GLUTEN-FREE HOT BREAKFAST CEREAL
This is a whole grain blend of 8 gluten free grains and seeds which are ground in a coffee grinder and cooked. Since going gluten and casein free I have been unable to find any hot breakfast cereals that we enjoy. So I created this one and the whole family loves it. Serve with brown sugar, agave nectar, honey or fruit.

Steps:
- Grind the basmati rice in a coffee grinder until it resembles a coarse powder. Empty the ground rice into a bowl. Repeat the process with the quinoa, millet, buckwheat, sesame seeds, and flax seeds. Stir in the cornmeal and amaranth. Store in an air tight container in the refrigerator until ready to cook.

I am sharing this classic recipe for those who have got caught up in the "hot breakfast" fad or those who need a change from the fast food drive through lines. This recipe is so easy, even a 6 year old can make it. *You may substitute bagged cereal for boxed cereal

- Place the dish you choose on a flat stable surface.

My mother-in-law has made this wonderful granola cereal recipe for years. It's so flexible, and so much cheaper (and better) than the store-bought granola.

Steps:
- Preheat oven to 275 degrees F (135 degrees C).
- In a large bowl, mix oats, wheat germ, and wheat bran.
- In a medium bowl, blend brown sugar, vegetable oil, honey, and water. Mix in vanilla extract, cinnamon, nutmeg, and salt. Stir the brown sugar mixture into the oat mixture until evenly moist, and transfer to a large, shallow baking dish.
- Bake 45 minutes in the preheated oven, stirring every 15 minutes, until lightly brown. Mix dates, pecans, and coconut into the dish, and continue baking about 15 minutes. Allow to cool, and store in airtight containers.

- In a small, microwave-safe bowl, stir together the honey, sucanat, coconut oil, cinnamon, vanilla and salt.
- Microwave the sugar mixture for about 1 minute or until it bubbles. Pour it over the oats and mix until the oats are evenly coated. This will take a few minutes.

- Preheat oven to 325 degrees F. In a large mixing bowl, add oats, 3 tsp cinnamon, salt and mix well. Add vanilla and maple syrup, stir very well to coat oats with syrup. Place in a large rimmed baking sheet and bake for 20 minutes.

- Mix fresh flour and soaking medium of choice in a large, glass bowl. Cover with a clean cloth and rubber band and leave on the counter for 24 hours.
- Mix all the remaining ingredients including fresh cinnamon into the batter after soaking is complete.
- Pour into 2 – 9x13 pans and bake at 350 F/ 177 C for about 30 minutes until a toothpick inserted in the center comes out clean. Do not overbake!
- Let cool and crumble the coffee cake into small pieces (see second video above for ideal size) and dehydrate on cookie sheets at 200 F/ 93 C for about 12-18 hours. Turn cereal pieces every few hours to dry evenly.
