- In a small saucepan, cook rice and onion in butter until onion is tender. Add the seasonings; cook for 1 minute. Add broth and salt if desired; bring to a boil. Cover and simmer for 15 minutes or until liquid is absorbed and rice is tender.

HERBED RICE PILAF

Steps:
- In a large skillet, cook the rice, celery and onion in butter, stirring constantly, until rice is browned. Stir in the next 5 ingredients; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Sprinkle with parsley; stir in pimientos if desired. , Remove from heat and let stand, covered, for 10 minutes. Fluff with a fork.

HERBED RICE PILAF
Steps:
- Melt the butter in a medium saucepot over medium heat. Add the rice, onion and thyme and saute until the onion is softened, 4 to 5 minutes. Season with salt and pepper. Pour the chicken stock over the rice, cover and cook over medium-low until tender and fluffy, about 15 minutes. Fluff with a fork, fold in the parsley and let stand 5 minutes before serving.
HERBED RICE

Steps:
- Heat the butter in a medium saucepan over medium heat. Add the scallions and saute for 2 to 3 minutes. Add the rice and stir until the rice is fully coated with butter.
- Add 3 cups water and bring to a boil. Add the salt and pepper, cover and reduce the heat to a simmer. Cook until the liquid is absorbed and the rice is al dente, 18 to 20 minutes.
- Remove from the heat; fluff the rice with a fork; and stir in the parsley and the lemon zest, if using.
EASY HERB RICE
This is an easy staple to add to a variety of different meals, added to a stir-fry, or just have a few veggies thrown in. Save money by buying rice in bulk and adding your own seasonings rather than buying it boxed and pre-mixed. The required ingredients are shown in the photo.

- Chill for an hour.
- Shape into balls and roll in bread crumbs.
- Deep fry until golden.
- You can make ahead and store in fridge for 12 hours. Just reheat in a 350 oven.

BROCCOLI RICE PUFF
This dish is a lovely alternative to a regular broccoli casserole and goes beautifully with most entrees.

Steps:
- Preheat the oven to 400 degrees.
- Cook the broccoli using package directions and drain well.
- Saute the onion in butter until tender. Stir in soup, rice, broccoli, and seasonings.
- Turn into a greased shallow 2-quart casserole dish. Bake for 20 minutes.
- Beat the egg yolks in a large bowl until thick and lemon-colored. Stir in cheese.
- Beat egg whites until soft peaks form and fold into the egg yolk mixture.
- Remove casserole from the oven and stir. Spread the egg and cheese mixture over the top.
- Bake for 15 minutes longer or until golden brown.

HERBED GOUGERE PUFFS
This is an adopted recipe that I've not yet had the chance to try, although it looks wonderful. Any reviews by those who make this recipe before I do (or after, of course) would be appreciated. Thanks!

- In 2-quart saucepan, heat 1 cup water, butter and salt to a boil.
- Remove from heat and add flour all at once, beating until smooth.
- Return saucepan to medium heat; cook, stirring constantly, until dough becomes stiff and pulls away from sides of pan, about 5 minutes.
- Remove from heat and beat in eggs, one at a time. Stir in 2/3 cup Swiss cheese, Parmesan cheese, parsley, dill and chives.
- Lightly grease one or two baking sheets.
- Drop heaping tablespoon of dough onto baking sheet, forming one 15 inch or two 8-inch rings, with dough barely touching.
- Sprinkle with rema ining 1/3 cup Swiss cheese. Bake at 425 degrees F 25 minutes or until puffed and golden brown.
- Serve warm.
RICE PUFF TREATS
A healthier spin on the classic Rice Krispy Treats dessert. To make this as healthy as possible, try to get puffed rice cereal that has 50 or 60 calories per cup.

- Spray a 9x12 pan with cooking spray.
- Melt the better spread in a large saucepan over low heat.
- Add marshmallows and stir.
- When marshmallows are almost completely melted, add vanilla.
- Stir until completely melted.
- Mix in rice puffs. stir until well coated.
- Spread the mixture evenly into the pan.
- Press the mixture into the pan with a sheet of wax paper. This will flatten them out.
- Refrigerate for 30 minutes.
- Remove the wax paper, cut with a butter knife.

- Heat oven to 425°F. Line 2 cookie sheets with cooking parchment paper. In 2-quart saucepan, heat water, butter and salt to rolling boil over medium heat. When butter is melted, remove from heat; stir in flour all at once until blended.
- Return to medium heat; cook 1 to 1 1/2 minutes, stirring constantly, until dough forms a ball and leaves a slight film on side of pan.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
- In a medium bowl, mix together Parmesan cheese, Romano cheese, mayonnaise, basil, oregano, green onions and garlic.
- Separate each unbaked biscuit vertically into 3 pieces. Spread 1 tablespoon cheese mixture on each piece.
- Arrange pieces in a single layer on baking sheet. Bake in the preheated oven 10 to 12 minutes, or until puffed and golden brown. Serve warm!
