HERB STUFFED PORK SHOULDER

Herb Stuffed Pork Shoulder image

Provided by Mila

Number Of Ingredients 12

1 3-5 pound pork butt (boneless)
8 garlic cloves * (I like a very garlicky flavor, feel free to use less if you like it a bit milder)
5 sprigs of rosemary (stems removed)
3 sage leaves
1/4 cup of olive oil
1/2 cup white wine
1/4 tsp of crushed red pepper flakes.
Salt and pepper to taste
Butchers twine
2 onions (roughly chopped)
2 carrots roughly chopped
2 turnips roughly chopped

Steps:

  • Preheat oven to 450-degrees.
  • Combine sage, rosemary, garlic, olive oil, wine and crushed red pepper flakes and purée in a food processor until smooth. Season with salt and pepper and combine.
  • Lay the pork flat and massage the herb mixture on the inside and out.
  • Roll up the pork like a roulette and tie it with the butcher twine. It does not have to look beautiful, just tie it up so that it stays together
  • Place all the vegetables in a large roasting pan or Dutch oven. Toss with olive oil, salt and pepper.
  • Place the roast on top of the veggies and put in the oven.
  • Roast for 10 minutes then drop the temperature to 375-degrees.
  • Continue to cook until internal temperature of the roast reaches 145-degrees.
  • Remove and let rest under a foil tent for 15 minutes.
  • Snip off twine. Slice and enjoy!!!

BRAISED, STUFFED PORK SHOULDER

Braised, Stuffed Pork Shoulder image

Pork shoulder roast, stuffed with a mixture of bread crumbs, garlic, and herbs, then braised in white wine with garlic, rosemary and herbs.

Provided by Elise Bauer

Categories     Dinner     Pork     Pork Roast     Pork Shoulder

Yield 8

Number Of Ingredients 16

4 pounds pork shoulder roast, boned, untied
2 tablespoons extra virgin olive oil
2 cups chicken or beef stock, boiling
Marinade:
1 cup dry white wine (like a Sauvignon blanc)
2 tablespoons extra virgin olive oil
1 teaspoon chopped fresh rosemary
2 teaspoons mixed dried herbs (can use an herbes de provence, or Italian seasoning blend)
2 garlic cloves, minced
Herb-stuffing:
2 tablespoons chopped parsley
1 teaspoon mixed dried herbs
2 garlic cloves, minced
Salt and pepper
1 egg
1/4 cup breadcrumbs

Steps:

  • Marinate pork: Mix together the marinade ingredients in a large bowl. Add the pork roast and turn it to coat it all over with the marinade. Marinate for several hours in the refrigerator. Remove from refrigerator 1 to 2 hours before cooking to bring closer to room temp. Remove pork roast from marinade, pat dry. Reserve marinade.
  • Make the stuffing: Combine the stuffing ingredients until the mixture has the consistency of a paste.
  • Stuff the roast: Open up the pork roast to expose where the bone had been. Smear the stuffing onto this surface. Tie up the pork roast to enclose the stuffing. Rub the pork with olive oil.
  • Sear the roast in oven or on stovetop: Either place the pork in a large roasting pan and sear it in a pre-heated 425°F oven for 30 minutes or until the surface is golden brown, OR sear the roast on all sides in a large cast iron frying pan on medium high heat on the stovetop. Transfer the pork to a thick-bottomed pot with a cover just large enough to contain it. (We used a 2 1/2 quart Le Creuset.)
  • Deglaze the pan with the strained marinade: Drain off the fat from the roasting pan or searing pan, then strain the marinade into the pan and heat, stirring to deglaze the pan juices.
  • Add marinade and stock to pot with pork, cover and cook: Pour the marinade over the pork and add enough stock to come one-half or two-thirds of the way up the side of the meat. Heat on high to bring to a simmer, lower the heat to maintain a bare simmer, cover the pot and simmer for about one and a half hours. OR if you've already heated the oven to sear the roast, bring to a simmer and then put it in a 325°F oven for 1 1/2 hours.
  • Remove meat to cutting board, reduce liquids to make a sauce: Transfer the meat to a cutting board. Strain the liquid from the pot into a small saucepan, let settle enough to skim the fat, and simmer until the sauce is reduced by half. Remove the strings from the meat, slice it or cut it into wedges, and serve with the sauce. Excellent served with mashed potatoes . Recipe adapted from The Time Life Good Cook Series, Pork.

