4 tablespoons unsalted butter
1/3 cup light brown sugar
2 tablespoons honey
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
2 1/2 cups old-fashioned rolled oats
1 cup sliced almonds
1/2 cup golden raisins

Steps:

  • Preheat the oven to 300 degrees F. Line 2 rimmed baking sheets with parchment paper.
  • Melt the butter in a small saucepan over low heat. Add the sugar, honey, vanilla, cinnamon and salt and stir to combine. Let cook until the sugar has dissolved, 1 to 2 minutes. Remove from the heat.
  • Combine the oats and almonds in a large bowl. Add the butter mixture and toss well to coat. Spread the mixture on the prepared baking sheets in a single layer.
  • Bake for 15 minutes, then stir in the raisins. Bake until crisp and golden brown all over, another 10 to 15 minutes. Transfer to a bowl. The granola will keep in an airtight container at room temperature for up to 2 weeks.

2 cups rolled oats (not instant)
1 cup peanuts or 1 cup toasted almond
1/4 cup sesame seeds
1/2 cup roasted sunflower seeds
1/2 cup coconut (I always use unsweetened, but you can go for the sweetened kind if you'd like)
1/4 cup toasted wheat germ (I often omit this ingredient, as I tend to forget to buy it)
1/2 cup raisins
1/2 cup dried fruit (dried apricots, craisins and dried apple are all delicious choices)
1/4 cup cooking oil (not olive)
1/2 cup honey

Steps:

  • Mix the oat, nuts and grains in a large bowl.
  • Measure oil into the measuring cup and swirl it around before pouring into bowl.
  • Then measure out the honey in the same, unwashed cup. The oil will help the honey exit the cup.
  • Toss everything together until evenly coated and then pour out into a baking pan. I use a large roasting pan, as it keeps everything contained. A cookie sheet with a lip also works, but you have to stir it slightly more carefully if you use that.
  • Bake at 300 degrees for 30 minutes, turning it with a spatula every ten minutes or so. You want everything to be an even golden brown.
  • When it is finished cooking, returned the baked granola to the mixing bowl, add the raisins and fruit and stir to combine. Stir gently several times as it cooks, so that it doesn't clump together too much.
  • Enjoy!

4 cups rolled oats
2 cups unsweetened coconut
2 cups slivered almonds
1 cup cashews
3/4 cup olive oil
1/2 cup honey
2 teaspoons ground cinnamon
1 teaspoon kosher salt
2 cups of your favorite dried fruit, such as dates and dried cherries, chopped

Steps:

  • Preheat the oven to 325 degrees F. Combine the oats, coconut, almonds, cashews, oil, honey, cinnamon and salt in a large bowl, and toss together to coat. Spread evenly on a baking sheet. Bake until golden, 30 minutes. Let cool completely on the baking sheet. Add the dried fruit and serve. If not using right away, store in an airtight container, adding the dried fruit to order.

greek yogurt, to serve
assorted berry, to serve

Steps:

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, mix together the oats, almonds, cinnamon, salt, coconut oil, vanilla extract, maple syrup, and honey until well combined.
  • Transfer the mixture onto a the prepared baking sheet and spread into an even layer.
  • Bake for 20 minutes.
  • Carefully remove from the oven and allow to cool for 10 minutes.
  • Break up the layer into chunks with your hands.
  • Store in an airtight container for up to 1 month.
  • Serve with Greek yogurt and fresh berries, if desired.
  • Enjoy!

1/2 cup oat bran flakes
2 cups old fashioned oats
1/4 cup slivered almonds
1/4 cup pumpkin seeds, roasted
1/4 cup dried currants or 1/4 cup raisins
1/4 cup dried cranberries
1/2 cup dried tart cherry
1/4 cup flax seed
1/2 cup honey
1/3 cup unsalted butter, melted

Steps:

  • Preheat oven to 350. Coat a baking sheet or jelly roll pan with cooking spray; set aside.
  • In a large mixing bowl, combine the bran flakes, oats, almonds, pumpkin seeds, currants, cranberries, cherries, and flax seeds. Set aside.
  • In a small bowl, combine the honey and the melted butter, and pour over the oat and fruit mixture. Stir with a wooden spoon until combined.
  • Spread mixture onto the prepared pan, and bake for 23 minutes or until golden. Cool on the pan, and break into pieces with a spatula. Store in an airtight container (I like a glass jar) for up to a week.

¼ cup packed brown sugar
3 tablespoons maple syrup
2 tablespoons vegetable oil
½ teaspoon salt
1 ½ cups rolled oats
½ cup chopped almonds
½ cup raw pumpkin seeds
⅓ cup shredded coconut
½ cup dried currants

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Line a baking sheet with a silicone liner.
  • Combine brown sugar, maple syrup, oil, and salt in a bowl. Add oats, almonds, pumpkin seeds, and coconut. Mix well, making sure all ingredients are coated evenly.
  • Pour onto prepared baking sheet and distribute in an even layer.
  • Bake in the preheated oven for 1 hour, stirring every 10 to 15 minutes lightly with the tines of a fork so mixture toasts evenly and granola is golden brown.
  • Pour into a bowl and, while mixture is still hot, mix in currants. Cool. Store in an airtight container until ready to use.
