HOT FUDGE CAKE
Here's a wonderful way to top off a great meal-a rich chocolaty cake that's not overly sweet. Mom served it with a scoop of ice cream or cream poured over. I'd always have room for a serving of Hot Fudge Cake. -Vera Reid, Laramie, Wyoming

- Preheat oven to 350°. In a large bowl, whisk flour, sugar, 2 tablespoons cocoa, baking powder and salt. In another bowl, whisk milk, oil and vanilla until blended. Add to flour mixture; stir just until moistened., Transfer to an ungreased 9-in. square baking pan. In a small bowl, mix brown sugar and remaining cocoa; sprinkle over batter. Pour hot water over all; do not stir. , Bake 35-40 minutes. Serve warm. If desired, top with ice cream.

- Cream butter or margarine and sugar together in a large bowl. Add vanilla, and then eggs to the mixture.
- In another bowl, mix together flour, soda, baking powder, and salt. Sour the milk by adding the lemon juice or vinegar. Add flour mixture alternately with soured milk to the creamed mixture.
- Mix cocoa and hot water together, and beat into batter.
- Bake 30 to 35 minutes at 350 degrees F (175 degrees C). Cool, and frost with desired frosting.

- Line a 2-qt. bowl with plastic wrap. Cut each cake roll into eight slices; place in prepared bowl, completely covering the bottom and sides. Cover and freeze for at least 20 minutes or until cake is firm., Spread vanilla ice cream over cake. Cover and freeze for at least 1 hour. Spread with fudge topping. Freeze for at least 1 hour. - Preheat oven to 350*F.
- Grease and flour a 15x10x1" baking pan.
- In a large bowl, combine the cake mix, water, oil, and eggs; beat with an electric mixer on low speed until moistened.
- Beat for 2 minutes on medium speed; stir in the chocolate chips.
- Spread batter evenly into the prepared pan; bake for 18-28 minutes, or until the cake springs back when touched lightly in the center.

- Spray a 9 1/2 inch deep-dish pie pan with cooking spray.
- In the prepared pan, mix the flour, yeast, sugar, salt, water, and melted butter.
- Top the batter with evenly-spaced spoonfuls of the hot fudge sauce. Using the spoon, swirl fudge sauce into the batter without mixing.
- Place the pie pan in a cold oven. Set the temperature to 350 degrees and bake for 25-30 minutes, until lightly browned and firm in the center.
- Cool 10 minutes. Combine powdered sugar and milk and drizzle over warm cake.

- Preheat oven to 350 degrees F (175 degrees C).
- In an ungreased 8 inch square baking pan combine the biscuit mix, white sugar, 2 tablespoons cocoa, nuts, milk, and vanilla blend well.
- Combine brown sugar and 1/4 cup cocoa. Spoon evenly over top of cake mix. Do no stir. Pour the boiling water carefully over everything. Do not stir.
- Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes. Allow cake to cool in pan for 20 minutes before serving. Serve with whipped cream or vanilla ice cream.

- For the Cake Heat the oven to 350F. Grease a 9”x13” metal cake pan (Don’t use glass, because you want the cake to have straight sides) Line the bottom of the pan with parchment, and spray lightly. Set aside. Combine cake mix and the rest of the cake ingredients in a large bowl. With a hand mixer, mix on low speed for about 30 seconds. Scrape the bowl. Mix on medium speed for 2 minutes, scraping bowl as necessary. Pour into the prepared pan and smooth the batter. Bake for 22-25 minutes or until cake springs back when pressed lightly and the cake starts to shrink away from the sides of the pan. Remove to a rack to cool for 10 minutes.
- To Make the Fudge Sauce Combine all ingredients except vanilla in a heavy-bottomed saucepan. Heat on medium heat, stirring constantly until all the chocolate has melted. Stir in the vanilla after you have removed the pan from the stove. This way the vanilla will not evaporate. Keep warm (or reheat) for serving. Makes a generous 2 cups of sauce.
- To Assemble Level the top of the cake if necessary with a knife. You want the cake pieces to have the same thickness so it looks uniform when served. Carefully slice the cake in half horizontally. Leave the halves in place. Each half should be about 3/4 inch thick. Cut the cake in half, short-wise. You will end up with 4 rectangles of cake, each about 9” x 6”. Set half the cake aside (for another use or to repeat the assembly process depending on how much hot fudge cake you want) Spread 2 long, overlapping sheets of plastic wrap on the counter. Place the bottom rectangle of cake on the wrap. Peel off the cardboard from around the ice cream.