1 cup of apple pie filling, cut into small pieces

SLOW ROAST PORK SHOULDER WITH HERB RUB

Slow Roast Pork Shoulder With Herb Rub image

Provided by Alice Hart

Categories     dinner, main course

Time 12h

Yield 10 servings

Number Of Ingredients 9

6 tablespoons mixed finely chopped robust herbs (like thyme, rosemary, sage and parsley)
3 garlic cloves, finely chopped
3/4 cup brown sugar
1/2 cup, plus 1 tablespoon sea salt
1 tablespoon crushed black peppercorns
A 7-pound pork shoulder, skin on, boned
5 bay leaves
Rosemary applesauce
Crusty bread rolls, for serving

Steps:

  • Mix together herbs, garlic, 1/4 cup brown sugar, 1 tablespoon sea salt and crushed peppercorns.
  • Untie the pork if rolled. In a large bowl, thoroughly dissolve 1/2 cup salt and 1/2 cup brown sugar in 2 quarts of cold water. Add bay leaves and 2 tablespoons of herb mixture. Place pork in a container or strong sealable bag and add this brine to completely cover. Cover or seal well and chill for from 8 hours to overnight.
  • Remove the pork from the brine (discard the brine) and dry thoroughly. Cover with the remaining herb mixture, patting it in all over, then use kitchen twine to roll up pork and secure it tightly.
  • Heat the oven to 225 degrees. Prepare a triple layer of aluminum foil large enough to comfortably enclose the pork. Put the rolled pork on the foil, skin/fatty side up. Gather the foil, scrunching it over to form a loose but well-sealed parcel. Place in a roasting pan in the oven. Take the first check for the internal temperature after 8 hours. For very tender meat that can be sliced, it should be 160 degrees and will probably take 10 hours. Check more often if needed. For a "pulled pork" consistency, the internal temperature should be 200 degrees and it will take about 12 hours.
  • Rest the meat 20 minutes before unwrapping completely. Warm the applesauce and the rolls. Slice the pork not too thin (removing the twine as you go) and put in the sliced rolls with some of the cooking juices and lots of applesauce.

GARLIC HERB-STUFFED PORK CHOPS RECIPE BY TASTY

Garlic Herb-stuffed Pork Chops Recipe by Tasty image

Forget dry pork chops because these pan-fried cutlets are coated in golden panko bread crumbs and stuffed with a creamy garlic and herb cheese filling to keep them juicy. They're tender, bursting with flavor, and come together in less than 30 minutes. If you've only ever had dry, sad pork chops before and want to try something different, this is the recipe for you.

Provided by Tasty

Categories     Dinner

Time 25m

Yield 8 pork chops

Number Of Ingredients 13

16 oz cream cheese, softened
1 teaspoon black pepper, freshly ground
1 tablespoon garlic powder
¼ cup fresh chives, chopped
1 cup shredded provolone cheese
4 strips bacon, cooked and crumbled
8 boneless pork chops
salt, to taste
pepper, to taste
2 cups flour
3 eggs, beaten
2 cups panko breadcrumbs
4 tablespoons canola oil

Steps:

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine cream cheese, pepper, garlic powder, chives, provolone, and bacon, stirring until thoroughly mixed. Set aside.
  • Season all sides of the pork chops with salt and pepper.
  • Carefully cut a pocket through the side of the pork chop in order to create a cavity. Stuff the cavity with a generous spoonful of the cream cheese mixture and press around the edges of the pork to seal it in. Repeat with the remaining pork chops.
  • Dip the stuffed pork chops in the flour, shaking off excess, then the egg, then the breadcrumbs. Repeat with the remaining pork chops.
  • Heat the oil in a pan over medium heat. Fry the pork chops for about one to two minutes, then flip. Remove from the heat and bake for 15-20 minutes, until cheese is bubbling and starting to brown.
  • Enjoy!

Time 40m

Number Of Ingredients 12

1 cup cubed (3/8 inch) rustic bread, without crusts
1 tablespoon unsalted butter and 1/4 cup olive oil
1/2 cup finely chopped onion, and 3/4 cup chopped celery
1/4 cup plus one tablespoon mixed chopped parsley and thyme
2 1/4 teaspoons ground coriander
1/2 cup plus 3 tablespoons chicken stock
Coarse salt and freshly ground pepper
4 bone-in pork chops (9 ounces each), cut horizontally to the bone
2 garlic cloves, minced
1/4 cup dry sherry
1/4 cup olive oil
3/4 cup chopped celery
