HOLIDAY MUSHROOM APPETIZERS



Holiday Mushroom Appetizers image

A friend served these wedges at an open house. With English muffins as a base, they're quick and convenient to make- and sure to be a hit with mushroom lovers in your crowd!

Yield 4 dozen.

Number Of Ingredients 8

4 ounces fresh mushrooms, finely chopped
1/4 cup butter, softened, divided
1 jar (5 ounces) sharp American cheese spread
1-1/2 teaspoons mayonnaise
1/2 teaspoon seasoned salt
1/2 teaspoon Italian seasoning
1/4 teaspoon garlic salt
6 English muffins, split

Steps:

  • In a small skillet, saute mushrooms in 1 tablespoon of butter; drain and cool. In a bowl, combine the cheese spread, mayonnaise, seasoned salt, Italian seasoning, garlic salt, mushroom mixture and remaining butter. Spread onto cut side of each muffin; cut each into eight wedges. Place on a baking sheet. Broil 4 in. from the heat for 4 minutes or until golden brown. Refrigerate any leftovers.

6 tablespoons extra-virgin olive oil
1 1/2 pounds whole small button mushrooms, wiped clean
3 tablespoons butter
Gray sea salt
1 tablespoon minced garlic
1 1/2 teaspoons fresh thyme leaves, chopped
2 tablespoons lemon juice
1/2 cup white wine
1 tablespoon chopped parsley leaves

Steps:

  • In a large skillet, heat the oil over high heat. Add the mushrooms. Do not move the mushrooms until they have caramelized on the bottom. If you toss them too soon, they will release their liquid and begin to steam. When the bottoms are caramelized, toss them and continue to cook for about 5 minutes.
  • Add the butter. Cook and toss for 5 minutes, until beautifully browned.
  • Season with salt and add the garlic. Saute another 2 minutes, and add the thyme, lemon juice, and white wine. Cook to evaporate the liquid.
  • Toss in the parsley and serve immediately.
