor to this basic muffin recipe for citrus-accented homemade muffins you can achieve quickly and easily.

Steps:
- Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
- In a medium bowl, combine flour, sugar, baking powder, lemon zest and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
- Fill cups 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

HEAVENLY LEMON CAKE
Minimal and inexpensive ingredients, minimal preparation time, easy, and tastes divine...it has to be heaven! Delicious moist lemon cake, perfect served hot with cream for dessert, or cold with coffee!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a round cake pan with parchment paper.
- Beat 1 1/4 cup sugar and butter together in a bowl using an electric mixer until smooth; beat in eggs, 1 at a time, beating well before adding the next egg. Stir flour, lemon zest, and baking powder into creamed butter mixture until batter is smooth; pour into the prepared pan.
- Bake in the preheated oven until a knife inserted in the center comes out clean, 45 to 55 minutes.
- Combine 1/2 cup sugar and lemon juice in a saucepan over medium heat; cook and stir until sugar is dissolved, about 5 minutes.
- Poke holes into the top of the warm cake and pour syrup over cake. Cool slightly before cutting.

HEAVENLY LEMON MUFFINS
These muffins have two layers - a lemony regular muffin layer topped with a layer of angel food cake, making them "heavenly." You can also make Heavenly Strawberry Muffins by substituting strawberry extract for the lemon extract and red food coloring for yellow food coloring and leaving out the lemon peel.

- Preheat oven to 375°. Line 24 (2 1/2-inch) muffin cups with paper liners or spray with nonstick cooking spray.
- In large bowl, prepare angel food cake mix according to package directions.
- In another large bowl, combine flour, baking powder and salt.
- In medium bowl, combine sugar, milk, applesauce, oil, egg whites, lemon peel, lemon extract and food coloring, if desired.
- Stir apple sauce mixture into flour mixture just until moistened.
- Fill each muffin cup 1/3 full with applesauce batter. Top with angel food cake batter, filling each cup almost full. ***There will be some angel food cake batter remaining.
- Bake 20 minutes or until golden and puffed. Immediately remove from pan; cool completely on wire rack. Sprinkle tops with powdered sugar, if desired.

*HEAVENLY* FIBER MUFFINS
High-fiber muffins that are full of flavor. Full of apples, carrots and nuts, these muffins are so good and great for you. I adapted this recipe from one that came on a box of Hodgon Mill Mulit-Grain Hot Cereal (found in the gourmet or health food area of a regular grocery store). If you can find the Hodgon Mill hot cereal, use it, but if you can't find it, you can put the same amount of oatmeal in a blender or food chopper and chop until it is very fine. Note: the more you use the lowfat options, the quicker these will cook. Best is to stick to just one or two lowfat options (e.g. just egg whites and skim milk and use veg oil, etc.)

Steps:
- Peel and chop apples. Peel and shred or finely chop carrot. Use a mini-food chopper or food processor to speed the process.
- Preheat oven to 400 degrees.
- Mix dry ingredients in a large bowl.
- Add apple, carrot and other wet ingredients.
- Mix well! Batter will be quite thick.
- Grease muffin pan or muffin cups.
- Spoon batter into cups.
- Bake for about 20-22 minutes or until muffins are golden brown on the top and a toothpick inserted into one comes out clean.
- Serve warm with butter, margarine or jam.
