- Fill a cocktail shaker with ice. Add tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Place Lime-salt-sugar on a plate. Press the rim of a chilled rocks or wine glass into the mixture to rim the edge. Strain margarita into the glass.
- Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.
- Blend together lime, salt and sugar in a small blender or mini food chopper.
GARLIC BUTTER
Sometimes the basics are the best! I've used this simple recipe for years to make garlic bread, and any leftovers go great on barbequed steaks, pasta, rice or potatoes. You can use any butter or margarine you like. Also, fresh or minced garlic in a jar works well. Adjust the amount of garlic to your taste.

FLUFFY SOUTHERN BISCUITS
These turn nice and golden and have a slightly crisp outside with a fluffy, buttery inside. I like these because they taste so good and are healthier than the traditional version, using margarine instead of shortening, butter, or lard. Buttermilk can be subbed for milk for a tangier flavor. Steps:
- Preheat oven to 450°F.
- Sift together dry ingredients, then add margarine and cut in until coarse and crumbly like cornmeal.
- Add milk and mix with a fork.
- On a floured surface, knead gently turning over several times. Roll out to 1/2 inch thickness and cut out biscuits. Place with sides touching on an ungreased cookie sheet.
- OR drop by large spoonfuls onto an ungreased baking sheet with sides touching.
- Bake for 9-12 minutes, till golden, turning around once halfway through for even browning.
- Serve warm with butter and fried chicken!

I searched and searched for this recipe on the web. Never did find it. Luckily, I found a scrap of paper with the instructions scribbled on it! This is the best cake! Mom used to make it all the time as we were growing up.

- Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9 inch tube pan.
- In a large bowl, cream together the sugar and margarine until smooth. Beat in the eggs one at a time, then stir in the vanilla and lemon juice. Combine the flour, baking powder and salt; mix into the batter alternating with the milk just until blended. Pour into the prepared pan.
- Bake for 1 hour in the preheated oven, or until a toothpick inserted into the crown comes out clean. Cool in the pan for at least 10 minutes before inverting onto a wire rack to cool completely.

- Measure out the coconut oil, vegetable oil, egg yolk, milk, lemon juice and salt.
- Heat the coconut oil in your microwave until melted.
- Place the beaker on an ice pack or over a bowl of ice.
- Pour in the vegetable oil. You can use sunflower oil, olive oil or canola.
- Use your stick blender to sheer these together until well emulsified and milky.
- This will take about 60 seconds.
- Add the egg yolk, milk, salt and lemon juice and blend the mixture again.
- Transfer the margarine to a bowl and allow it to set in your refrigerator.
- And there we have it.... a bowl of homemade margarine. If you want your margarine as yellow as the commercial versions, you can add a drop of food coloring to the mixture before the second blending cycle.
