Meltingly soft spiced onions add a bit of a kick to this simple hot dog recipe. You could serve at a kids party.

2 tbsp vegetable oil
6 organic hot dog sausages (we like Helen Browning's Organic Hotdogs, from Tesco and Sainsbury's)
6 white hot dog buns
Mustard or ketchup to serve
For the onions
2 tbsp sunflower oil
Knob of butter
2 onions, finely sliced
2 garlic cloves, crushed
2 tsp yellow mustard seeds

Steps:

  • To make the onions, heat the sunflower oil and butter in a sauté pan or deep frying pan and fry the onions gently for 5 minutes. Sprinkle with salt and continue to cook with the lid on for a further 10-15 minutes until very soft. Add the garlic and cook for a further 1-2 minutes.
  • Add the mustard seeds and a splash of water. Stir well, then cover the pan and cook gently for 30 minutes until the onions are soft, golden and rich.
  • Heat the vegetable oil in a frying pan, add the hot dogs and cook until golden brown and cooked through. Serve in the hot dog buns with the onions (use tongs to remove them from their juices) and a good squeeze of mustard or ketchup.

I did the cooking for most parties at the park, including snacks for our golf group which met twice a week after golf. Brian told me about the Push Cart Onions and I tried them with the group. They loved them. You can play with this recipe to suit your taste. Add more or less sugar, maybe a little more hot sauce, etc.

2 tablespoons vegetable oil
2 onions, sliced into 1/4-inch thick rings
½ green bell pepper, thinly sliced
¼ cup ketchup, or more to taste
½ teaspoon white sugar
⅛ teaspoon chili powder
1 dash hot pepper sauce
1 pinch ground cinnamon
1 cup water

Steps:

  • Heat vegetable oil in a large skillet over medium heat; cook and stir onions and green bell pepper until onions are slightly browned and soft, 8 to 12 minutes. Mix in ketchup, sugar, chili powder, hot pepper sauce, and cinnamon until thoroughly combined. Pour in water, bring mixture to a boil, and simmer uncovered until onions are tender, about 10 more minutes.

Try these NYC-inspired hot dogs: frankfurters topped with classic caramelised onions, ketchup, American mustard and a little sauerkraut

4 large frankfurters
4 hot dog buns, split
sauerkraut, to serve
1 tbsp vegetable oil
2 large onions, halved and sliced
1⁄4 tsp ground cinnamon
large pinch of chilli powder
2 tbsp honey
2 tsp American-style mustard, plus extra to serve
2 tsp ketchup, plus extra to serve
2 tsp tomato purée
2 tsp cider or white wine vinegar
1 tsp Worcestershire sauce

Steps:

  • First, make the onions. Heat the oil in a frying pan over a low-medium heat and cook the onions for 10-12 mins until golden and slightly charred in spots.
  • Stir in the cinnamon, chilli powder, honey, mustard, ketchup, tomato purée, vinegar, Worcestershire sauce, 2-3 tbsp water and a pinch of salt. Simmer for 1-2 mins until the onions are saucy, adding a splash more water if they seem dry. Taste and add a little more chilli powder, mustard or a pinch of sugar, if you like. Keep the onions warm if you're serving straightaway or cool and chill. Will keep in an airtight container in the fridge for up to five days. Reheat over a low heat before serving, adding a splash of water to loosen as needed.
  • Light a barbecue and wait until the coals are ashen, set a gas barbecue to medium or heat a griddle pan over a medium heat. Alternatively, bring a pan of water to a simmer. Cook the frankfurters for 15 mins on the barbecue or in a griddle pan until charred, or for 8 mins in a pan of simmering water. If using a barbecue, warm the buns over the coals, if you like. Spoon a little sauerkraut into each bun, top with a frankfurter and spoon over the onions. Drizzle over some extra mustard and ketchup.

2 slices sharp cheddar cheese, cut into 1/2-inch strips
2 tablespoons extra virgin olive oil
2 small onions, sliced 1/4-inch thick

Steps:

  • Preheat the broiler.
  • Make a slit lengthwise down each frank, being careful not to cut all the way through.
  • Place the grill seasoning and franks in a plastic bag; shake to coat.
  • Place the franks on a baking sheet and stuff each with 2 or 3 strips of cheese.
  • In a large skillet, heat the olive oil over medium-low heat. Add the onions and cook until softened and golden, 12 to 15 minutes. Add the brown sugar, chipotle, adobo sauce, and 1/2 teaspoon salt and cook, stirring, until the sugar dissolves, about 2 minutes.
  • Butter the insides of the buns and place up on the baking sheet with the franks. Broil until the cheese melts and the buns are toasted, 3 to 5 minutes.
  • Assemble the hot dogs and top with the caramelized onions.

1 1/2 cups finely diced mango
2 tablespoons finely diced red onion
2 teaspoons rice vinegar
2 scallions, white and light green parts only, thinly sliced
1/2 English cucumber, peeled, seeded and finely diced
1/2 jalapeno, minced
Kosher salt and freshly ground black pepper
8 hot dogs, butterflied
8 brioche hot dog buns
Unsalted butter, at room temperature, for brushing the buns
1/2 cup mayonnaise
1 cup crunchy fried onions

Steps:

  • Preheat a grill to medium-high heat.
  • Mix the mango, red onion, rice vinegar, scallions, cucumber and jalapeno in a small bowl. Season with salt and pepper.
  • Grill the hot dogs, flipping them halfway through so both sides get grill-marked and a little charred, until heated through, about 8 minutes.
  • Brush the inside of the brioche buns with butter. Grill until lightly toasted, 2 to 3 minutes.
  • Spread both sides of the inside of the buns with mayonnaise to your liking. Place a hot dog on each bun and spoon a few tablespoons of the mango mixture on the dog. Sprinkle with fried onions.

1 extra large onion, thinly sliced
1 ½ teaspoons hot pepper sauce (such as Frank's RedHot®)
1 teaspoon prepared yellow mustard

¼ teaspoon ground black pepper
¼ teaspoon ground cayenne pepper

Steps:

  • Heat oil in a med. size skillet on med/high heat. Add onions and cook til onions are very limp and all fluid is evaporated. Add all the remaining ingredients except for the tomato paste and water. And simmer uncovered for a few minutes. Then add the tomato paste and water. And simmer uncovered again til it reduces in half. Serve ontop of cooked hot dogs.
