These dirty fries will rock your world! They're loaded with homemade gravy, bacon, banana peppers, green onions, tomatoes, parsley and drizzled with mayonnaise. They're dirty alright, but your belly will thank you!

1 pound potato fries (I used McCain, about 1 1/2)
6 slices bacon (chopped and fried)
1/2 cup banana peppers
3 green onions (chopped)
1 medium tomato (chopped)
1 tablespoon fresh parsley (chopped)
1/4 cup mayonnaise
1 tablespoon butter (unsalted)
1 tablespoon all-purpose flour
1/2 cup beef broth (low sodium)
1/4 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)

Steps:

  • Preheat the oven to 450 F degrees.
  • Place the potato fries in a single layer on a baking sheet, no need to grease the baking sheet. Bake the fries for 15 to 18 minutes or until golden and crispy.
  • In the meantime, prepare the gravy. In a small saucepan, melt the butter over medium-high heat. Add the flour and whisk until it becomes paste and it slightly turns brown. Add the beef broth a little bit at a time, whisking constantly until all the broth has been added. Continue to cook for a another minute or so until the gravy thickens. Season with salt and pepper.
  • To assemble the fries, place the fries in a plate, drizzle generously with gravy, top with bacon, banana peppers, green onions, tomatoes and parsley, then finish off with a drizzle of mayonnaise.

These can be as naughty or as healthy as you choose them to be. They are delicious either way. Serve as a side dish or a snack on game nights.

1 (4 serving size) bag of frozen french fries (To save on fat and calories, use the less than 5% fat ones) 2 tsp Cajun seasoning (or to your taste) (I make my own, see recipe in side bar) 1 TBS Worcestershire sauce 4 spring onions thinly sliced 1/2 each red and yellow bell pepper, finely chopped 8 slices of streaky bacon, cooked and then crumbled (for lower fat use bacon medallions) 80g grated cheese (2/3 cup) (You can use low fat if you wish)

Steps:

  • Preheat the oven to 220*C/425*F/ gas mark 7. Line a baking tray with some foil and spray with low fat cooking spray. Toss the frozen chips with the Cajun seasoning and the Worcestershire sauce. Spread them out on the baking sheet. Bake for of the baking time according to the package directions. Remove from the oven. Spray a large baking dish, or iron skillet with some low fat cooking spray. Pile the baked chips into the dish. Sprinkle with the grated cheese, then the chopped peppers, spring onions and bacon bits. Return to the oven briefly to melt the cheese and warm things up. Serve immediately. Note - I don't like things overly spicy so I err on the side of caution when it comes to using Cajun spice People can always add more at the table it they want to blow their socks off! Ranch dressing is also nice with these for dipping.

Make homemade dirty fries at home with this easy recipe. Fully loaded with lots of toppings like bacon, cheese and onions. Here's how to make them!

300 g Oven Chips
4 Streaky Bacon
2 tsp Cajun Seasoning
70 g Grated Cheddar Cheese
4 Spring Onions
1 Onion
1 Red Bell Pepper
½ tsp Salt

Steps:

  • Pour the oven fries into a roasting tray and drizzle a tablespoon of oil over the chips. Sprinkle 1 teaspoon of salt and 1 teaspoon of Cajun seasoning over the chips. With your hands, toss the chips around until the oil and seasonings evenly coat the chips.
  • Place the chips in the oven to cook at 180°C (gas mark 4, 350°F) for 20 to 25 minutes or until soft and starting to colour.
  • While the chips are cooking in the oven, with a sharp knife cut the bacon into small 1cm pieces. Chop the red pepper into small cubes and peel and dice the onion.
  • With a wok or frying pan add 1 tablespoon of vegetable oil and stir fry the sliced onions, bell peppers and bacon pieces and cook until the onions start to soften and the bacon is cooked (keep frying if you like them crispy).
  • When the chips are cooked, reheat the stir fry mixture for 1 to 2 minutes and add the cooked chips and mix together. Add the remaining teaspoon of Cajun seasoning and mix until evenly distributed.
  • Place the mixture in an ovenproof dish, sprinkle with chopped spring onions and top with grated cheese. Cook in the oven until the cheese has melted.
