- In a medium sized, heavy-bottom saucepan melt the butter over medium heat. When melted, stir in the brown sugar til it's starting to dissolve. Then add in the salt & and whipping cream and stir until dissolved.
- Bring the mixture to a slow, gentle, rumbling boil and allow to bubble for approximately 5 minutes while stirring occasionally to ensure the mixture isn't burning. Remove the pan from the heat and stir in the vanilla.
- Serve warm over ice cream, or allow to cool completely and store in an airtight container in the fridge.

EASY HOT FUDGE ICE CREAM SUNDAE

- In a small saucepan over medium heat, add heavy cream, sugar, and butter. Stirring constantly until the butter has melted.
- Simmer for a few minutes.
- Reduce heat to medium-low then add the chopped chocolate
- Stir until melted.
- Reduce the heat to low and add in cocoa powder. Cook for about 30 seconds or until smooth. Remove from heat and allow the fudge sauce to cool.
- Pour some fudge into the bottom of your bowl and then add ice cream.
- Drizzle with more fudge over the top.
- Top with whipped cream, chopped nuts, and maraschino cherries.

- In a medium saucepan over medium heat, bring the cream, sugar, corn syrup or honey, cocoa, and salt to a simmer, whisking until the sugar dissolves and the mixture thickens slightly, about 5 minutes.
- Stir in the chocolate and let cook until the chocolate melts. Stir in butter and vanilla or liquor. Let cool slightly. Contrary to its name, hot fudge is best served warm, not piping hot.
- For assembly, make the whipped cream. Using a whisk or an electric mixer, beat the cream, sugar, and vanilla until soft peaks form.

We had this at the New York State Fair. When we saw the sign Hot Beef Sundae, we were both curious. Really, it looks just like a hot fudge sundae and when we got home we made our own version.

- Make Butterscotch Sauce; set aside.
- Preheat oven to 350°F (metal or glass pan). Grease (or use cooking spray) bottom of 8- or 9-inch square pan. Beat cake mix, water, margarine and eggs in large bowl on low speed 1 minute, scraping bowl, or stir 2 minutes by hand. (Do not overbeat; batter may be slightly lumpy.) Spead in pan.
- See directions on Fudge pouch. Squeeze fudge onto batter in 4 lines, using all the fudge. Place tip of knife on bottom of pan, and draw across all lines of fudge in 7 or 8 back-and-forth motions as shown on package.
- Bake 8-inch pan 30 to 35 minutes, 9-inch pan 25 to 30 minutes or until toothpick inserted in center of cake comes out clean. (Decease bake time by 2 to 3 minutes if using dark, nonstick or glass pan.) Cool at least 10 minutes before serving.
- Serve cake warm or cool with ice cream and sauce.

INCREDIBLE ICE CREAM SANDWICH SUNDAE DESSERT
This is so so so good and cold on a hot summer's day! You can also make it up to 2 months in advance, so you can have it ready for unexpected guests :) I have modified this so much and tried it different ways, but the best is below with all of the optional ingredients used! I am the "dessert person" at all of the family gatherings and this is the most requested all the time! Enjoy!

- Cut one ice cream sandwich in half.
- Put one whole and one half ice cream sandwich along the short side of a 9" x 13" baking dish.
- Arrange eight ice cream sandwiches in opposite direction evenly in bottom of pan.
- Spread with half of the whipped topping.
- Drizzle or dollop most of fudge topping on top of whipped topping (save a couple tablespoons).
- Drizzle optional toppings (if using) and nuts on top, reserving a couple tablespoons of each.
- Repeat another layer of ice cream sandwiches.
- Top with remaining whipped topping.
- Fancily drizzle remaining hot fudge, butterscotch and strawberry toppings on top, along with walnuts or wet nuts.
- Cover and freeze for up to 2 months.
- Remove from freezer 20-30 minutes before serving.
- Cut into squares and top with a few maraschino cherries.
- Serve slices bananas on the side for people who are in a banana split mood and want to top theirs with bananas!
