ITALIAN SAUSAGE WITH PEPPERS

- Seed wax peppers if desired; cut wax and bell peppers into 2-in. pieces. In a large skillet, saute peppers and onions in oil until tender. Stir in the tomatoes, tomato paste, water, garlic, bay leaves and seasonings; heat through., Meanwhile, in another large skillet, brown sausages. Transfer to an ungreased 13-in. x 9-in. baking dish. Top with pepper mixture. , Cover and bake at 350° for 35-40 minutes or until a thermometer reads 160°. Discard bay leaves. Serve on buns.

FRESH ITALIAN SAUSAGES WITH PEPPERS

- Add the sausages to a skillet, add water to a depth of 1/8 inch of water to bottom of skillet and cook, covered for 10 minutes. Discard all but 1/3 of the liquid, then cook the sausages, uncovered for another 10 to 15 minutes or until they are cooked through and brown and golden on all sides. (During this time make your side dish instant polenta or rice) When the sausages are done, remove them to a cutting board and keep warm. Add the olive oil to the same saute pan. When hot add the pepper strips and saute for 8 minutes or until tender. Add the garlic and saute another half a minute or until cooked but not brown. Add the vinegar and evaporate for a few seconds. Remove the skillet from the heat and stir in half of the chopped parsley; season well to taste with salt and pepper. Cut the sausages on the bias and pile them up in the center of a generous mound of soft polenta or rice; wreath the sausages with the peppers and garnish with remaining chopped parsley.
NOT EXACTLY ITALIAN SAUSAGES WITH PEPPERS
The way most people make Italian sausage and peppers is to smother the sausage in lots of sautéed peppers. It's good, but I expand on the theme with plump, juicy tomatoes and a big handful of basil. And turkey sausage adds a healthy twist to this traditional dish. Try it spooned over pasta for a truly Italian experience.

- 1. Heat the oil in a large skillet over medium-high heat. Add the sausages and cook, stirring occasionally, until they are lightly browned, about 3 minutes.
- 2. Add the onions, bell peppers, and garlic. Cook, stirring often, until the vegetables soften, about 6 minutes. Add the tomatoes, basil, and oregano. Cook, stirring often, until the tomatoes and sausage are heated through, about 5 minutes more. Season with salt and pepper. Serve hot.

Steps:
- Cube Pork make sure you have a ratio of about 3 to one meat to fat . I use pork butt and works fine.
- Run through meat grinder using a medium coarse blade. Once.
- Mix in remaining ingredients and run through again.
- Stuff in to pork casings and freeze. Cook as a raw sausage.
- Or wrap in plastic wrap in medium sized links (about 1 inch diameter and about 6 inches long) wrap tightly and tie off ends and poach in almost boiling water at first, then increase to slow boil for ten minutes. Remove and unwrap. Put in freezer bags squeezing out air. Freeze. To cook:thaw, reheat in skillet with a little butter until browned.

- Preheat the oven to 375°. In a large roasting pan, toss the bell peppers with the onions, tomatoes, olive oil and crushed red pepper and season with salt and black pepper. Roast for 40 minutes, until the peppers are tender.
