- Mix dressing, honey, lemon juice and basil. Remove 1/2 cup of the dressing mixture for later use. Place chicken on greased rack of broiler pan; brush with remaining dressing mixture.
- Broil 10 min. Turn chicken over; broil an additional 7 to 10 min. or until chicken is cooked through (170°F). Cut chicken into 1-inch pieces; cover to keep warm.
- Toss spinach with mushrooms; top with chicken. Drizzle with reserved 1/2 cup dressing mixture just before serving.

- Mix dressing, honey, juice and basil.
- Reserve 1/2 cup dressing mixture.
- Place chicken on greased rack of broiler pan.
- Brush with 1/2 of the remaining dressing mixture.
- Broil 10 minutes.
- Turn; brush with remaining dressing mixture.
- Broil an additional 7 to 10 minutes or until chicken is cooked through.

- Heat a grill or grill pan to medium-high. Clean and lightly oil hot grill. In a small bowl, stir together mustard and 2 tablespoons honey. Reserve 2 tablespoons honey mustard for tomorrow's lunch. Season chicken with salt and pepper. Grill until browned and cooked through, 12 to 15 minutes, flipping once. Brush with half the remaining honey mustard and cook 1 minute. Transfer chicken to a cutting board, tent with foil, and let rest 5 minutes. Cut 2 chicken breasts into thin slices and transfer to a serving platter. Reserve 2 chicken breasts for a future meal.

- Make marinade: In a large bowl, whisk together 2 cups buttermilk, 3 tablespoons honey, garlic, 2 teaspoons coarse salt, and 1/2 teaspoon pepper. Place chicken in a resealable plastic bag (or baking dish); add marinade and seal (or cover). Refrigerate at least 2 hours or up to 1 day.
- Make salad dressing: In a jar, combine remaining 1/4 cup buttermilk, sour cream, vinegar, and 1 teaspoon honey; season generously with salt and pepper. Shake vigorously to combine. Refrigerate.
- Preheat oven to 425 degrees. In a food processor, pulse bread, oil, and Herbes de Provence until fine crumbs form; season generously with salt and pepper (you should have about 1 1/2 cups).
