You'll love my perfectly seasoned best home fries recipe. It's super delicious. These baked breakfast potatoes tick all the boxes, crispy on the outside, soft and fluffy on the inside and they're vegan too!

5-6 medium red potatoes (about 6 cups) peeled and cubed, about 3/4 to 1 inch cubes*
2-3 tbsps of oil or use cooking spray*
1 small yellow onion, chopped into 1 inch bite size pieces (optional)
1 bell pepper, chopped into 1 inch bite size pieces (optional)
1 tsp seasoning salt
1 tsp granulated garlic
1/2 tsp paprika
1/2 tsp black pepper
1/2 tsp onion powder
1/2 tsp Italian seasoning
1/2 tsp chili powder
diced green onions
grated vegan cheese
side of salsa
side of hot sauce
ketchup of course!!?
gravy

Steps:

  • Pre heat oven to 425 and line a large baking sheet,( mine is 15x21 inches) or two smaller pans with parchment and set aside.
  • Add your cubed potatoes to a pot with a good pinch or two of salt and cover them with water. Bring the potatoes to a boil. Then reduce heat to med high and boil for 5-6 minutes but No longer! Drain the potatoes into a colander. Let them cool for a minute or so. Then add the potatoes back to the pot, just make sure the pot is dry.
  • Now add in the peppers, onions and half of the seasoning mix and stir everything together.
  • Spray your parchment lined baking sheet evenly with oil. Now add your potatoes and peppers to the greased parchment and spread them in an even layer. Try not to crowd them or they won't get as crispy. Next spray the tops of them evenly with oil. Now give the pan a little shake .
  • Bake the potatoes and veggies for 20 minutes. After 20 minutes remove them from the oven, give them a quick stir then return them to the oven to bake for an additional 15 to 20 minutes or until crisped to your liking.
  • When the potatoes are done remove them from the oven and add the rest of the seasoning and stir to combine.
  • Serve and enjoy!

4 medium potatoes (russet or red)
1 onion (sliced thinly)
1 teaspoon season salt
1 tablespoon oil
1 tablespoon butter
dried parsley

Steps:

  • 1. Wash potatoes and prick with a knife.
  • 2. Microwave the potatoes for approximately 8 minutes.
  • This can be done the night before. (Do not peel the potatoes).
  • 3. Heat oil and butter together in skillet.
  • 4. Slice the potatoes and add to the skillet and cook over medium high heat add onions, season salt, parsley after 5 minutes and continue cooking until potatoes are crispy. This takes approximately 10 minutes.
  • 5 You may need to add more or less season salt depending on your potato size.

4 red potatoes, medium size, cubed
2 russet potatoes, medium size, cubed
1/2 cup onion, diced
1/4 cup yellow bell pepper, diced
1/8 cup red bell pepper, diced
1 tablespoon garlic salt
1 tablespoon benson's gourmet seasonings supreme seasoning
2 tablespoons margarine
1/4 cup extra virgin olive oil

Steps:

  • Wash & cube potatoes into medium size cubes, skin on or off.
  • Heat 10" skillet to medium heat, add margarine and olive oil.
  • Add potatoes and stir to coat with oil & margarine.
  • Add garlic salt and Benson's Supreme seasoning, stir to coat evenly. Cook over medium heat for about 10 minutes, stir frequently.
  • Reduce heat, add diced onions, red and yellow bell pepper, stir frequently. Cook for about 5 more minutes, or until potatoes are cooked through. Be careful not to overcook the onions and peppers.
  • Start this dish first and then get the bacon or sausage going next. Start cooking the eggs just before the potatoes finish and everything will finish about the same time.

  • In a medium skillet (cast iron preferred), heat canola oil over medium. Add chopped potatoes to the skillet in an even layer. Allow to pan fry in the oil for a handful of minutes, or until the potatoes start to brown. Basically you are going to flip the potatoes around to all sides for as even of a browning as you can get. Allow each side to brown before moving them around. I practice my patience when I do this. Recognize that each potato may cook at different times. Using a slotted spoon, transfer potatoes to a plate lined with a paper towel. Sprinkle with salt, parsley (optional) and cheese (optional).

5 pounds red potatoes, roughly chopped/diced
4 cloves garlic, minced
1 onion, chopped
1 green bell pepper, seeded and roughly chopped
1 red bell pepper, seeded and roughly chopped
1/4 cup olive oil
1/2 stick butter, melted
1 teaspoon seasoned salt
1/2 teaspoon cayenne pepper
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large bowl, toss together the potatoes, garlic, onion, green bell pepper, red bell pepper, olive oil, butter, seasoned salt, cayenne pepper and some kosher salt and pepper.
  • Bake for 20 to 25 minutes, shaking the pan twice.
  • Raise the heat to 500 degrees and bake until crisp and brown, 10 to 15 minutes.
  • Sprinkle with a little more salt and pepper before serving.

  • Place the potatoes in a medium pot and cover with cold water. Add 1 tablespoon kosher salt and 1 tablespoon vinegar. Stir well. Set the heat to high and boil the potatoes until just tender (approximately 5 minutes after water has reached a boil). Drain. Cool, to touch, and cut potatoes into fourths. Place the potatoes in a bowl and toss with 1 tablespoon oil.
  • While potatoes boil, heat 1 tablespoon oil and 1 tablespoon butter in a large skillet set over medium heat just until the oil shimmers.
