This Honey Chipotle Salad Dressing is inspired by the famous burrito chain itself, and is full of irresistibly delicious sweet and savory and smoky flavors. Perfect for salads, marinades, roasted veggies, tacos and more!

Number Of Ingredients 10

3/4 cups extra-virgin olive oil or avocado oil
1/4 cup red wine vinegar
2 tablespoons honey
1-2 chipotles in adobo, plus an extra teaspoon of the adobo sauce
2 garlic cloves
2 tablespoons freshly-squeezed lime juice
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon salt
freshly cracked black pepper

Steps:

  • Add all ingredients to a blender or food processor, and puree until smooth. Taste, and add extra honey if you'd like a sweeter dressing.
  • Use immediately, or refrigerate in a sealed container for up to 1 week.

Kosher salt and freshly cracked black pepper
1 pound ditalini pasta
Honey-Chipotle Vinaigrette, recipe follows
2 cups shredded rotisserie chicken meat (from about 1 rotisserie chicken)
1 pint cherry tomatoes, halved
1 cup sliced drained banana peppers
1 avocado, thinly sliced.
2 tablespoons minced fresh chives
1/2 cup red wine vinegar
1/4 cup mayonnaise
2 tablespoons honey
2 tablespoons chipotle peppers in adobo, plus more if needed
1 tablespoon Dijon mustard
1 teaspoon dried Italian seasoning
1 clove garlic
Salt and freshly cracked black pepper
1/4 cup olive oil

Steps:

  • Bring a pot of salted water to a boil. Cook the pasta in the boiling water until al dente according to the package instructions. Drain and transfer to a large bowl.
  • Toss the pasta with the Honey-Chipotle Vinaigrette. Season with salt and pepper. Next, add the chicken, cherry tomatoes and banana peppers. Toss it all and transfer to a pasta bowl for serving. Top with fanned-out avocado slices and garnish with the chives.
  • Put the vinegar, mayo, honey, chipotle, mustard, Italian seasoning, garlic and some salt and pepper in a blender or food processor. While the machine is running, slowly drizzle in the olive oil until the dressing is combined and emulsified. Adjust the seasoning if necessary, or add more chipotle if you want it more spicy.

Steps:

  • Add the olive oil, vinegar, honey, chipotles in adobo, garlic, lime juice, cumin, oregano, salt, and black pepper to a blender or food processor. Puree until smooth.
  • Taste, then add extra honey for a sweeter dressing.
  • Serve over salads, and enjoy!

1 cup mayonnaise

Steps:

  • Add all ingredients, except the mayonnaise, to the container of a blender.
  • Blend on low speed, stirring occasionally with a wooden spoon until blended.
  • Add mayonnaise.
  • Blend on low speed stirring occasionally until mixture is smooth and creamy, about 3 minutes.
