I received this recipe from a friend of mine and have used this for years. My family requests this one often. It's a light meal that everyone will enjoy. Serve with steamed rice.

2 tablespoons soy sauce
⅛ teaspoon red pepper flakes
1 ½ tablespoons olive oil
2 skinless, boneless chicken breast halves, cut into bite-size pieces

Steps:

  • Whisk honey, soy sauce, and red pepper flakes in a bowl.
  • Heat olive oil in a skillet over medium heat; cook and stir chicken in hot oil until lightly brown, about 5 minutes. Pour honey mixture into skillet and continue to cook and stir until chicken is no longer pink in the center and sauce is thickened, about 5 minutes more.

These honey-mustard baked chicken breasts are super easy, delicious, and healthy! What's not to like?

nonstick cooking spray
½ cup honey
½ cup Dijon mustard
1 cup seasoned bread crumbs
4 (4 ounce) skinless, boneless chicken breast halves

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a baking dish with nonstick spray.
  • Mix honey and mustard together in a bowl. Place bread crumbs in a second bowl.
  • Roll chicken in honey-mustard, then roll in bread crumbs. Place in the prepared baking dish. Mix remaining honey-mustard and bread crumbs together and set aside.
  • Bake in the preheated oven for 30 minutes. Spoon reserved honey-mustard-crumb mixture over the chicken breasts and bake until chicken is no longer pink in the center and the juices run clear, 10 to 15 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Being a new mom on a small budget, I've been experimenting with chicken recipes. I actually wanted to make another dish but didn't have all the ingredients, so I substituted a few and came up with this recipe.

6 to 8 chicken pieces, skin removed
2 tablespoons butter
1/4 cup chopped onion
1/4 cup minced fresh parsley
2 can (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1/2 cup sour cream
1/2 cup milk
1 tablespoon ground nutmeg
1/4 teaspoon rubbed sage
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary, crushed
Additional ground nutmeg

Steps:

  • In a large skillet, brown chicken in butter. Remove chicken and set aside. , In the same skillet, saute onion and parsley until onion is tender. Add the soup, sour cream, milk, nutmeg, sage, thyme and rosemary; mix well. Return chicken to the skillet an spoon sauce over pieces. , Simmer, uncovered, for 25-30 minutes or until chicken is no longer pink, basting occasionally. Sprinkle with additional nutmeg.

I am always looking for simple marinades for chicken breasts. This one is sweet and pairs well with green vegetables and/or potato smash. I cook for 2 and eat for 1. The leftovers from this dish keep for up to a week and can be made into a great cold chicken salad. I do not suggest reheating chicken breasts as they will become dry and lose flavor.

Steps:

  • Combine flour and cayenne pepper in a large resealable plastic bag. Add a few chicken strips at a time and shake to coat.

1 tablespoon dry mustard (mustard powder)
3 tablespoons white wine vinegar or 3 tablespoons cider vinegar
1/4 cup honey
1 teaspoon Dijon mustard
1/2 teaspoon dried thyme
1/4 teaspoon dried oregano
4 boneless skinless chicken breasts (a.k.a. chicken breast halves)

Steps:

  • Preheat oven to 400 degrees F.
  • Line a baking pan with aluminum foil and grease the foil (or spray with nonstick spray).
  • In a small bowl, stir together dry mustard and vinegar.
  • Add honey, Dijon mustard, thyme and oregano.
  • Mix well.
  • Place the chicken breasts on the baking pan.
  • Brush with half of the honey mixture.
  • Bake for 10 minutes.
