- Heat 1 inch oil to 350 degrees F (175 degrees C) in a large skillet or saucepan.
- Stir together the flour, garlic salt, and pepper in a bowl. Dip the chicken pieces individually into the beaten eggs before pressing into the flour mixture to coat; shake off the excess flour. Place the coated chicken pieces onto a plate until all the chicken has been coated.
- Cook the chicken in batches in the hot oil until golden brown and no longer pink in the center.

- To make Dino Nuggets:.
- In a large bowl, mix the ground chicken, egg, breadcrumbs, buttermilk, sriracha, dried oregano, garlic powder, salt and black pepper in a bowl until well combined.
- Take a cookie sheet that will fit into your freezer and line with parchment paper. Arrange dinosaur cookie cutters on the cookie sheet. Take tablespoon sized chunks of the chicken mixture and use your fingertips to push the chicken into the cookie cutters in an even layer about 1/4 inch thick. You may need to add more or less chicken mixture to each cutter depending on the size. Lift away the cookie cutters. Repeat to fill the tray with dinosaur shapes (they can be very close together). Freeze for 1-2 hours until firm.
- Place the flour in a wide, shallow dish. Crack egg into a second wide, shallow dish, add the milk and whisk together with a fork. Place panko breadcrumbs into a third wide, shallow dish.
- Lift each frozen dinosaur shape off the cookie sheet then dip into the flour, turning to coat well. Then dip into the egg mixture, turning to coat. Lastly dip into the breadcrumbs, turning to coat.
- Fill a large, deep skillet halfway with vegetable oil. Heat to 350 degrees F. Once the oil is hot, lower in a few nuggets at a time and fry until golden on one side 3-5 minutes. Flip and let the other side cook to golden brown - about another 3-4 minutes.
- Transfer to plate lined with paper towel to drain the excess oil.
- To make the Orange Sauce:.
- In a small bowl, mix the brown sugar, soy sauce, orange zest and orange juice.
- Heat the sesame oil in a large skillet over a medium heat. Once hot, add the garlic, ginger and pepper flakes and cook, stirring constantly, for 1 minute. Pour in the soy sauce mixture, the rice wine vinegar and scallions and stir through. Bring to the boil then turn down to simmer.
- Mix the cornstarch and water in a small bowl then pour that into the skillet too, stirring it in thoroughly, until thickened. Add the fried nuggets to the sauce in the pan then gently flip them over and stir to coat in the sauce.
- Mould the rice using small bowls into mounds on a plate. Garnish with the broccoli to make a 'Jungle' scene. Arrange the hot nuggets in the scene, garnishing with dill or cilantro if desired.

SEITAN CHICKEN NUGGETS
Move over store-bought vegan chicken replacements, these Seitan Chicken Nuggets are AMAZING and taste BETTER than other chicken alternatives.

