Homemade Cheeseburger Macaroni Hamburger Helper image

We like Hamburger Helper but we don't like the MSG or other icky ingredients! You can prepare "sauce packets" ahead of time to save time. Increase/alter seasonings and/or cheese to suit your tastes!

1 lb 92% lean ground beef (or your preferred type)
1 cup hot water
2 cups milk
1 1/2 cups elbow macaroni
1 cup cheddar cheese (shredded, plus more for topping, if desired)
1 tablespoon cornstarch
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon garlic
1 teaspoon salt
1 teaspoon sugar

Steps:

  • Brown ground beef in a large skillet. Drain.
  • Add hot water, milk, pasta and "sauce packet" ingredients.
  • Bring to a boil, cover, reduce heat and simmer 12 minutes or until pasta is tender.
  • In the last few minutes of cook time, add cheese, stir and re-cover.
  • When pasta is tender and cheese is melted, remove heat and uncover.
  • Let stand about 5 minutes. Sauce will thicken as it stands.
  • Top with additional cheese if you like.

1 (8 ounce) package macaroni shells and cheese
16 ounces cubed Velveeta cheese
1 lb bacon, cooked and crumbled
1 (14 ounce) can diced tomatoes, drained
8 ounces sour cream
2 tablespoons dried mustard
2 cups milk
2 tablespoons garlic salt
1 (14 ounce) can cream of celery soup

Steps:

  • brown ground chuck and drain off fat.

1 tablespoon avocado oil (you can substitute olive or vegetable oil)
1 small onion, finely chopped
3 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 1/2 teaspoons sweet paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon chili powder
1/2 teaspoon freshly ground black pepper
2 tablespoon all-purpose flour
2 cups whole milk
1 3/4 cup natural, non-MSG beef broth
2 cups dried elbow macaroni pasta (can substitute whole wheat if desired)
2 cups shredded cheddar cheese (medium or sharp, your choice)

Steps:

  • Heat the oil in a large skillet over medium-high heat and brown the ground beef until no pink remains. Add the onions and cook until softened, about 5 minutes. Stir in the tomato paste, Worcestershire sauce, seasonings and flour. Pour in the milk and broth and stir. Stir in the macaroni. Bring to a boil then reduce to medium-low, cover and simmer for 10 to 12 minutes or until the macaroni is done. (For al dente check after 9 minutes.) Stir in the Cheddar cheese until melted. Serve immediately garnished with some chopped fresh parsley if desired. Reheats well.
