1 whole wheat tortilla (recipe calls for a La Tortilla Factory Whole Wheat Low-Carb or Low-Fat Tortilla, Large)
1/3 cup fat free mozzarella cheese, shredded
1/4 cup red pepper, sliced (and green bell peppers)
1/4 cup onion, sliced
1/4 cup mushroom, sliced
1/4 cup tomato sauce with italian seasoning (such as Hunt's Tomatoes Sauce with Basil, Garlic & Oregano)
3 tablespoons soy crumbles (like Morningstar Farms Meal Starters Recipe Crumbles or Boca Meatless Ground Burger)
5 pieces turkey pepperoni (like Hormel Turkey Pepperoni or Yves Meatless Pepperoni)

Steps:

  • Begin by toasting tortilla very slightly (it should still be foldable), either in a toaster oven or a conventional oven set at a high temperature. (This will keep your wrap from getting soggy.) Set aside.
  • In a pan sprayed with nonstick spray, cook peppers and onions over medium-high heat until they begin to brown (about 2 minutes). Add mushrooms, stir, and cook for 1 more minute. Then add soy crumbles, and continue stirring and cooking until veggies are cooked and soy crumbles are thawed and heated (about 1 minute longer). Remove from heat, and set aside.
  • Lay tortilla out on a microwave-safe plate. Spread the tomato sauce evenly over the tortilla, staying about 1 inch away from the perimeter. Sprinkle cheese over the sauce, and then top with the pepperoni slices. Heat plate in the microwave for about 30 seconds, until cheese is slightly melted. Place veggie/soy crumble mixture in the center of the tortilla.
  • Then, wrap up the tortilla by first folding in the sides and then rolling it up tightly from the bottom. Enjoy!

1/4 Pillsbury refrigerated classic pizza crust, 1/4 of the pkg (unprepared)
2 pieces mozzarella string cheese, pulled into strings, light cheese (Weight Watches makes a good cheese stick!)
6 whole mushrooms
1 green bell pepper, cut into 1-inch chunks
1/2 onion, cut into 1-inch chunks
2 wooden skewers
1/2 cup tomato sauce with italian seasoning

Steps:

  • Preheat oven to 375 degrees.
  • Bring a pan sprayed with nonstick spray to medium heat on the stove. Add veggies and cook for about 3 - 4 minutes, until they have softened slightly. Remove from heat. Once cool enough to handle, blot away as much excess moisture as possible with paper towels.
  • Carefully skewer a mushroom onto each stick, and slide it down to about 2 inches from the end. Add a few pepper and onion chunks to each stick, and then add another mushroom. Skewer the rest of the pepper and onion chunks, and then add the final mushroom to each. If needed, adjust veggies so that the final mushroom covers the tip of the stick.
  • Roll out the pizza dough and cut it into two squares, each at least 6 inches by 6 inches. Distribute the cheese strings vertically over the dough squares, leaving 1-inch borders on all sides.
  • Lay one veggie-stacked stick along the left edge of one cheese-covered dough section, with the top of the stick about an inch down from the top of the dough. Repeat with the other veggie-stacked stick.
  • Beginning with one dough square, bring the left edge up over the veggies and roll over to the right, until the dough is completely wrapped around the veggies -- pinch the top, bottom, and sides of the dough to close and seal, and squeeze the dough gently around the veggies to make sure it holds on to the fillings. Repeat with the other square of dough.
  • Gently place the two loaded sticks on a baking sheet sprayed with nonstick spray. Bake in the oven for 13 - 15 minutes, until dough is golden brown and crispy. Remove from the oven and carefully (skewers will be hot) place on paper towels to cool for 3 - 5 minutes. Serve with tomato sauce for dipping!

8 (6 inch) corn tortillas
1 (10 ounce) can white chicken meat packed in water, 98% fat free kind, drained well
1/2 cup salsa
1/3 cup fat-free cheddar cheese, shredded
1/4 teaspoon taco seasoning mix, dry
red enchilada sauce (optional)
salsa (optional)
nonfat sour cream (optional)

Steps:

  • Preheat oven to 375 degrees.
  • In a medium bowl, combine the chicken and salsa, and mix thoroughly. Cover and refrigerate for 15 minutes.
  • Remove chicken mixture from the fridge, and drain any excess liquid. Add cheese and taco seasoning, and mix to combine. This is your filling. Set aside.
  • Prepare a baking sheet by spraying with nonstick spray, and set it aside.
  • Dampen two paper towels, and place tortillas between them. Microwave for about 1 minute, until tortillas are warm and pliable.
  • Take one tortilla (keep the rest between the paper towels), spray both sides lightly with nonstick spray, and lay it flat on a clean dry surface. Spoon about 2 heaping tablespoons of filling onto the tortilla. Spread it evenly across the entire surface, and roll tortilla up tightly, so that you have a cigar-shaped tube. Secure with toothpicks and place seam-side down on the baking sheet. Repeat with remaining tortillas and filling.
  • Bake for 14 - 16 minutes, until crispy. Allow taquitos to cool for 5 minutes. If you like, dunk in enchilada sauce, salsa, or sour cream!

1 (15 ounce) can pumpkin puree

Steps:

  • Preheat the oven to 400 degrees.
  • Prepare a 12-cup muffin pan with nonstick spray.
  • Mix the two ingredients together. Don't add anything else that may be mentioned on the box, like eggs, oil or water. The mixture will be very thick, so you might be tempted to add in other things to make the batter smoother. Do NOT do this!
