HOMEMADE GRAHAM CRACKERS
Once you taste one of these sweet whole-wheat crackers, you may never go back to the store-bought variety again. Use them as the base for homemade s'mores, sandwich them with peanut butter, or simply enjoy them on their own.

Steps:
- Preheat oven to 350 degrees. Whisk flours, wheat germ, salt, baking soda, and cinnamon in a medium bowl; set aside.
- Put butter, brown sugar, and honey into the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy, 2 to 3 minutes, scraping down sides of bowl as needed. Reduce speed to low. Add the flour mixture, and mix until combined.
- Turn out dough onto a floured surface, and divide into quarters. Roll out each piece between 2 sheets of floured parchment paper into rectangles a bit larger than 9 by 6 inches, about 1/8 inch thick.
- Using a fluted pastry wheel, trim the outermost edges of each rectangle, and divide into three 6-by-3-inch rectangles. Pressing lightly, so as not to cut all the way through, score each piece in half lengthwise and crosswise, to form four 3-by-1 1/2-inch crackers. Stack parchment and dough on a baking sheet and chill in freezer until firm, about 20 minutes.
- Remove two sheets of dough from freezer. Pierce crackers using the tines of a fork. Transfer to large baking sheets lined with parchment paper. Bake, rotating halfway through, until dark golden brown, 8 to 9 minutes. Repeat with remaining dough. Let cool on sheet 5 minutes; transfer crackers to wire racks to cool completely.

You may want to get out a cookie cutter to make perfectly round layers for these Mini Cracker Sandwiches.

HOMEMADE CHEDDAR CRACKERS

- Put the Cheddar, flour, butter, salt, seasoned salt and cayenne in a food processor and pulse until the mixture resembles sand. Add the ice water and pulse until the dough comes together. Form the dough into a ball, wrap in plastic and refrigerate for 1 hour.
- Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat.
- Roll out the dough to 1/4-inch thickness and cut into squares with a pizza cutter. Use a wooden skewer to poke a small hole in the center of each square. Transfer to the prepared baking sheet and bake until golden brown, 15 to 17 minutes. Allow to cool before packing up.
HOMEMADE SANDWICH CRACKERS

- Sift the flour. Place the flour, sugar and salt in a large bowl. Mix. Rub the butter into the flour mixture with your fingertips until the mixture resembles breadcrumbs.
- Next add approximately 1/2 of the beaten egg yolk and also add the water. Mix well your hands. Try to work quickly.
- Wrap the dough in plastic wrap and chill for 30 minutes.
- Now take the chilled dough and roll out into a large square that is about 1/8 inch thick, using a rolling pin. Cut it into cracker sized squares ( 1 3/4 x 1 3/4 inch) using a pastry cutter (fluted cutter is great if you have one).prick the cracker with a fork
- Lightly butter a baking tray and then line with oiled or baking sprayed parchment paper. Place the crackers onto the baking tray.
- Bake about 7 minutes at 200C degrees or until the edges are just starting to brown.
- Remove from oven. Allow to cool.
- For the filling: Using an electric mixer, beat butter in a bowl until pale and fluffy. Gradually add icing sugar and milk, beating constantly until combined. Add vanilla . Mix well.
- Now take one cracker and spread 2 teaspoons of the filling on the bottom of it and then top with another cracker. Press down.

HOMEMADE GARLICKY CHEESE CRACKERS
Making cheese crackers at home may sound daunting but actually they are quite easy. They require a little more work, then they're worth it. Crackers don't need to be an afterthought. These particular crackers are definitely worthy of their own place on your menu. No weird ingredients or fancy kitchen gadgets needed. You only need some ingredients that you probably have in your kitchen all the time, a cookie cutter, and an oven. That's all! These are super crispy, buttery, and perfect for a snack but if topped and loaded with cheese and herbs, ideal as a side dish.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or a silicone baking mat.
- Place flour, sugar, baking powder, garlic powder, salt, and dill in the bowl of a food processor and pulse to combine or you can mix manually as well. Add 4 tablespoons melted butter and vegetable oil and pulse to combine.
- With food processor on low speed, slowly drizzle in water until the dough begins to form a ball. Remove dough from food processor and cover with a plastic wrap. Let rest for 10 minutes.
- Roll out dough as thin as possible on a lightly floured surface; thinner than pie crust if possible, thin like crepes works best. Cut the dough into your desired shapes with a cookie cutter, or cut with a knife or pizza cutter and arrange on the prepared baking sheet. Let it rest for another 10 minutes.
- Using a toothpick, prick several holes in each cracker. Don't skip this step; you will not have nice, flat crackers if you skip.
- Bake in the preheated oven until golden brown, about 10 minutes. Remove from the oven, brush the tops with remaining melted butter, and immediately sprinkle with coarse sea salt. Remove from baking sheets and allow to cool completely on a wire rack.
- While crackers cool, prepare cheese topping: Mix mascarpone, Cheddar, and Parmesan cheeses with parsley, oregano, thyme, rosemary, and pepper. Sprinkle over crackers and serve.

HOMEMADE SESAME CRACKERS

- Preheat oven to 350. Lightly grease two cookie sheets with butter and set aside.
- In a medium-sized bowl, mix first four ingredients and then sift them two times with a flour sifter. To this dry mix, add yogurt, cutting it in with a pastry blender. Set aside.
- Melt butter in small saucepan and toast sesame seeds in butter until they start to smell nutty and get a bit browned. Add sesame seeds to dry mix and then ice water. Knead this mixture a bit, perhaps 20 strokes. If dough is still too sticky, add a handful of wheat flour until you can manage to roll it out on a flat surface.
- Roll to 1/8 inch thick and cut into desired shapes. Poke many holes into each individual cracker with a fork.
- Arrange on cookie sheets with about 1/4 inch between each cracker. Bake for 10 minutes or starting to brown at edges. Cool on baker's rack.

HOMEMADE CRACKERS
Use up leftover wrapping paper and toilet rolls to create these homemade Christmas crackers. Fill them with treats and our favourite food jokes

- Cut out a 30 x 20cm rectangle of wrapping paper. Flip the paper over so the reverse side is on show with one of the longer ends closest to you. Place a toilet roll, vertically, midway down one end. Mark the paper at either end of the toilet roll, then set the toilet roll aside and fold the paper in at the marks. Snip into the folds using scissors. Unfold the paper and stick the toilet roll in its original position with glue. Fold in the ends to just beneath snipped parts, if you want to hide the reverse of the wrapping paper. Put a cracker snapper strip through the toilet roll and trim, if you need to. Attach each end to the paper using sticky tape.
- Roll the paper around the toilet roll and stick it in place with glue. Scrunch the paper around one end of the roll, being careful not to tear the cuts you've made, then secure with string or ribbon. Tip in jokes you have written (try our suggestions, below) and sweets, or other treats, through the open end of the cracker, then secure that end with more string or ribbon.
