My wife and I love to munch on caramel corn while watching a movie. But I don't like using corn syrup. Try this delicious, crispy, maple version.

1 cup butter
1 cup brown sugar
1 cup turbinado sugar
¼ cup real maple syrup
¼ cup honey
1 teaspoon vanilla extract
½ teaspoon baking soda
20 cups popped popcorn

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Line 1 or 2 baking sheets with parchment paper.
  • Combine butter, brown sugar, turbinado sugar, maple syrup, and honey in a 1 1/2- to 2-quart saucepan over low heat. Stir continuously until mixture begins to simmer; let simmer on low, 4 to 5 minutes. Remove from heat and add vanilla extract and baking soda at once. Stir to combine.
  • Place popcorn in a warm mixing bowl and coat by drizzling caramel sauce over corn while stirring using a heavy metal spoon, making sure to stir slowly and not allowing hot caramel on hands. Place onto the prepared baking sheet, using an additional baking sheet if you're worried it is piled too high.
  • Bake in the preheated oven until crispy, about 40 minutes, removing every 10 minutes to stir corn.
  • Remove from the oven and place the tray on a wire rack to cool, about 15 minutes.

3 (15 ounce) cans creamed corn
2 eggs
1 cup crushed saltine crackers
½ cup butter
½ teaspoon paprika
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 8x11x2 inch casserole dish.
  • In a medium sized mixing bowl, combine the creamed corn, eggs, 1/4 cup of the melted butter and 1/2 of the cracker crumbs. Pour mixture in into the prepared dish.
  • In a small bowl, mix the remaining melted butter, cracker crumbs, paprika and pepper. Sprinkle crumb topping over the casserole.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, until topping browns slightly and corn is bubbly around the edges.

This is our traditional family snack, much beloved even by people who don't normally like cereal. I have taught this one in numerous cooking classes for teenagers, and none have experienced any "failures", so I think it's fairly easy as long as you don't substitute and mix the honey/butter into the cornflakes well.

Number Of Ingredients 4

4 ounces honey
4 ounces butter (not oil, not margarine)
4 ounces sugar
1 (18 ounce) package kellog corn flakes (the name brand - not a substitute)

Steps:

  • Prepare two sheet pans of foil muffin cups (patty pans).
  • Separate the paper liners from the foil.
  • Pour the entire contents of corn flake package into a very large bowl.
  • Set oven to 350* F.
  • In a small saucepan, melt the honey, butter and sugar on medium heat.
  • Do not let it boil: you only want a warm liquid.
  • Pour onto the corn flakes.
  • Mix well with a spatula.
  • Really, really well.
  • You mix and mix until every one is coated, about 10 minutes.
  • Lots of little hands can help.
  • The raw mixture is pretty yummy too.
  • Over-fill each foil cup.
  • Set touching each other on the tray.
  • Bake for about 12-15 minutes, or until the cornflakes are JUST starting to colour.
  • It will depend on your oven and where your trays are.
  • If you prefer them less crunchy, take them out a couple of minutes early.
  • Cool.
  • Eat.

Recipe inspired by Recipe#146841 that I changed to make cooking on a BBQ or grill a quick and easy option. Note the preparation time includes cooling time for the butter, and you can pop back in the fridge after wrapping the corn so it is quite quick and easy to prepare.

4 ears corn on the cob
2 tablespoons butter
1 tablespoon honey
1 teaspoon garlic, crushed
1/4 teaspoon ground black pepper

Steps:

  • Place butter & honey in a cup or small bowl and microwave for around 30 seconds until just melted.
  • Stir through garlic and pepper.
  • Leave to cool 15 minutes or so in fridge.
  • (optional step) Cut ears of corn in half.
  • Brush mixture evenly over the corn and wrap in aluminium foil.
  • Cook over pre-hearted BBQ plate or grill 15-20 minutes over medium - high heat, turning often. The foil starting to turn brown is a sign it's been long enough in one position and should be turned a little.
