2 tbsp Lucerne® Unsalted Butter
1 cup broccoli, cut into florets
1 cup cauliflower, cut into florets
1 cup Brussels sprouts, halved, stem end removed
1 tbsp all-purpose flour
1 cup Lucerne Whole Milk
2 tbsp Lucerne Heavy Cream
1 tsp kosher salt
¼ tsp freshly ground black pepper
1 cup Primo Taglio® Shredded Manchego Cheese
1 cup garlic-flavored croutons
1 tsp minced parsley

Steps:

  • 1.Preheat oven to 375°F. 2.Warm a medium size pan over medium heat, add butter and vegetables and cook until slightly browned and beginning to crisp. 3.Sprinkle in flour and allow to cook for 45 to 60 seconds. 4.Add the milk, heavy cream, salt and pepper, then whisk and return to a simmer. 5.Pour vegetable-milk mixture into buttered casserole pan and top with shredded Manchego and croutons. 6.Bake for 15 to 20 minutes or until vegetables are tender. Garnish with parsley and serve immediately.

½ cup all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk yams, eggs, 1/2 cup butter, white sugar, coconut, milk, and vanilla together in a bowl until smooth; pour into a 9x13-inch baking dish.
  • Stir pecans, brown sugar, butter, and flour together in a separate bowl until crumbly; sprinkle over the yam mixture.
  • Bake in preheated oven until the topping is slightly browned, about 30 minutes.

2 large sweet potatoes, peeled and chopped
¾ cup white sugar
½ cup milk
2 eggs
⅓ cup butter, cubed
1 teaspoon vanilla extract
1 cup chopped pecans
1 cup sweetened flaked coconut
¾ cup lightly packed brown sugar
½ cup all-purpose flour
⅓ cup butter, melted

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x11-inch casserole dish with cooking spray.
  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and measure 3 cups sweet potatoes; transfer back into the pot. Reserve remaining sweet potatoes for another use.
  • Mix white sugar, milk, eggs, cubed butter, and vanilla extract into sweet potatoes using an electric mixer until completely smooth. Pour mixture into the prepared dish.
  • Combine pecans, coconut, brown sugar, flour, and melted butter in a bowl until evenly mixed and crumbly; sprinkle evenly over sweet potato mixture.
  • Bake in the preheated oven until topping is browned, 20 to 30 minutes.

1/4 cup evaporated milk
2 eggs, beaten
1 teaspoon vanilla
1/2 cup butter, cubed
1 cup coconut
1 cup chopped nuts
1 cup brown sugar

1/2 cup flour

Steps:

  • Preheat oven to 300º.
  • Peel and cube sweet potatoes. Boil until tender, then mash.
  • Add next 6 ingredients and mix with an electric mixer. Pour into greased 8x8 baking dish.
  • Mix topping ingredients and crumble on top of potato mixture.
  • Bake 30 minutes.

1 cup light brown sugar, firmly packed
1 cup pecans, chopped
1/2 cup self-rising flour
1/2 cup butter, melted (1 stick)
3 cups cooked sweet potatoes, mashed
1 cup sugar
1 cup sweetened coconut
1/2 cup raisins
2 large eggs, lightly beaten
1 teaspoon vanilla extract
1/4 cup heavy cream

Steps:

  • Heat oven to 350 and place rack in center. Lighlty oil a large ovenproof casserole dish.
  • For topping, in a medium bowl, stir together brown sugar, nuts, flour and 1/4 cup butter with a fork; set aside.
  • In a large bowl, stir together potatoes, sugar, coconut, raisins, eggs, vanilla extract and remaining 1/4 cup butter. Stir in cream, combining well. Spoon into prepared casserole dish. Spread topping over sweet potato mixture and bake until golden brown, 20 to 30 minutes.

It may look like a traditional sweet potato casserole at first glance, but this version gets richness from coconut milk instead of cream, and brightness from fresh lime juice.

2 1/2 pounds sweet potatoes (about 5), peeled and cut into 1-inch pieces
Coarse salt
3/4 cup coconut milk
1/2 teaspoon grated lime zest plus 2 teaspoons juice
1 1/4 cups miniature marshmallows
2 tablespoons sweetened shredded coconut

Steps:

  • Preheat oven to 375 degrees. In a large pot, cover sweet potatoes with cold salted water by 1 inch and bring to a boil. Reduce to a rapid simmer and cook until tender, 10 to 12 minutes.
  • Drain potatoes in a colander and let sit 5 minutes, then transfer to a food processor and process until smooth. Add coconut milk and lime zest and juice; process until combined. Transfer mixture to a 2-quart baking dish. Top with marshmallows and coconut and bake until toasted and golden, about 15 minutes.
