4 ounces cream cheese, softened
2 tablespoons plus 2 teaspoons honey, divided
1/4 cup sliced almonds
1 tube (8 ounces) refrigerated crescent rolls
1/4 teaspoon ground cinnamon

Steps:

  • In a small bowl, beat cream cheese and 2 tablespoons honey until smooth; stir in almonds. Unroll crescent dough; separate into triangles., Place 1 tablespoon of cream cheese mixture in the center of each triangle. Roll up and place point side down 2 in. apart on an ungreased baking sheet; curve ends to form a crescent. Sprinkle tops with cinnamon., Bake at 375° for 12-14 minutes or until golden brown. Drizzle with remaining honey. Serve warm. Refrigerate leftovers.

1 ½ cups warm water (110 degrees F/45 degrees C)
1 egg
1 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 tablespoon molasses
1 tablespoon honey
5 tablespoons white sugar
2 tablespoons dry milk powder
2 tablespoons butter flavored shortening
4 ½ cups bread flour
2 teaspoons active dry yeast

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle for a 2 pound batch; press Start. The dough can be a bit sticky, so you may want to add a little bit more bread flour as it mixes.
  • When the dough cycle is complete, turn the risen dough out on a lightly floured surface and divide into twelve equal pieces. Form the pieces into rounds and place on lightly greased baking sheets. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven for 15 minutes, until golden brown.

From Sally's Baking Addiction - These tried & true honey butter rolls are my favorite dinner rolls to make! They're unbelievably soft, fluffy, and just melt in your mouth. Do not omit the honey butter glaze as these roll come out of the oven!

1 cup whole milk
2 1/4 teaspoons yeast
1/2 teaspoon granulated sugar
1/4 cup honey
1 large egg
1 large egg yolk
1/4 cup unsalted butter, melted, cooled
1/2 teaspoon salt
3 1/2 cups bread flour
1/4 cup unsalted butter, very soft
2 tablespoons honey

Steps:

  • Pour warm milk into the bowl of a stand mixer fitted with a dough hook attachment. Or, if you do not own a stand mixer, a regular large mixing bowl. Sprinkle yeast and 1/2 teaspoon sugar on top of the milk. Give it a light stir with a spoon and allow to sit for 5 minutes. The mixture should be frothy after 5 minutes. If not, start over with new yeast.
  • With the stand mixer running on low speed, add the honey, egg, egg yolk, melted butter, salt, and 3 cups of flour. Beat on low speed for 1 minute, then add remaining 1/2 cup of flour. Beat on low speed for 1 minute as it all combines. The dough should be thick, yet soft. And only slightly sticky. It should pull away from the sides of the bowl as it mixes. When it does, it is ready to knead. If, however, the dough is too sticky to handle- add more flour, 1 Tablespoon at a time. Make sure you do not add too much extra flour; you want a soft, slightly sticky dough.
  • Form dough into a ball and turn it out onto a lightly floured surface. Knead for 2 minutes, then place into a greased bowl- I usually just use olive oil or nonstick spray. Turn the dough over to coat all sides. Cover the bowl with plastic wrap and place it in a warm environment to rise until doubled, about 2 hours. For this warm environment, I preheat the oven to 200°F (93°C) then turn the oven off and place the bowl inside the warm-ish oven.
  • Once doubled in size, punch down the dough to release any air bubbles. Remove dough from the bowl and turn it out onto a lightly floured surface. Punch down again to release any more air bubbles if needed. Using a sharp knife, cut the dough in half. Cut each half into 8 equal pieces for a total of 16 pieces that are about 1/4 cup each- golfball size, give or take. They don't need to be perfect! Shape into balls as best you can and arrange in a greased 9×13 baking pan. Loosely cover with plastic wrap and allow to rise until doubled in size and puffy, about 1 hour.
  • Preheat oven to 350°F (177°C). Bake the rolls for 18-21 minutes until the tops are golden brown and the edges of each roll look cooked. While the rolls bake, mix the topping ingredients together to make a creamy honey butter. Remove the rolls from the oven when they are done and brush or spread a generous amount of honey butter onto each warm roll. Serve with any remaining honey butter.
  • Cover leftovers and keep in the refrigerator for up to 1 week or freeze for up to 3 months, then thaw overnight in the refrigerator. Warm up in a 300°F (149°C) oven for 10 minutes.
  • Make Ahead & Overnight Instructions: After dough has risen two hours in step 3, punch down the dough inside the mixing bowl and cover the bowl tightly with plastic wrap. Refrigerate overnight or for up to 2 days, then remove from the refrigerator and continue with step 4. OR freeze for up to 2 months, then allow to thaw overnight in the refrigerator and continue with step 4.

