Number Of Ingredients 7

5 cups fresh or frozen blueberries, thawed
1 cup apple juice
1 package (1-3/4 ounces) pectin for lower sugar recipes
1 cup honey
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Rinse five 1-cup plastic or freezer-safe containers and lids with boiling water. Dry thoroughly., Place blueberries in a large saucepan; mash blueberries. Stir in juice and pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in honey, nutmeg and cinnamon; return to a full rolling boil. Boil and stir 1 minute. Remove from heat; stir in vanilla., Immediately fill all containers to within 1/2 in. of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours., Jam is now ready to use. Refrigerate up to 2 weeks or freeze up to 12 months. Thaw frozen jam in refrigerator before serving., Freeze option: Freeze up to 12 months. To use, thaw in the refrigerator overnight before serving.

2 1/2 cups blueberries, coarsely chopped (fresh or frozen)
2 1/2 cups sugar
1 cup liquid honey
1 tablespoon lemon juice
85 ml liquid fruit pectin (2 7/8 ounces approximately)

Steps:

  • Place blueberries, sugar, honey and lemon juice into a non-reactive saucepan and bring to a boil, stirring.
  • Boil hard for 2 minutes, stirring constantly.
  • Take off the heat, stir in the pectin and ladle into hot sterilized jars.
  • Seal and process in a hot water bath for 10 minutes.
  • Place hot jars on a towel on your counter and let cool overnight. Check seals.

Unsalted butter, for buttering the baking dish
8 cups blueberries
1/3 cup sugar
3 tablespoons all-purpose flour
2 teaspoons ground cinnamon
1/2 lemon, juiced
1 cup all-purpose flour
1 cup sugar
2 tablespoons unsalted butter, melted
2 tablespoons milk
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 eggs, lightly beaten
Lemon Honey Ice Cream, for serving, recipe follows
1 1/2 cups milk
1 cup heavy cream
1/4 cup honey
1/4 cup sugar
2 tablespoons lemon zest
1 tablespoon lemon juice
5 egg yolks

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
  • For the blueberry filling: Add the blueberries, sugar, flour, cinnamon and lemon juice to the prepared baking dish; toss to combine. Set aside.
  • For the cobbler topping: In a medium bowl, mix the flour, sugar, melted butter, milk, baking powder, cinnamon, salt and eggs. Stir to combine, then dollop the batter over the blueberries to cover.
  • Bake until the berries are bubbling and the topping is golden, about 45 minutes.
  • Serve a la mode with the Lemon Honey Ice Cream.
  • In a medium saucepan, combine the milk and heavy cream and slowly warm over low heat until small bubbles form around the edges. Add the honey and stir to mix.
  • In a medium bowl, whisk to combine the sugar, lemon zest, lemon juice and egg yolks. Slowly add the egg yolk mixture to the milk and cook, stirring constantly, until thickened enough to coat the back of a spoon, about 8 minutes. Remove from the heat, cover, and chill in the refrigerator until cold, about 1 hour.
  • Transfer the mixture to an ice cream machine, process for about 30 minutes, and then freeze until frozen through, another 2 hours.

  • Preheat oven to 375 degrees F (190 degrees C).

5 cups fresh or frozen blueberries
1/4 cup water
3 cups sugar
1 cup clover honey

Steps:

  • In a Dutch oven, bring blueberries and water to a boil; mash and stir for 5 minutes. Add sugar and honey; boil gently, uncovered, over medium heat for 30 minutes, stirring frequently. , To test for doneness: Remove from heat; spoon about 1 tablespoon of hot jam onto a chilled plate and set plate in freezer until the jam has cooled to room temperature, 1-2 minutes. When the cooled jam holds its shape when mounded with a spoon, the jam has reached its desired thickness. If necessary, return to heat and repeat test after additional cooking. , Skim off any foam. Carefully ladle hot mixture into hot half-pint jars, leaving 1/4-in. of headspace. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in boiling-water canner.

1 cup flour
2/3 cup finely ground cornmeal
1/4 cup white sugar, plus
1 tablespoon white sugar
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
6 tablespoons unsalted butter, cut into small pieces, chilled
2/3 cup heavy cream, plus
1 tablespoon heavy cream
6 cups blueberries (about 2 pounds) or 6 cups blackberries
2 tablespoons honey
3 tablespoons fresh orange juice
1/2 teaspoon finely grated lemon zest
1 tablespoon cornstarch
1 tablespoon brown sugar (or turbinado sugar)
vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350°F In a food processor, pulse the flour, cornmeal, 3 tablespoons of the granulated sugar, the baking powder, cinnamon and salt to mix. Add the butter and pulse until the mixture resembles coarse meal. Add the 2/3 cup heavy cream and pulse just until a smooth dough forms. On a lightly floured surface, pat the dough into a ball. Flatten slightly, then roll out the dough to a 1/2" thickness. Using a floured 1 1/2" round biscuit cutter, cut out 32 rounds; pat the scraps together and reroll if necessary.
  • In a medium bowl, toss the berries with the honey, orange juice, lemon zest, cornstarch and the remaining 2 tablespoons of granulated sugar. Pour the berries into a 2-quart baking dish. Arrange the biscuit rounds over the fruit in rows so they touch but do not overlap. Brush the rounds with the remaining 1 tablespoon of cream and sprinkle with brown sugar. Bake for 50 minutes, or until the fruit juices are bubbling and thickened and biscuits are golden brown. Let cool slightly, and serve with ice cream. Enjoy!

  • The blueberry(or blackberry) cobbler can be baked 8 hours ahead and kept at room temperature.

½ lemon
1 ⅛ cups white sugar
4 ½ tablespoons butter, softened

¾ cup whole milk

1 ½ tablespoons cornstarch
1 pinch ground cinnamon
¾ cup boiling water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease an 11x7 inch baking dish.
  • Spread the blueberries out to cover the entire bottom of the baking dish. Squeeze the juice from the lemon over them. In a medium bowl, stir together the butter and 1 1/8 cups sugar until smooth. Stir in flour and baking powder alternately with the milk until smooth. Batter will be thin. Spoon over the berries, and spread evenly.
  • In a small bowl, stir together 1 1/2 cups of sugar, salt, and cornstarch. Sprinkle over the top of the batter. Dust with a pinch of cinnamon, then pour the boiling water over the entire dish.
