EASY HOMEMADE SPAGHETTI SAUCE RECIPE
My family's secret homemade spaghetti sauce is easy to make using a few staple ingredients you may already have on hand! Perfectly thick and packed with flavor, you'll be ditching that store bought pasta sauce!

- In a large pan heat the extra virgin olive oil over medium heat until just shimmering. Add the onions, garlic, and finely grated carrots. Cook for about 5 minutes, stirring regularly until softened.
- Add the crushed tomatoes and about 1/2 cup water. Add a generous pinch of salt and pepper. Stir in oregano, paprika, crushed pepper flakes, if using. Finally, stir in the fresh basil and parsley.
- Bring the sauce to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes. Check partway through, and if you feel the sauce is too thick, you can add a bit more water (preferably some of your pasta cooking water). When sauce is ready, throw in more fresh basil, if you like.
- If serving for dinner, add cooked pasta of your choice to the sauce. Mix to combine and let the pasta cook in the sauce over low heat for about 5 minutes.

- In a Dutch oven, combine the celery, onion, green pepper and 1 cup water. Bring to a boil. - In a large stockpot on low-med heat add your olive oil and saute your onions for about 4 minutes,then add your crushed garlic,cook for 2 minutes longer. Then add your water,and tomato products. Be sure to mix everything very well.Add in your spices,and cheese. cook for 2 1/2 hours covered.Then add in your wine, and cook 30 minutes longer. Sauce will be thin on first day.Also if you use meat it will alter thickness.The second day this turns into a nice thick sauce.

- Homemade Spaghetti Os Recipe: In a small saucepan, stir together all ingredients except the pasta. Bring to a boil, then lower and cook on low until the butter spread melts completely. Meanwhile, bring a medium pot of salted water to a boil. Once boiling, throw in the pasta and cook until desired texture is reached. Drain, then pat dry with a towel. My boyfriend and I are both foodies, so imagine my horror when I discovered my toddler wanted nothing except boxed Mac & Cheese and tasteless, overcooked canned pasta! So naturally I set out to make a homemade version, the canned pasta has HFCS and almost no veggies. I found a sauce we can both live with.

- Place olive oil in large pot and heat over medium heat until shimmering.
- Start your dicing with the carrots and work your way down my list of ingredients and throwing each veg into the pot with a sprinkle of salt when finished.
- Sweat the veggies on medium to low heat until fork tender (about 10 minutes).
- Add the tomatoes and bring up to a low simmer, cover and simmer for around 40 minutes.
- Take the top off and let some of the liquid boil away, how far you let it reduce is up to you and how thin you want the sauce to be, I like it thick so that I can add some of the pasta cooking water later on.
- Take off the heat and let cool some before blending into liquid on high in your blender.
- This sauce freezes well. Depending on your or your child's taste you can add an onion and/or any dried or fresh herbs that hit your fancy. I freeze small containers and pull as I need. Placing it over whatever pasta I have on hand with some of the cooking water to reheat the sauce and my daughter loves it, although it doesn't taste EXACTLY like the canned "yuck" sauce.

- In a Dutch oven, bring 2 quarts water to a boil. Using a slotted spoon, place tomatoes, one at a time, in boiling water for 30-60 seconds. Remove each tomato and immediately plunge into ice water.
