As a native of Henan, braising noodles is my best. My family's favorite is also, not only can you make lamb, but also beef, chicken, ribs and so on. This is a beef stew noodle, and it is also a flavour that we Henan people like to eat. The taste is also amazing.

1000g beef
400g Flour
1 serving Boiled meat
Some salt
1/2 teaspoon pepper
A few vegetables

Steps:

  • In advance, add water to the noodles in a ratio of 2:1 and add 3 grams of salt to form a dough. I used a bread machine to knead the dough, just a kneading program will do
  • Then divide into small doses and cover with plastic wrap for 15 minutes
  • Roll into slices, put oil on each slice, place in a plate, tightly covered with plastic wrap, 饧 for one hour

  • Cut into large pieces of about 5 cm, soak the bleeding water in cold water, change the water several times
  • Remove the soaked beef and put it in the pot, add water, the amount of water is twice that of beef
  • Prepare boiled meat ingredients: 2 star anise, 30 Chinese pepper, 2 slices of Angelica dahurica, 1 fruit, 2 slices of Amomum, 1 slice of cinnamon, 4 slices of ginger, 4 slices of chili
  • After the beef is boiled, skim the froth, and then add the boiled meat
  • Simmer for 2 hours
  • Remove the cooked beef, let cool and slice
  • Pour the stewed soup into a wok, add salt, pepper,
  • Pull the noodles into wide noodles and cook them in the beef broth. You can put a little greens before out of the pot