- Before you make the dough, start a large pot of broth (about 12 cups) on the stove, at medium heat. Throw a lid on there so it heats faster.
- Blend the beans, spices, and about 3/4 cup of the vegan chicken broth in the food processor or blender until it is smooth. Then add vital wheat gluten and blend again briefly, until most of it has been incorporated. It may still be a little powdery but that's OK. Add it to a large bowl and press everything together with your hands. You may want to add a tablespoon of water or two if it looks a bit dry. DO NOT OVERKNEAD. Seriously, just try to form the dough. At this point you can do whatever you'd like, shape-wise. Make vegan chicken strips or patties using the seitan. Now tear off 1/2 to a full tablespoon sized chunks. I found it easier to cut the chunks using kitchen shears. Then briefly press each one so they're about a 1/2 inch thick nugget shape. They don't all have to be perfectly the same size. Place the nuggets on a plate until they are all done -- we want to add them all together so they cook evenly.
- Add the nuggets one by one into the pot. All of mine fit into 12 cups of simmering liquid. They will puff up and rise to the top but that's OK. I like to use a ladle with holes or gaps, often called a skimmer or slotted spoon. This keeps the liquid from splashing and hurting your skin. You could also use tongs. You want to go in a circle around the pot, the nuggets are evenly spread out. They should not stick together. Once you've added all the nuggets to the pot, put the lid on, slightly ajar, and simmer at that heat for 30 minutes. If you are baking your nuggets, I would recommend preheating your oven to 425 degrees Fahrenheit (218 degrees Celsius) about halfway through the simmering time so you are ready to bake them. If you are making these nuggets to freeze them, let them cool and then freeze in an airtight freezer safe container (do not bake or air fry first. They will turn out OK when reheating, but a little tougher. Definitely recommend freezing right after the simmering process.)
- Lay out your nuggets in a single layer on a lined baking sheet. I like to use silicone baking mats instead of parchment paper because I feel it makes food more crispy. It's also more cost effective and less wasteful! I recommend not letting your nuggets touch on the baking sheet. They're not going to stick if they do touch, but it allows the heat to reach the sides of the nuggets better. Bake for about 25-35 minutes, depending on how crispy you like your nuggets. Remove when cooked to your preference, serve up, and enjoy!
- Place the nuggets in a single layer in an air fryer. You may need to do 2 or 3 batches depending on the size of your air fryer (or if you have multiple racks). Air fry at 400 degrees Fahrenheit (205 degrees Celsius) for about 12-17 minutes, again depending on how crispy you like your nuggets. We liked ours at 15 minutes the best. You don't NEED to flip them halfway through. We found there wasn't an enormous difference either way Flipping it halfway through is recommended if you care about the nuggets browning on both sides.
- Refrigerate leftovers in an airtight container up to 5 days. Reheat in the oven or you can use the microwave with a damp paper towel over them.
- To best preserve texture and flavor, freeze these nuggets (in an airtight container for up to 3 months) BEFORE air frying or baking them. They might take up a little more space, but they'll be softer when you reheat. When you reheat, bake or air fry at 400 degrees F (or 205 degrees C) for 5-10 minutes, or in the microwave place a damp paper towel over them and microwave for a 1-3 minutes.

- First, press the excess water out of your tofu. Remove tofu from packaging, drain excess water, wrap each tofu block in a clean tea towel or several paper towel sheets and place a heavy object on them, like a cast iron skillet. Allow to press for 15 minutes.

- Slowly bring the avocado oil to 350F in a medium size pot. If baking, preheat oven to 425F. Add the almond flour to a bowl and cover with enough water to make it wet and mushy, set aside. Add the chicken thighs to a food processor along with the onion and garlic powder, 2 teaspoons of salt, and few cracks of pepper. Add the almond flour mixture and pulse until well combined and finely minced. You will need to stir the mixture with a spoon to make sure everything gets mixed evenly.
- Place the eggs in one dish with 1 tablespoon of water and mix well. Place the tapioca starch in another dish along with a pinch of salt and pepper, mix well. Add the pork panko to another bowl, if using breadcrumbs season with salt and pepper. Measure 2 tablespoons of chicken mixture and from into a nugget shape using wet hands. Dip the nuggets in tapioca starch and make sure they are well coated, shake off the excess, dip in egg wash, shake off excess, then dip in the pork panko and make sure to cover well. Repeat with the remaining nuggets and place them on a wire rack set inside a sheet tray.
- If deep frying, which I recommend, fry in small batches for 5 minutes until deep golden brown. Before adding to oil, make sure to press the nuggets down to flatten quite a bit, or they will plump up like a fotball while frying. If baking in the oven, bake at 425F for 20 minutes and make sure the nuggets are set on a wire rack inside a sheet tray and spray them with avocado oil all over before baking. Also, you can air fry at 425F for about 10 minutes. You can freeze the nuggets once they are breaded and fry later.
- Meanwhile, make the secret sauce by combining everything in a small bowl and whisking well. Check for seasoning and serve with the nuggets. Enjoy!
