- In a Dutch oven over medium-high heat, saute steak and garlic in oil until browned. Add onion; cook and stir for 5 minutes. Stir in 2 cups water and next nine ingredients; bring to a boil. , Reduce heat; cover and simmer 2 hours or until tender. Combine flour, cornmeal and remaining water; stir until smooth. Bring chili to a boil. Add flour mixture; cook and stir 2 minutes or until thickened. If desired, garnish with reduced-fat cheese, reduced-fat sour cream, onions and olives.

STEAK CHILI
This steak chili is the best beef chili recipe ever. That's a big statement, but it's true. It has a rich flavor and the tender chunks of slow-cooked chuck steak are dreamy. We go easy on the beans, but you can either omit them or add extra as you like. You'll want to keep this steak chili recipe in your back pocket so you can pull it out every weekend.

Steps:
- Dry the beef well with paper towels then sprinkle the salt and pepper over the top.
- Heat 1 tablespoon of the oil in a large pot over medium-high heat. Add half of the beef and brown well on 2 sides. Remove it from the pan and repeat with the remaining beef, adding more oil as needed. Remove the second batch of browned beef from the pot.
- Add the remaining tablespoon of oil to the pan. Add the onion and cook until it is soft and starts to brown, about 5 minutes. Add the garlic and celery and cook for 2 minutes.
- Push the veggies to the side of the pan and add the tomato paste. Let it cook for 2-3 minutes, or until it becomes sweet smelling. Add the chili powder, oregano, and cumin to the pot and mix.
- Pour the beef broth into the pot and scrape the bottom of the pot with your mixing spoon to remove any of the dark stuck on bits. Add the crushed tomatoes, honey, and browned beef and bring the pot to a boil. Reduce the heat to low and cover the pot. Very gently simmer the steak chili for 2 hours. (See notes)
- Just before serving, add the beans and let them warm. Season to taste with salt.

- In a large skillet, brown steak until meat is no longer pink. Drain, discarding all but 2 tablespoons drippings. Set meat aside. , In the same skillet, saute onion and garlic in drippings for 3 minutes or until vegetables are crisp-tender. Return meat to pan. CHUNKY BEEF CHILI

- Heat a Dutch oven over medium heat. Season the chuck roast with salt and pepper. Add the oil to the pot and sear the chuck roast until browned, 7 to 8 minutes. Remove from the pot, then add the ground beef. Cook until browned, 7 to 8 minutes. Add the garlic and cook for 2 minutes, then return the chuck roast back to the pot with the beer and tomatoes.
- Using scissors, snip the guajillo chiles into small strips. Add to the mixture and bring to a boil. Add the chili powder, cumin, oregano and 2 tablespoons salt, then reduce to a simmer and cook for an additional 10 minutes to allow the flavors to combine.
- Mix the masa with enough water to form a paste, then add it to the pot. Add the pinto and kidney beans and cook until the chili thickens, 5 to 10 minutes. Adjust the seasoning and simmer for 1 hour.
- Serve with fixings such as pico de gallo, sour cream and lime wedges.

- Preheat oven to 350 degrees.
- In cup, combine flour, salt, chili powder and pepper.
- Trim any excess fat from round steak; place meat on board and sprinkle with some flour mixture.
- With meat mallet or edge of saucer, pound mixture into meat.
- (This helps tenderize it).
- Turn and repeat on other side.
- In 10 inch skillet over medium-high heat, in hot shortening, cook meat until well browned on all sides; remove meat to board.
- In drippings, cook onions until browned; stir in remaining flour mixture.
- Spoon onion mixture into a large shallow casserole.
- Arrange steaks on top, then add tomatoes and their liquid.
- Cover and bake 1-1/2 hours or until meat is fork-tender.
- Spoon any fat from casserole.
- Sprinkle steaks with cheese.
- Heat 5 minutes or until cheese is melted.

This chili is made with steakhouse flavors: sirloin, bacon, steak sauce, and sour cream. Ask your butcher for coarse ground sirloin or you could cut it into very small dice by hand.

- Heat oil in a large pot over medium heat; cook and stir onion, bell pepper, Anaheim pepper, jalapeno peppers, and garlic in the hot oil until softened.
- Meanwhile, heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; add Worcestershire sauce and garlic powder. Crumble bouillon cubes over beef and add beer. Continue to cook , scraping any browned bits from the bottom of the skillet, until liquid is hot, about 3 minutes. - Stir crushed tomatoes, diced tomatoes, tomato paste, and wine to the beef mixture. FIESTA STEAK CHILI
This is a basic recipe for non-traditional chili using steak. My wife is allergic to chili powder, so I don't use any in this recipe, but you are welcome to add some if you like. This is a very tame, full-flavor, colorful chili recipe that even the kids will like. There are plenty of other variations that you can use with this basic recipe, please change at will. - Heat 3 tablespoons of the oil in a large Dutch oven over high heat.
- Season the meat with salt and pepper, and saute until browned on all sides.
- Sprinkle with the cumin and stir well.
- Deglaze the pan with the beer and bring to a boil.
- In a separate pot, add 1 tablespoon of the oil and add the onions to the pan and cook until soft.
- Add the garlic and cook for 2 minutes.
- Add the hot peppers and cook until soft, about 5 minutes.
- Add the chipotle puree, and the rest of the spice mixture and cook an additional 2 minutes.
