WHIPPED SWEET POTATOES



Whipped Sweet Potatoes image

4 large sweet potatoes
2 tablespoons butter
1/4 cup heavy cream
1 teaspoon vanilla extract
1/2 teaspoon pepper
1/2 teaspoon sea salt
pinch of nutmeg

Steps:

  • Slice sweet potatoes into chunks. Place them in a large pot with cold water and let it come to a boil. Once the water is boiling, reduce the heat to medium-high. Cook for 20-30 more minutes, or until the sweet potatoes are fork-tender.
  • Drain the water and return the potatoes back the pot. Add the butter, heavy cream, salt, pepper, vanilla, and nutmeg. Whip the mixture with a food processor, hand mixer, stand mixer, immersion blender, masher, or a fork.
  • Serve and enjoy!

  • Melt butter in a large saucepan over medium heat. Add onion and sweet potatoes; saute 5 minutes. Add mustard and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until sweet potatoes are very tender.

¼ cup olive oil
2 tablespoons ground cinnamon
1 tablespoon honey, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Toss sweet potatoes, 1/2 cup honey, and olive oil together in a bowl until potatoes are completely coated. Spread potatoes out on a baking sheet and drizzle any remaining olive oil mixture over the top.
