CHOCOLATE PUDDING FOR ONE
Looking for that chocolate pudding fix, and don't want to make alot ? Then here's the recipe to try. I found the basic recipe in the TOH 's 2001 Annual recipes, it was sent in to them by Anne Boesiger of Meridian, Idaho. Since I like a thicker and more intense chocolate flavor, the amounts of cornstarch and chocolate were changed.The database wouldn't let me add just a pinch of salt, so I had to put 1/8 teaspoon. Also, the way that the ingredients were added was changed too. Chill time is included in cook time. The longer you let this chill, the more intense the chocolate flavor will be. Steps:
- In a small microwavable glass bowl add milk, salt, and chocolate chips.
- Microwave for 1 1/2 minutes, stir until chips are melted.
- Add cornstarch, stirring until no lumps remain.
- Microwave for another 1 1/2 minutes or until mixture begins to boil.
- Stir again and let cool to room temperature, and pour into a small bowl or dessert dish.
- Refrigerate until firm, about 30 minutes.

- Whisk the cream, cornstarch, egg yolk and salt in a small bowl. Set aside.
- Pour the milk, the sugar, and the cocoa powder in a small saucepan. Bring to a simmer, over medium-high heat, stirring occasionally. Remove from the heat.
- Gradually whisk the hot milk mixture into the egg mixture. (Do this very slowly. You want to temper the eggs which means that you very slowly add the hot milk into the eggs and make both mixtures almost the same temperature. If you dump all of the hot milk mixture into the egg mixture, the eggs will start to scramble.)
- Return the mixture to the saucepan and cook over medium-high heat whisking constantly, until the pudding comes to a full boil.
- Reduce the heat to a simmer and continue whisking until thick, about 2-3 minutes more.
- Remove saucepan from the heat and add chocolate chips and vanilla. Whisk until smooth.
- Pour the pudding into a cup. Place the pudding in the refrigerator uncovered for 1 hour. After 1 hour cover the top of the pudding with plastic wrap and refrigerate at least 3 hours until set.
- Top with whipped cream, if desired

- Place a fine-mesh sieve over a medium heatproof bowl and set aside. In a medium saucepan, combine sugar, cornstarch, cocoa, and salt. In a medium bowl, whisk together milk, cream, and egg yolks; add to saucepan.

- Combine 1/2 cup milk and cornstarch in a small bowl. Whisk or stir with a fork until smooth and all lumps have been incorporated.
- Combine remaining milk with sugar in a medium saucepan over low heat. Slowly whisk in the cornstarch mixture. - Mix sugar, cocoa, cornstarch and salt in heavy bottom saucepan. Gradually add 1/2 of the milk, whisking until smooth. Add remaining mix, whisking to combine.
