BROILED ITALIAN TOMATOES WITH GARLIC AND HERBS
Full of the flavours of sunny Tuscany, these Broiled Italian Tomatoes make a quick and easy healthy side dish for your favourite grilled meat or other vegetables. Keto, Paleo and Dairy-free.

Steps:
- Slice tomatoes in half through their equator and arrange in a baking dish.
- Peel garlic cloves and slice them thinly. Mince the herbs and divide in two.
- In a small skillet over medium heat, heat oil gently, then add sliced garlic. After one minute, add 2 tablespoons of the herbs and cook just until the garlic begins to brown.
- Remove from heat and drizzle the garlic-herb infused oil over the tomatoes.
- Broil for 7-10 minutes or until tomatoes are tender. Remove from the oven and sprinkle with salt and pepper and the remaining fresh herbs.
- Drizzle with balsamic vinegar and serve immediately.

HERB AND PANKO STUFFED BROILED TOMATOES
Broiled tomatoes are one of my favorite side dishes for any kind of dinner. I infuse crunchy Panko crumbs with a little fresh garlic and thyme to amp up the flavor. They look fancy, taste delicious and look impressive for company dinner.

Steps:
- Preheat oven to 350F
- Cut tomatoes, lengthwise, in half
- Remove pulp and seeds
- Lightly sprinkle salt and pepper inside the tomatoes
- Heat olive oil and butter on low heat; add the minced garlic and allow to "steep" for about five minutes
- In a separate bowl, add the fresh thyme and Parmesan cheese.
- Add the olive oil and combine to the seasoned crumbs with a fork.
- Fill the cavity of each tomato and place into a small oven-proof dish that has been very lightly brushed with olive oil.
- Bake at 350 for about 7-8 minutes. Add a small dot of butter to each tomato and turn on the broiler (second highest rack position).
- Broil for 2-3 more minutes, until golden brown.
- Serve.

- Heat the olive oil in a saute pan large enough to hold all the tomatoes in one layer. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, salt, and pepper. Reduce the heat to low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to loose their firm round shape. Sprinkle with a little fresh chopped basil and parsley and serve hot or at room temperature.

- Combine olive oil, basil, oregano, garlic, salt, and pepper in a bowl and brush onto the tops of the tomatoes.

- Preheat the broiler.
- Cut away the core of each tomato, then halve the tomatoes crosswise. Sprinkle with salt and pepper.
- Combine the bread crumbs, shallots, garlic, parsley, thyme and olive oil. Blend well.
- Top each tomato half with equal portions of the bread-crumb mixture, pressing down with your fingers to distribute the topping evenly. Arrange the tomato halves on a baking dish, and place about 8 inches from the source of heat. Close the door and cook for about 5 minutes or until lightly browned. Keep warm.

Steps:
- Preheat a broiler according to manufacturer's recommendations. Line a baking sheet or small sheet pan with aluminum foil.
- Slice tomatoes in half crossways. Slice thin slices off of the round part of the tomato halves so they will sit straight on the pan.
- Place tomato halves on the prepared pan and sprinkle with salt, pepper, and Italian seasoning to taste.
- Place seasoned tomatoes under the broiler and broil about 4 minutes. Be sure to watch carefully, so they won't burn.
- Sprinkle 1 tablespoon grated Parmesan cheese on each tomato half, and return to the broiler.
- Broil until Parmesan cheese is melted and bubbly, 45 seconds to 1 minute.
- Transfer broiled tomatoes on a plate or serving platter and garnish with fresh parsley, if desired. Serve warm.

- Arrange the sliced tomatoes onto a baking pan. I used one of those Silpat liners to keep the tomatoes from sticking and make clean up a little easier.
- Combine the bread crumbs and cheese in a bowl. I ended up with extra because I only used two tomatoes, but now I have more if I want to make some of these for lunch.
- Stick under the broiler about 6 inches away from the heat and broil for about 3 minutes until the bread crumbs are a deep golden brown but not burnt. Remove from oven and top with the fresh herbs and an extra little extra virgin olive oil and serve.
