Smoked Gouda Veggie Melt image

After a long day of teaching, I like to make these veggie-packed grilled-cheese sandwiches. My 8-year-old daughter is a big fan, too. -Charlie Herzog, West Brookfield, Vermont

1 cup chopped fresh mushrooms
1 cup chopped fresh broccoli
1 medium sweet red pepper, chopped
1 small onion, chopped
2 tablespoons olive oil
8 slices Italian bread (1/2 inch thick)
1/2 cup mayonnaise
1 garlic clove, minced
1 cup shredded smoked Gouda cheese

Steps:

  • Preheat oven to 425°. Place mushrooms, broccoli, pepper and onion in a greased 15x10x1-in. baking pan. Drizzle with oil; toss to coat. Roast 10-12 minutes or until tender., Meanwhile, place bread slices on a baking sheet. Mix mayonnaise and garlic; spread over bread., Change oven setting to broil. Spoon vegetables over bread slices; sprinkle with cheese. Broil 3-4 in. from heat 2-3 minutes or until cheese is melted.

This is a recipe we used to use where I work. I really didn't want to try it at first but I am really glad I did because it's fantastic.

1 croissant, sliced lengthwise
2 ounces cream cheese
1/4 of an avocado, sliced thin
1/4 cup alfalfa sprout
1 tablespoon sunflower seeds
1 tablespoon raisins
2 tablespoons carrots, shredde
1/4 of a green apple, sliced

Steps:

  • Spread the cream cheese on the bottom of the croissant.
  • Arrange the sliced avacado over the cream cheese.
  • Top with all the other ingredients.
  • Enjoy!

This is recipe from a book I recieved from the Cookbook Swap. A variety of fresh vegetables will work in this sandwich. A great lunch!

2 crusty Italian bread
2 tablespoons clear Italian salad dressing
1/2 small onion, thinly sliced
1/2 small zucchini, halved lengthwise and sliced
1/2 small green sweet pepper, cut into thin strips
1/2 teaspoon garlic clove, minced
1 medium tomatoes, seeded and chopped
1 1/2 cups shredded provolone cheese (6 ounces) or 1 1/2 cups mozzarella cheese (6 ounces)
2 tablespoons grated parmesan cheese

Steps:

  • Chose crusty Italian bread that are 6-7 inches long.
  • Split bread in half horizontally. Place halves on baking sheet, cut side up.
  • In a 10-inch skillet or wok heat the salad dressing. Add onion, zucchini, green pepper, and garlic. Stir-fry for 3 to 5 minutes or until crisp-tender. Stir in tomato.
  • Sprinkle half of the provolone or mozzarella cheese on bread halves. Spoon vegetable mixture on cheese; sprinkle with remaining provolone or mozzarella and the Parmesan cheese.
  • Broil 3 to 4 inches from the heat about 2 minutes or until cheese melts. Serve immediately.

Very tasty New England Soup. Mom used to make this about every other week in the winter. I hope you enjoy it as much as I do!

1 lb hamburger (lean)
2 large turnips (diced)
4 medium potatoes (diced)
2 cups chopped carrots
1 medium onion
1 cup frozen peas
1 cup mushroom (sliced)
12 cups water
4 teaspoons beef stock (or if desired substitute 3 cups of water for 3- 15oz cans beef broth.)

Steps:

  • Brown hamburger and onion in large stock pot.
  • Add all other ingredients with the water Bring to boil Reduce heat to medium and let simmer approx 1 hour or until vegetables are tender.
  • Season to Taste!

This is just a template, really--you can use any kind of bread/cheese/veggie combo that you like. I made this and it was delightful--the bottom of the bread was crusty and the part touching the vegetables was moist--YUM! Out-of-this world with a bowl of soup.

1 1/2 ounces approx. slice multi-grain bread
2 ounces mozzarella cheese, sliced
1/3 cup portabella mushroom, sliced
1 small fresh tomato, sliced
2 slices red onions
1/2 teaspoon basil
salt and pepper

Steps:

  • Preheat oven to 375.
  • Lay the piece of bread on a cookie sheet or other pan.
  • Arrange vegetables in layers on the bread. Sprinkle with herbs and lay cheese on top.
  • Place in oven and bake 12-15 minutes, or until cheese is melted and bubbly.
  • Enjoy your hot sandwich.
