1/2 1/2c 1/2c quinoa,

that went into the most amazing Moussaka you've ever had.
to favorite thing with the sausage version is to make naan bread pizzas with cashew hummus, red pepper relish, crumbles and torn kale on top. It's killer!

Steps:

  • Well, this is a standard go-to for me. 1/2c quinoa, 1/2c wheat berries, 2c veggie stock. Simmer for about 20 min or till liquid is gone. From here you can make it "sausagey" with some fresh sage, fennel seeds, red pepper flakes, etc... I like Alton Brown's breakfast sausage seasoning blend but added some fennel (sorry, I cook by sight and smell, I don't know how much, prob a couple tablespoons cause I love fennel). I've also made this into taco meat with a 0.99 cent package of taco seasoning. Once I made it into chorizo, and once was with celery seed, oregano, cinnamon and red pepper flakes that went into the most amazing Moussaka you've ever had. My favorite thing with the sausage version is to make naan bread pizzas with cashew hummus, red pepper relish, crumbles and torn kale on top. It's killer! The best thing about this is that it makes a fair amount, so it can be thrown in the freezer for whenever, and absolutely you must try browning the leftovers in a little oil in a skillet. The little crispy, toasted wheat berries are what christmas carols are made for. Lol. Lastly, these are two great grains cause they both have loads of protein and almost no fat (except for what you may sauté it in). 1 cup water
1/4 cup Bragg's Liquid Amino's (sub with low-sodium soy sauce or tamari)
1 tablespoon maple syrup
1 teaspoon liquid smoke
1/2 teaspoon blackstrap molasses
1 cup textured vegetable protein (TVP)
1/4 cup nutritional yeast
1 tablespoon garlic powder
1 teaspoon ground sage
1 teaspoon ground fennel
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper

Steps:

  • Whisk all of the wet ingredients together in a medium saucepan and bring to a boil.
  • While waiting for the wet mixture to boil, add the dry ingredients to a small bowl and mix them together.
  • Once the liquid begins to boil lower the heat and add the dry ingredients and stir until all of the ingredients are completely incorporated. Turn off the heat and let the TVP sit for 5-10 minutes until all of the moisture is absorbed.
  • Preheat a nonstick skillet over medium heat and cook the crumbles for about 5 minutes while occasionally stirring.

1 cup warm vegetable broth
1 tablespoon flaxseed meal
¾ cup quick-cooking oats
2 tablespoons nutritional yeast

1 teaspoon ground black pepper
1 teaspoon fennel seeds

Steps:

  • Combine water, soy sauce, and maple syrup in a separate container and mix well. Add to the TVP mixture and combine into a slightly crumbly dough. Mix well to activate gluten and let dough sit for 5 minutes; dough should stiffen slightly and become less crumbly.
  • Form into tablespoon-size balls and flatten slightly.
  • Heat oil in a cast iron or nonstick frying pan over medium heat. Cook sausage patties in the hot oil until golden brown, about 5 minutes on each side.

Omnivorous boyfriend approved. This recipe originated from VegWeb; however, they appear to have a frequent malware problem that they still seem to be unable to control after several years now, so I'm reproducing it here so I don't have to risk viruses/spyware when I go to the website.

2 tablespoons soy sauce or 2 tablespoons tamari
1 teaspoon sage
1 teaspoon onion powder
1/2 teaspoon thyme

1 cup boiling water

  • In a bowl, mix together the first 9 ingredients (through salt). Pour the boiling water over the mixture.
  • Pour in the textured soy protein, mix with a fork, and let stand for 10 minutes. Fluff with a fork. Taste to see if more seasonings need to be added.
  • Put oil in a frying pan over medium heat. Add mixture, and fry until well browned. (you may need to add extra oil if the pan becomes too dry.

250g chestnut mushrooms
3 tbsp olive oil
2 leeks, finely chopped
2 large garlic cloves, crushed
1 tbsp finely chopped sage leaves
1 tbsp brown rice miso
2 tsp Dijon mustard
30g chestnuts, very finely chopped
70g fresh white breadcrumbs
1 x 320g sheet ready-rolled puff pastry (not the all-butter version)
plain flour for dusting
dairy-free milk (like soya milk), to glaze

Steps:

  • Tip the mushrooms into a food processor and pulse until they are very finely chopped. Put half the olive oil in a large frying pan, add the leeks along with a pinch of salt and fry gently for 15 mins or until softened and golden brown. Scrape the leeks out of the pan, into a bowl and set aside to cool a little.
  • Heat the remaining oil in the pan and fry the mushrooms for 10 mins over a medium heat. Add the garlic, sage, miso and mustard, and fry for a further minute. Leave to cool slightly.
  • Heat the oven to 200C/180C fan/gas 6. Tip the mushroom mixture into the bowl with the leeks, then add the chestnuts and breadcrumbs. Season, then mix everything together until you have a slightly stiff mixture.
  • Unravel the pastry on a floured surface, then roll the pastry out so that one side measures 43 cm. Mould the mushroom and leek mixture into a sausage shape down the centre of the pastry, then bring the pastry up around the filling and seal along the seam with a fork. Cut into ten pieces. Lay on a parchment-lined baking sheet and brush each piece with milk. Bake for 25 mins or until deep, golden brown. Leave to cool a little and sprinkle with sesame seeds before serving.
