Honey & Coconut Flapjack image

Wonderfully sweet and awesome chewiness. A delight in the mouth.

Steps:

  • Before you begin, turn your oven on to 180C (or 170C fan assisted)
  • Line a square tin (21-23 cm wide) with baking paper.
  • In a saucepan, place the butter, sugar, syrup and honey and melt over a medium heat, stirring occassionally until everything is combined. Will look like a dark runny toffee sauce. Do not boil.
  • Remove saucepan from heat. Add the oats, sunflower seeds (if using) and coconut to mixture and stir until coated in the melted sauce.
  • Place mixture into your lined tin and flatten. (Optional, scatter sunflower seeds across top)
  • Bake in the oven for approx 20 minutes (check at 15 minutes). Flapjack should be golden brown in colour - becareful not to burn.
  • Remove from oven and leave to cool for 5-10 minutes. With a knife score into flapjack to create portions to the size of your liking. Leave to cool further and ready to eat from about 25 minutes. Yummy

225g butter , plus extra for the tin
75g caster sugar
4 tbsp honey
350g porridge oats

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter and line a 30 x 15cm rectangle tin with baking parchment. Melt the butter, sugar and honey in a pan over a medium heat, stirring frequently until the butter has melted and the mixture is smooth.
  • Put the oats in a mixing bowl, then pour over the butter and honey mixture. Stir until all the oats are coated. Tip into the prepared tin, and use a spatula or the back of a spoon to evenly spread out the mixture. Cook for 10-15 mins until lightly golden. Leave to cool in the tin, then remove before cutting into squares.

1 cup coconut jam
½ cup light brown sugar
4 tablespoons vegan butter
3 tablespoons golden syrup
3 ½ cups oats
¼ cup coconut flakes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 10x7-inch glass pan.
  • Combine coconut jam, brown sugar, vegan butter, and golden syrup in a saucepan over medium-low heat. Cook until melted together, about 3 minutes.
  • Meanwhile, pulse oats in a food processor until finely ground.
  • Add ground oats to the melted jam-sugar mixture; stir until coated. Spread mixture in the prepared pan. Sprinkle coconut flakes on top and press down.
  • Bake in the preheated oven until cooked through, about 10 minutes. Remove from the oven and let cool completely, about 30 minutes, before cutting into 36 squares.

  • Add the almonds to a food processor and pulse until roughly chopped. There should be a mixture of small and medium sized pieces.
  • Tip the oats, honey, melted butter, salt, and vanilla extract into the processor with the nuts and then pulse 5-6 times until combined. Don’t over-mix the dough or you’ll lose all of the oats’ texture – pulse just until it starts to clump together.
  • Scrape the dough into the prepared tin and press it down very firmly with your hands or the back of a measuring cup. Bake the flapjacks for 15-18 minutes or until the top is golden brown and the edges are a bit darker and slightly crispy. There will be a slight softness to the middle of the bars and that’s okay.
