HOT SAUSAGE LINKS AND BEANS CASSEROLE
Potatoes, beans sausage and cheese, who could ask for more. It's savoury, spicy and slightly sweet all at the same time. One of my DH's favourites and easy to throw together. Delicious!!!

Steps:
- Preheat oven to 350*F (175*C).
- In a medum skillet, heat 1 TBS of the olive oil over medium heat.
- Add the garlic and cook for 30 seconds.
- Stir in the onion, oregano, parsley, salt and peppr.
- Cook for 1 minute and remove from the heat.
- Grease the bottom of an 8X8X2inch baking dish with the remaining TBS olive oil.
- On this layer the cubed cooked potatoes.
- Top the potatoes with the onion mixture.
- On the onion mixture, evenly distribute the sliced hot links.
- Ina small bowl, combine the brown sugar, baked beans and the barbecue sauce.
- Pour this evenly over the sausage.
- Top with the shredded Cheddar Cheese.
- Place in the pre-heated oven for 45 minutes.
- Serves 4.
HOT TURKEY SAUSAGE LINKS CASSEROLE
Potatoes, hot turkey sausage and carrots equal a family pleasing concoction. It's spicy, flavorful, and simple to put together. My two sons and husband all liked this meal, which is a real accomplishment in and of itself! If spicy is not your thing, feel free to use mild or sweet sausage links in its place. *Picture is of dish before being placed into oven*

Steps:
- In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. Add remaining ingredients., Pour into a greased 13x9-in. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 20-30 minutes longer or until bubbly.

- Heat oil in your casserole dish over a medium to high heat and brown the sausages - you don't need to fully cook them at this point, you just want some colour on the skins.
- Take out the sausages and set aside on a plate, turn the heat down to medium then add the onion to the pan and cook for about 5 minutes until soft but not browned.
- Add in the garlic and carrots and cook for another 2 minutes, then add in the tomato paste, bay and thyme leaves.
- Pour in the tinned tomatoes and stock and bring to the boil, then return the sausages to the pan.
