SPICY SAUSAGE AND BROCCOLINI PANINI



Spicy Sausage and Broccolini Panini image

1/4 cup olive oil
4 ounces spicy Italian sausage, loose
1 bunch broccolini, trimmed and chopped
1/4 teaspoon kosher salt
2 cups shredded aged provolone
8 slices white bread

Steps:

  • Place a medium skillet over medium-high heat. Add 1 tablespoon of olive oil and the sausage to the skillet and cook, stirring often and breaking the sausage apart with the back of a wooden spoon, until the sausage is cooked and beginning to brown, about 4 minutes. Add the broccolini and salt and continue to cook until the broccolini is tender, an additional 6 minutes. Allow the mixture to cool.
  • In a medium bowl, mix together the sausage mixture and provolone until combined. Place 4 slices of bread on a cutting board and divide the mixture evenly among the slices. Top with the remaining slices of bread.
  • Heat a large skillet or griddle over medium heat. Brush with 1 1/2 tablespoons of the remaining oil and place 2 sandwiches in the skillet. Cook until lightly browned and crispy on the bottom, about 3 minutes. Flip the sandwiches and cook until crispy on the bottom and the cheese is melted, an additional 3 minutes. Continue with the remaining oil and sandwiches. Cut into squares or triangles and serve.

1 (24 ounce) jar Classico® Tomato and Basil Sauce
4 fresh Italian sandwich rolls

Steps:

  • Heat the oil in a skillet over medium heat. Add the sausages; cook until browned on all sides, following cooking instructions indicated on the packaging. Remove sausages from the pan. Drain grease, leaving about a tablespoon for the vegetables.
  • Cook peppers and onions in skillet over medium heat until they begin to soften. Add garlic, salt, and pepper and cook one more minute.
  • Stir in Classico Tomato & Basil Sauce. Increase heat until sauce begins to boil; reduce heat and simmer over low heat.
  • Cut the sausages into 1-inch pieces; add to the pan and stir to combine. Cook until the sauce has thickened and the peppers and onions are soft, about 10 minutes.
  • Serve in bowls or on rolls as sandwiches.

5 Hungarian wax peppers
1 large sweet yellow pepper
1 large sweet red pepper
2 medium sweet onions, chopped
2 tablespoons olive oil
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (6 ounces) tomato paste
1/2 cup water
4 garlic cloves, minced
2 bay leaves
1 tablespoon dried parsley flakes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/8 teaspoon white pepper
8 Italian sausage links (4 ounces each)
8 hoagie buns, split

Steps:

  • Seed wax peppers if desired; cut wax and bell peppers into 2-in. pieces. In a large skillet, saute peppers and onions in oil until tender. Stir in the tomatoes, tomato paste, water, garlic, bay leaves and seasonings; heat through., Meanwhile, in another large skillet, brown sausages. Transfer to an ungreased 13-in. x 9-in. baking dish. Top with pepper mixture. , Cover and bake at 350° for 35-40 minutes or until a thermometer reads 160°. Discard bay leaves. Serve on buns.

Steps:

  • In a heavy pan brown sausages until nearly cooked through and set aside.
  • Add onions and cook until fairly brown.
  • Add peppers and garlic and cook till the consistency you like.
  • I like it tender crisp for color and flavour.
  • Add sausages back in and cook together till cooked through.
  • Remove from heat and add salt and pepper to taste.
  • Enjoy!

This is a variation of Mysterygirl's panini recipe (Recipe #16432) that I came up with when I had a craving for Italian sausage. I must say that it turned out really great, but try it for yourself! Amounts are for one sandwich - just multiply as necessary.

1 hot Italian sausage or 1 sweet Italian sausage, uncooked
1 ciabatta bun, split
2 -3 slices provolone cheese (depending on size of slices)
roasted red pepper, to taste (or other toppings)

Steps:

  • Put sausage in small pot and cover with water.
  • Bring to boil over high heat.
  • Once water boils, prick the sausage with a fork several times so that the grease comes out as it cooks.
  • Boil sausage for 5 minutes, or until it looks at least halfway cooked.
  • Remove sausage from water, and either rinse it under warm water (there might be some scum on it), or wipe it with a clean paper towel.
  • Preheat George Foreman grill.
  • Slice sausage in half, lengthwise.
  • Place sausage cut-side down on hot grill, and cook until done (about 5 minutes or so).
  • Place cheese in bun, then add sausage, and top with roasted red peppers and/or your own favourite additions such as hot banana peppers, marinara sauce, olives, tomatoes, fresh basil, etc, etc.
  • Close sandwich and grill in George Foreman until the bread is golden and crispy.
  • Cut sandwich in half and enjoy!
