HOT FUDGE SAUCE

Hot Fudge Sauce image

This recipe for a classic hot fudge sauce came to The Times in 2004, from Kay Rentschler. "A well-constructed homemade hot fudge sauce moves forward with dark smoky accents and arrives with plenty of chew," she wrote. Here, bittersweet chocolate and high-fat Dutch process cocoa bring that smokiness, while heavy cream, butter and sugar mellow it out. It's a perfect contrast to the milky sweetness of a sundae loaded with vanilla ice cream and whipped cream.

Provided by Kay Rentschler

Categories     condiments, ice creams and sorbets, dessert

Time 10m

Yield 3 cups

Number Of Ingredients 8

2 cups heavy cream
4 tablespoons unsalted butter
1/2 cup light brown sugar
3/4 cup granulated sugar
1/4 teaspoon fine sea salt
2 ounces bittersweet chocolate in small pieces
1 1/4 cups sifted high-fat Dutch-process cocoa like Valrhona, Pernigotti or Droste (sift, then measure)
1/2 teaspoon vanilla extract

Steps:

  • In medium saucepan, combine cream, butter, sugars and salt. Bring to a simmer over medium-low heat. Simmer 45 seconds. Add chocolate, and whisk to dissolve. Remove from heat, add cocoa, and whisk until no lumps remain.
  • Return pan to low heat, and simmer sauce until glossy, whisking constantly, 20 seconds. Remove from heat, and stir in vanilla. Serve warm. To reheat sauce, warm in a saucepan over low heat, stirring constantly. Do not boil.

HOT CARAMEL SAUCE

Hot Caramel Sauce image

Be careful when working with hot caramel; never touch or taste it until it has cooled fully.

Provided by Martha Stewart

Yield Makes 1 cup

Number Of Ingredients 5

1 cup suger
1/2 teaspoon salt
1 tablespoon water
6 tablespoons (3/4 stick) butter, cold, cut into small pieces
1/2 cup heavy cream, gently heated

Steps:

  • Heat sugar, salt, and water in a heavy-bottomed pan over high heat until the mixture starts to color around the edges. Lower heat to medium and swirl mixture until it turns light brown. Remove pan from heat, and whisk in butter, then the cream, in small amounts. (Be careful: the cream may spatter.) Let cool, then transfer to a heat-proof serving dish. Store sauce in the refrigerator.

CARAMEL-FUDGE SAUCE

Caramel-Fudge Sauce image

This has a wonderful flavor and sure beats the stuff off of the shelf! It is medium bodied and not a thick fudge sauce. From the food network. This is really good served with chef V's recipe #200585

Provided by cookiedog

Categories     Sauces

Time 20m

Yield 1 cup

Number Of Ingredients 8

1/2 cup sugar
2 tablespoons light corn syrup or 2 tablespoons dark corn syrup
2 tablespoons water
3/4 cup heavy cream
4 tablespoons unsalted butter
4 ounces good quality bittersweet chocolate, finely chopped (I used 4 oz semi-sweet chocolate chips)
1 teaspoon pure vanilla extract
1 pinch salt

Steps:

  • Put the sugar, corn syrup, and water in a medium saucepan.
  • Cook over medium-high heat, brushing down the sides of the pan as needed with water, until the sugar dissolves.
  • Continue to cook, swirling the pan but not stirring, until the sugar is amber in color, about 8 minutes.
  • Pull pan from the heat and carefully add the cream and butter. Take care; it may spatter. Whisk until smooth.(You may find that some of the sugar mixture will stick to the bottom of your whisk- don't worry the sauce will still be wonderful!).
  • Stir the chocolate, vanilla, and salt into the hot caramel until smooth. Serve sauce warm.
  • Store in a sealed container in the refrigerator for up to 1 week. Reheat slowly, in a microwave at 30 second intervals, stirring, until warm and saucy. Be careful not to over heat or butter can separate from the caramel sauce.
