Steps:
- In a large skillet, combine ground beef, onion and celery.
- Brown over medium-high heat; drain. Season with salt and pepper.
- In a 3 quart casserole, combine tomato soup, ketchup and Worcestershire sauce.
- Add ground beef mixture, potatoes, peas and carrots; mix well.
- Cover and bake at 350°F oven for 1 hour and 15 minutes.

HOBO CASSEROLE
I adopted this recipe and found it to be the perfect comfort food on a "I really don't want to bother cooking" kind of day. It used basic ingredients that are always in my pantry and freezer, and couldn't be more simple to prepare. It isn't a pretty dish, but it is hearty and filling.

Steps:
- Preheat oven to 350°F.
- Pat ground beef into 8x8 pan and sprinkle with salt and pepper.
- If using, slice onion on top of beef.
- Slice potatoes onto onion layer, salt and pepper.
- Layer with cheese slices.
- Mix soup and milk together and spread over cheese.
- Cover with aluminum foil and bake for 1-1 1/5 or until potatoes are tender.
- Remove foil and top with french fried onions and brown for about 5 minutes.
- Enjoy!

HOBO CASSEROLE
Hobo Casserole is a layered dinner recipe that is loaded with potatoes,beef and potato chips. The gluten free sauce not only adds moisture but flavour as well.

- Preheat oven to 350F.
- Dice the mushrooms and yellow onion.
- Prepare sauce by combining 3 cups of the almond milk with the onion powder paprika, pasta sauce, salt and pepper over medium/low heat.
- Make a paste with the remaining almond milk and the Bob's Red Mill 1 to 1 Gluten Free Baking Flour.
- Pour the paste into the almond milk and whisk to combine.
- Add the diced mushrooms to the sauce.
- Turn heat to medium and stir occasionally until it comes to a boil. Remove from heat when it boils.
- While the sauce continues to cook slice the potatoes thinly. I left the skins on and used a mandoline slicer.
- Press the extra lean ground beef into the bottom of a 9" x 13" baking pan.
- Sprinkle with the salt and pepper.
- Spread the diced onions over top of the meat.
- Place a layer of potatoes on top of the meat.
- Cover the potatoes with the cheese slices.
- Pour the thickened sauce over the cheese slices.
- Cover with tinfoil and place in the preheated 350F oven for 90 minutes.
- Uncover and sprinkle crushed potato chips on top of the casserole. Reserve some chips if you want to add extra to each serving.
- Return to the oven for 5 to 10 minutes.
- Remove from oven. Allow to sit for a few minutes before serving.
- Serve and spoon sauce and some reserved potato chips if desired.
- Enjoy!

- Preheat oven to 350 degrees F and spray a 9 x 13-inch bake dish.
- Cook noodles in a large pot of salted water until just tender, about 7 minutes or as package directs. Drain and set aside.
- Meanwhile, in a large skillet over medium high heat, brown turkey for 5 minutes. Drain off any juices, add the onion and garlic to the turkey in the pan and continue to cook over medium high heat for 2 more minutes until lightly browned. Add tomato sauce and basil to the pan, and stir over heat for another 2 minutes.
- In a small bowl, stir cup of sour cream with the cream cheese until very smooth and well mixed.
- Make layers in the baking dish: half the noodles, half the cream mixture and half the meat mixture. Repeat. Top with the cheddar cheese and bake for about 25 minutes. Serve garnished with the remaining sour cream and fresh basil leaves.
- Using low fat ingredients allows this casserole to be delicious, yet more healthful than a standard lasagna.
- This casserole is made with Italian flavors. To give it a Tex-Mex spin instead, add ½ teaspoon ground cumin when browning the turkey, use 3 tablespoons chopped cilantro instead of basil and add 2 tablespoons salsa when adding the tomato sauce.

- Prepare ingredients, as directed.
- Preheat 12-inch cast iron Dutch oven to 350 degrees F (25 total coals = 17 top/8 bottom). NOTE: If you're using charcoal briquettes, you'll probably need a second set of coals to finish the baking process.
- Place meat on a cutting mat, then, pat ground beef into a big hamburger patty to an approximate size that will fit in the bottom of a 12-inch oven. Season with salt and pepper.
- Spray inside of Dutch oven with cooking spray.
- Use a spatula to gently slide the patty into the bottom of the pre-heated Dutch oven, being careful not to burn yourself on the hot oven.
- Use a spoon to press the patty into the bottom of the oven, making sure the entire patty is an even thickness.
- Place the onion slices in an even layer on top of beef.
- Place the potato slices in an even layer over the onion layer. Season with more salt and pepper.
- Spread soup evenly over the top.
- Sprinkle cheese evenly over the soup.
- Cover with lid and arrange coals for baking at a temperature of 350 degrees F (25 total coals = 17 on top of the lid / 8 below the bottom of the oven).
- Bake until the hamburger is cooked through and the potatoes are tender, about 1-1.5 hours. Turn the oven and the lid in opposite directions every 15 minutes to ensure even baking.
- Remove lid. Top with French fried onions and return lid to the pot. Move bottom coals to the lid so all of the coals are on the top of the oven. You are essentially broiling the French fried onions and cheese for about 5 minutes.
- Remove all coals and let stand a few minutes. Slice and serve hot.

- Preheat oven to 400 degrees F (200 degrees C). Line a sheet pan with aluminum foil.
- Shape the ground beef into patties and place in pan. Layer the vegetables on top of the beef patties, starting with the potatoes, then carrots and finally onions. Season with salt, pepper and garlic salt to taste.
- Cover with aluminum foil and seal edges. Bake in the preheated oven until beef is no longer pink and vegetables are tender, about 1 hour.
