BROILED ITALIAN TOMATOES WITH GARLIC AND HERBS



Broiled Italian Tomatoes with Garlic and Herbs image

Full of the flavours of sunny Tuscany, these Broiled Italian Tomatoes make a quick and easy healthy side dish for your favourite grilled meat or other vegetables. Keto, Paleo and Dairy-free.

6 medium ripe tomatoes (Campari or other flavourful tomato variety)
1 tbsp olive oil (extra virgin)
2 cloves garlic (sliced)
1/4 cup mixed Italian herbs (rosemary, oregano, thyme)
salt and pepper
1 tbsp balsamic vinegar (good quality aged )

Steps:

  • Slice tomatoes in half through their equator and arrange in a baking dish.
  • Peel garlic cloves and slice them thinly. Mince the herbs and divide in two.
  • In a small skillet over medium heat, heat oil gently, then add sliced garlic. After one minute, add 2 tablespoons of the herbs and cook just until the garlic begins to brown.
  • Remove from heat and drizzle the garlic-herb infused oil over the tomatoes.
  • Broil for 7-10 minutes or until tomatoes are tender. Remove from the oven and sprinkle with salt and pepper and the remaining fresh herbs.
  • Drizzle with balsamic vinegar and serve immediately.

3 tomatoes, cut into 3/8 inch slices (do not use ends)
1 tablespoon olive oil, approximately for brushing on tomatoes
2 -3 teaspoons herbes de provence, approximately
salt and pepper, to taste
2 -3 tablespoons fresh parmesan cheese, grated (don't use the dried stuff)
1/4 cup parsley, finely chopped (I use flat leaf parlsey)

Steps:

  • Prepare broiler.
  • Place tomato slices on broiler pan.
  • Brush slices with oil, and sprinkle with Herbes, salt, pepper, cheese and parsley.
  • Broil until warmed through, about 3 minutes.
  • Serve immediately.

HERB AND PANKO STUFFED BROILED TOMATOES

Broiled tomatoes are one of my favorite side dishes for any kind of dinner. I infuse crunchy Panko crumbs with a little fresh garlic and thyme to amp up the flavor. They look fancy, taste delicious and look impressive for company dinner.

2 Roma tomatoes
1/2 cup panko crumbs
2 Tbsp Olive Oil
1 small pat unsalted butter
1 garlic clove (finely minced)
coarse salt & freshly ground pepper
2-3 tsp fresh thyme (finely minced (about 1-2 small sprigs))
1 Tbsp Parmesan cheese (optional)
4 small "dots" unsalted butter (optional)

Steps:

  • Preheat oven to 350F
  • Cut tomatoes, lengthwise, in half
  • Remove pulp and seeds
  • Lightly sprinkle salt and pepper inside the tomatoes
  • Heat olive oil and butter on low heat; add the minced garlic and allow to "steep" for about five minutes
  • In a separate bowl, add the fresh thyme and Parmesan cheese.
  • Add the olive oil and combine to the seasoned crumbs with a fork.
  • Fill the cavity of each tomato and place into a small oven-proof dish that has been very lightly brushed with olive oil.
  • Bake at 350 for about 7-8 minutes. Add a small dot of butter to each tomato and turn on the broiler (second highest rack position).
  • Broil for 2-3 more minutes, until golden brown.
  • Serve.

3 tablespoons good olive oil
2 teaspoons minced garlic (2 cloves)
2 pints cherry tomatoes or grape tomatoes
2 tablespoons chopped fresh basil, plus more for garnish
2 tablespoons chopped fresh flat-leaf parsley, plus more for garnish
2 teaspoons chopped fresh thyme leaves
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat the olive oil in a saute pan large enough to hold all the tomatoes in one layer. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, salt, and pepper. Reduce the heat to low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to loose their firm round shape. Sprinkle with a little fresh chopped basil and parsley and serve hot or at room temperature.

2 large tomatoes, cut into 3/4-inch slices
1 tablespoon olive oil
½ teaspoon dried basil leaves
½ teaspoon dried oregano
1 clove garlic, minced
salt and ground black pepper to taste
⅓ cup soft bread crumbs
⅓ cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
1 dash balsamic vinegar

Steps:

  • Place an oven rack 6 inches from the top of the oven, preheat the broiler, and and arrange tomato slices on a foil-lined baking sheet.
  • Combine olive oil, basil, oregano, garlic, salt, and pepper in a bowl and brush onto the tops of the tomatoes.
  • Combine bread crumbs, mozzarella cheese, and Parmesan cheese in a small bowl and sprinkle the mixture over the tomatoes.
  • Place under the broiler until topping starts to brown, 3 to 4 minutes, checking frequently to avoid burning.
  • Transfer tomatoes to a plate, drizzle with balsamic vinegar, and serve.

4 medium-size ripe tomatoes, about 1 pound
Salt and freshly ground pepper to taste
1/4 cup fine fresh bread crumbs
2 finely chopped shallots
1 teaspoon finely chopped garlic
2 tablespoons finely chopped parsley
1 teaspoon fresh thyme leaves or 1/4 teaspoon dried
1 tablespoon olive oil

Steps:

  • Preheat the broiler.
  • Cut away the core of each tomato, then halve the tomatoes crosswise. Sprinkle with salt and pepper.
  • Combine the bread crumbs, shallots, garlic, parsley, thyme and olive oil. Blend well.
  • Top each tomato half with equal portions of the bread-crumb mixture, pressing down with your fingers to distribute the topping evenly. Arrange the tomato halves on a baking dish, and place about 8 inches from the source of heat. Close the door and cook for about 5 minutes or until lightly browned. Keep warm.

Tomatoes make a lovely side for almost any protein. This easy recipe will work for Roma or Campari tomatoes. A little seasoning and grated Parmesan will complete this quick and easy dish that is on the table in minutes!

4 Roma tomatoes
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
½ teaspoon dried Italian herb seasoning
½ cup freshly grated Parmesan cheese
1 tablespoon fresh parsley

Steps:

  • Preheat a broiler according to manufacturer's recommendations. Line a baking sheet or small sheet pan with aluminum foil.
  • Slice tomatoes in half crossways. Slice thin slices off of the round part of the tomato halves so they will sit straight on the pan.
  • Place tomato halves on the prepared pan and sprinkle with salt, pepper, and Italian seasoning to taste.
  • Place seasoned tomatoes under the broiler and broil about 4 minutes. Be sure to watch carefully, so they won't burn.
  • Sprinkle 1 tablespoon grated Parmesan cheese on each tomato half, and return to the broiler.
  • Broil until Parmesan cheese is melted and bubbly, 45 seconds to 1 minute.
  • Transfer broiled tomatoes on a plate or serving platter and garnish with fresh parsley, if desired. Serve warm.

  • Arrange the sliced tomatoes onto a baking pan. I used one of those Silpat liners to keep the tomatoes from sticking and make clean up a little easier.
  • Combine the bread crumbs and cheese in a bowl. I ended up with extra because I only used two tomatoes, but now I have more if I want to make some of these for lunch.
  • Stick under the broiler about 6 inches away from the heat and broil for about 3 minutes until the bread crumbs are a deep golden brown but not burnt. Remove from oven and top with the fresh herbs and an extra little extra virgin olive oil and serve.