Mooncakes are pastries timed to the Mid-Autumn Festival, a holiday that celebrates the commencement of the harvest season. Traditionally, they showcased the best ingredients of a region, like sweet lotus seed paste in Guangdong, China, melon seeds in Hainan or pork in Yunnan, but you can stuff mooncakes with whatever you'd like, as long as the fillings are encased in dough and the exterior is aesthetically pleasing. In her forthcoming cookbook, "Mooncakes and Milkbread," the Chinese-American baker Kristina Cho has channeled that spirit by stuffing her mooncakes with blitzed pistachios and honey, a combination commonly found in baklava. The blend is enveloped in a classic Cantonese crust that uses lye water to bump up the pH of the dough, giving it a gentle amber hue, and golden syrup, which lends the cake a chewy, soft bite.

2 1/2 cups/300 grams all-purpose flour, plus more for dusting
1/2 cup/110 grams canola oil
1/2 cup/160 grams golden syrup (such as Lyle's Golden Syrup)
1 teaspoon lye water, sometimes known as kansui (see Tip)
1 large egg
1 1/2 cups/200 grams roasted unsalted shelled pistachios
1/4 cup/80 grams honey
2 tablespoons coconut oil
1 tablespoon cornstarch
1 teaspoon kosher salt (Diamond Crystal)

Steps:

  • Make the dough: In a large mixing bowl, combine the flour, oil, syrup and lye water. Using a flexible spatula, mix to form a shaggy dough, then knead with your hands to form a smooth, cohesive dough. Form the dough into a thick disk, wrap in plastic and let rest at room temperature for 45 minutes.
  • Heat oven to 350 degrees and line a large rimmed baking sheet with parchment paper.
  • Make the filling: In a food processor, pulse the pistachios until coarsely ground. Add the honey, coconut oil, cornstarch and salt, and pulse a few more times until the filling is a little crumbly but sticks together when pressed. Avoid overprocessing: You don't want to end up with pistachio butter. Divide the filling into 12 equal portions (each about 1 rounded tablespoon) and roll each piece into a ball.
  • Divide the disk of dough into 12 equal pieces. Roll each piece into a smooth ball. Working with one ball at a time and keeping the rest covered with plastic wrap, flatten a dough ball with your palm. Using a lightly floured rolling pin, roll into a 4-inch round (about 3/16-inch/ 1/2-centimeter thick), lightly dusting with flour if sticking. Gently lift the dough with a bench scraper or spatula, and center a ball of filling on the round. Bring the edges of the dough up around the filling. If the dough doesn't initially cover all filling, just pinch it together until it completely encases the filling. If there is excess, pinch it off. Pinch together any cracks that form and roll each round into a smooth ball.
  • As you form the balls, arrange them on the prepared baking sheet, spacing at least 2 inches apart. Lightly dust a 1.7-ounce/50-gram mooncake mold with flour. Place a ball in the mold and press the plunger down to apply pressure, but take care not to press too hard. Gently release from the mold and return to the baking sheet. Repeat with remaining dough and filling to form all 12 mooncakes. If you don't have a mooncake mold, skip this step and bake the mooncakes as balls.
  • Bake until the edges are light golden brown, 9 to 11 minutes. Remove the sheet from the oven and allow the cakes to cool on the sheet for 10 minutes. In a small bowl, mix together the egg and 2 tablespoons water. With a pastry brush, lightly coat the mooncakes with egg wash. Return to the oven and bake until darker golden brown, about 10 minutes. Transfer the baking sheet to a wire rack and allow the mooncakes to cool completely on the sheet. Before serving, store mooncakes in an airtight container or a resealable bag at room temperature for 1 to 2 days. This step is optional, but the extra time allows the crust to soften and become a little chewier. Mooncakes can be stored in an airtight container at room temperature or in the refrigerator for up to 5 days.
