I adore cranberry sauce and when I found this recipe(Penzeys Holiday 2006 catalogue again), I had to have it.

4 cups cranberries
2 cups apples, peeled cored, and chopped into 1/2 inch chunks
1 cup apple juice
1 cup sugar
1 teaspoon minced orange peel

Steps:

  • Pour juice and sugar into a medium sauce pan, stir to dissolve sugar.
  • Bring juice and sugar to a boil over medium heat.
  • Add the cranberries, apples and orange peel.
  • Return to a boil.
  • Continue to cook over medium heat for 10 minutes, stirring occasionally.
  • The cranberries will pop and the sauce will thicken.
  • Store in the refrigerator.

This homemade cranberry sauce is easy to make and features the tart taste of cranberries mixed with the sweetness of Honeycrisp apples.

1 cup water
1 cup granulated sugar
1/2 teaspoon cinnamon
Dash of salt
1 large apple, peeled and diced
Splash of lemon juice
1 bag fresh cranberries

Steps:

  • In a medium saucepan, bring the water, white sugar, cinnamon and salt to boil over medium-high heat. Stir to dissolve the sugar.
  • Add a splash of lemon juice to the apples and toss. Rinse the cranberries, tossing the bruised berries.
  • Add the tart cranberries and apples to the pot and cook for about 10 minutes until the cranberries pop and the crisp apples soften. Once the sauce has thickened, mash the diced apples and any remaining cranberries in the pot.
  • Allow the sauce to cool then transfer to a bowl and refrigerate completely.

1 cinnamon stick, broken in half

2 Gala apples, peeled, cored and diced
2 teaspoons corn starch

Steps:

  • In a medium saucepan over medium heat, add the cranberry juice, cranberries, cinnamon and sugar. Bring to a boil and let cook for 5 minutes. Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes.
  • Remove 8 ounces of the liquid to a small bowl and whisk in the cornstarch. Slowly add the cornstarch-juice mixture (slurry) to the cranberry mixture, stirring constantly. Cook for an additional 5 minutes.
  • Remove from heat and pour into a serving bowl. Refrigerate until thickened, about 30 minutes. Remove the cinnamon sticks and serve.

  • Slice away the bottom of the orange so it sits steady on the cutting board. Working from top to bottom, slice off the peel, leaving behind most of the white pith.
