GRILLED PORK TENDERLOIN WITH CORN ON THE COB

- Make the pork: Combine the paprika, 2 teaspoons salt, 1/2 teaspoon pepper, the brown sugar, cumin, mustard powder, onion powder and garlic powder in a bowl. Rub the olive oil all over the pork, then coat with the spice rub. Wrap each tenderloin tightly in plastic wrap and refrigerate 3 to 6 hours.
- Make the sauce: Combine the vinegar, 1/2 cup water, the brown sugar, ketchup, red pepper flakes and 1 teaspoon salt in a small saucepan over medium heat. Bring to a simmer, stirring until the sugar dissolves; remove from the heat.
- Remove the pork from the refrigerator about 30 minutes before grilling. Preheat a grill to medium high. Cook the pork, turning occasionally, until a thermometer inserted into the thickest part registers 140 degrees F to 145 degrees F, about 20 minutes. Transfer to a cutting board and let rest 15 minutes.
- Meanwhile, brush the corn with olive oil; grill, turning, until marked, about 5 minutes. Slice the pork and drizzle with the sauce. Serve with the corn.

- In 12-inch nonstick skillet, heat oil over medium-high heat. Cook potatoes in oil 10 to 12 minutes, stirring frequently, until golden brown. Add pork; cook about 5 minutes, stirring frequently.
- Reduce heat to medium. Add remaining ingredients except parsley. Cook 4 to 6 minutes longer, stirring occasionally, until pork is no longer pink in center. Top with parsley.

PORK TENDERLOIN WITH PEPPERCORN GRAVY
A quick, easy and delicious pork tenderloin recipe, quickly cooked in the oven and served with a peppercorn gravy.

- Preheat oven to 425F.
- Prepare the pork tenderloin by removing the silver skin and any visible fat. Season with some salt and set aside.
- Heat an oven-proof skillet on the stove-top over medium-high heat. Add a splash of olive oil and heat. Add the pork tenderloin and cook, turning as needed, until it is seared and golden on all sides.
- Place skillet with the pork into the preheated oven and cook until the pork reaches an internal temperature of 145F, when measured in the thickest part of the meat, about 20-25 minutes.
- While pork is cooking, gather and measure out your sauce ingredients and have handy.
- Remove skillet from oven. Remove pork to to a cutting board to rest and loosely tent with a piece of aluminum foil.
- Place the hot skillet back on the stovetop over medium-high heat. To the skillet, add butter and melt, scraping up in bits in the bottom of the pan. Add the onions and peppercorns and stir until the onions are starting to colour, about 1 minute. Add the wine and cook, stirring, until mostly evaporated, about 1 minute. Add the broth, Dijon mustard and thyme. Reduce heat to medium and allow sauce to simmer/reduce for a few minutes to blend the flavours and reduce slightly. Add cream, if using and stir to combine and warm through. Taste the sauce and season with salt, as needed. To thicken the gravy, combine cornstarch and water in a small bowl, stirring until smooth. Add a bit at a time to your hot gravy, stirring well after each addition, until desired thickness is achieved.
- Cut pork tenderloin into slices and spoon hot gravy over-top, to serve.

- In a wok, heat grape seed oil over medium. Sauté garlic and chili peppers for 20 seconds.
- Add ground pork and white pepper powder to it. Increase heat over medium high. Stir-fry pork until 80% cooked. Continue to stir in corn and combine well.
- Reduce heat to medium. Pour water into wok and cover. Simmer until corn is completely heated, about 1 minute.
- Uncover and season with salt. Turn off heat and stir in green onions. Serve hot!

- Combine sour cream, lime juice and lime peel in a small bowl; set aside.
- Heat 1 tablespoon oil in large skillet over high heat. Cook and stir bell peppers 6 to 8 minutes or until tender and slightly blackened. Stir in corn; cover and cook 2 minutes. Transfer to platter; keep warm.
- Combine flour, chili powder, cayenne pepper and salt in a shallow plate. Lightly coat both sides of pork in flour mixture. Heat 2 tablespoons oil in skillet over medium-high heat. Add pork and cook 10 to 12 minutes or until no longer pink in center, turning once halfway though cooking. Arrange pork on corn mixture; drizzle with lime sour cream. Sprinkle with cilantro.
- Recipe Note: to broil pork chops, season as above excluding the flour. Broil 4 inches from heating element for 8 to 10 minutes, turning halfway though cooking.
