HIBISCUS SPARKLING SODA SPRITZERS



Hibiscus Sparkling Soda Spritzers image

This recipe makes about 1 ¼ cups hibiscus syrup, enough for 6 spritzers. I always make a double batch of syrup-it keeps at least a month and freezes well too. And when the weekend rolls around I'm ready for hibiscus margaritas!

½ cup dried hibiscus flowers
1 1/2 cups boiling water
¼ to 1/3 cup honey or organic cane sugar (to your sweet tooth taste)
2 to 4 tablespoons hibiscus syrup (see note)
About 6 ounces sparkling water (I usually use lime flavored)
Ice to fill the glass

Steps:

  • Pour boiling water over the flowers and let steep 20 minutes or up to an hour. Strain, pushing on the plumped flowers to extract maximum juice. Stir the honey into the liquid and reheat just enough to dissolve the honey completely. If you want to use the syrup right away, pour it into a metal container and place in an ice bath, stirring until the syrup is nice and cold.
  • Fill a tall glass with ice. Pour 2 (or more) tablespoons of syrup over the ice. Fill the glass to the top with sparkling water. Sip and refresh!

Classic black tea becomes way more interesting when you add hibiscus, orange zest, and seltzer. Bright, bubbly, and refreshing, it makes an excellent summer thirst-quencher.

1/4 cup sugar
1/4 cup dried hibiscus leaves
4 bags black tea
2 strips orange zest
Seltzer
Quartered orange slices, for serving

Steps:

  • Bring sugar and 1 cup water to a boil in a saucepan; stir until dissolved. Remove from heat; add hibiscus, tea bags, and orange zest. Steep 4 minutes.
  • Strain through a fine-mesh sieve; press gently to release liquid from bags. Discard solids; let cool completely.
  • Add 3 tablespoons tea mixture to a glass filled with ice. Top with seltzer. Serve, with orange slices.
