2 cups granulated sugar
1/8 teaspoon kosher salt
2 sheets puff pastry, defrosted (recommended: Pepperidge Farm)

Steps:

  • Preheat the oven to 450 degrees F.
  • Combine the sugar and kosher salt. Pour 1 cup of the sugar/salt mixture on a flat surface such as wooden board or marble. Unfold each sheet of puff pastry onto the sugar and pour 1/2 cup of the sugar mixture on top, spreading it evenly on the puff pastry. This is not about sprinkling, it's about an even covering of sugar. With a rolling pin, roll the dough until it's 13 by 13-inches square and the sugar is pressed into the puff pastry on top and bottom. Fold the sides of the square towards the center so they go halfway to the middle. Fold them again so the two folds meet exactly at the middle of the dough. Then fold 1 half over the other half as though closing a book. You will have 6 layers. Slice the dough into 3/8-inch slices and place the slices, cut side up, on baking sheets lined with parchment paper. Place the second sheet of pastry on the sugared board, sprinkle with the remaining 1/2 cup of sugar mixture, and continue as above. (There will be quite a bit of sugar left over on the board.) Slice and arrange on baking sheets lined with parchment.
  • Bake the cookies for 6 minutes until caramelized and brown on the bottom, then turn with a spatula and bake another 3 to 5 minutes, until caramelized on the other side. Transfer to a baking rack to cool.

1 pound pancetta, sliced 1/8 to 1/4-inch thick
6 tablespoons honey
2 tablespoons Dijon mustard
1/4 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 450 degrees F. Line 2 rimmed baking sheets with parchment paper.
  • Arrange the pancetta in single layers on the prepared baking sheets. Bake until crisp, 16 to 18 minutes. Remove the pancetta from the oven and heat the broiler.
  • In a small bowl, mix together the honey, mustard and cayenne pepper until smooth. Brush the pancetta with the honey mixture, then broil until browned, 2 to 4 minutes.

1/2 teaspoon grated lime zest
2 tablespoons lime juice
2 tablespoons white wine vinegar
2 tablespoons honey
1 teaspoon Dijon mustard
1/4 teaspoon salt
3/4 cup fresh cilantro leaves
SALAD:
8 cups fresh arugula or baby spinach (about 5 ounces)
1/2 medium red onion, thinly sliced
1/4 cup thinly sliced fresh mint leaves
1/4 cup thinly sliced fresh basil leaves
8 cups diced honeydew melon
1 package (8 ounces) fresh mozzarella cheese pearls
1/4 pound thinly sliced prosciutto, cut into wide strips

Steps:

  • Place the first 8 ingredients in a blender; cover and process until smooth. Place arugula, onion and herbs in a large bowl. Drizzle with 1/3 cup vinaigrette and toss lightly to coat. In large serving bowl layer with a quarter of the arugula mixture, honeydew, mozzarella cheese and prosciutto. Repeat layers 3 times. Serve with remaining vinaigrette.

1 sheet puff pastry, 18 x 11 inches
3 tablespoons honey mustard
4 ounces prosciutto, thinly sliced
1 cup parmesan cheese, freshly grated
1 egg
2 teaspoons water

Steps:

  • Place the puff pastry on a work surface and spread the mustard over the top.
  • Arrange the prosciutto evenly over the mustard to cover all the pastry, and then sprinkle with the Parmesan.
  • Lightly press the cheese into the prosciutto with a rolling pin.
  • Starting at one long edge, roll up the puff pastry like a jelly roll just to the middle of the dough; then roll up the other side in the same fashion, making two rolls that meet in the center.
  • Using a serrated knife, cut the rolls crosswise into 1/2-inch slices.
  • Place the slices on cookie sheets lined with parchment paper and press lightly with your hands to flatten.
  • Refrigerate for 15 minutes.
  • Preheat oven to 400 degrees.
  • Beat the egg and water together in a small bowl.
  • Brush the top of each palmier with the egg wash.
  • Bake until puffed and lightly golden, about 10 minutes.
  • Serve warm or at room temperature.

1 (17.5 ounce) package frozen puff pastry sheets, thawed
5 ounces prosciutto, thinly sliced
5 ounces Parmesan cheese, thinly sliced
2 teaspoons prepared Dijon mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with nonstick oil spray.
  • Roll the thawed pastry out onto a flat surface. Spread Dijon mustard to taste on the pastry sheets. Cover pastry with a layer of prosciutto, then cheese. Roll the sheets, beginning at the long side. Cut into 1 inch thick sections. Arrange the sections on the prepared baking sheet.
  • Bake 10 to 12 minutes.
