Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix oats, flour, 3/4 cup brown sugar, and butter together in a bowl until crumbly.
- Mix apples, pears, 3/4 cup brown sugar, and cinnamon together in a separate bowl; spread into the bottom of a 9x9-inch glass pan. Sprinkle oat mixture atop apple-pear mixture; top with almonds.
- Bake in the preheated oven until the top is golden brown, about 40 minutes.

MINI BELL PEPPER POPPERS WITH BACON

- Preheat the oven to 400 degrees F. Line a large rimmed baking pan with foil and spray lightly with cooking spray.
- Cut the peppers in half lengthwise and remove the ribs and seeds. Arrange the peppers on the prepared baking pan cut-side up.
- Mix the cream cheese, Cheddar, bacon, Fresno pepper and milk together in a bowl until very well mixed and soft.
- Put the mixture into a resealable plastic bag (or a disposable pastry bag) and snip a corner to make an opening a little less than 1/2-inch across. Pipe a line of the cream cheese mixture into each of the peppers (the filling should not fill the whole pepper; it will spread as it cooks).
- Bake until the peppers are tender and the filling is melted, about 15 minutes. Serve hot.

Steps:
- In an 8-quart pot, combine apples, apple juice, lemon juice, and butter.
- Over medium heat, bring the apple mixture to a boil; decrease heat and simmer, covered, until the apples are tender, about 8-10 minutes.
- Remove the cover; add in sugar, 1 cup at a time, stirring gently between each addition.
- Heat, stirring occasionally, until the sugar is completely dissolved.
- Increase heat to medium-high and bring mixture to a full rolling boil, stirring constantly.
- Stir in all the pectin; return to a full boil, stirring constantly.
- Boil, stirring constantly, 1minute.
- Remove pan from heat; skim off any foam.
- Gently stir in the nutmeg and cinnamon until combined.
- To prevent floating fruit, allow the preserves to cool 5 minutes before filling the jars.
- Gently stir the preserves to distribute the fruit.
- Ladle the preserves into hot sterilized jars, leaving ¼ inch headspace.
- Wipe the jar rims and threads with a clean, damp cloth.
- Cover hot lids and apply screw rings.
- Process half-pint jars in a 200° F water bath for 10 minutes; pint jars for 15 minutes.

- Wash and quarter apples; place in a 6-quart saucepan. Add 6 cups water; place over medium-high heat; bring to a boil. Reduce to a simmer; cook until very soft, 45 to 60 minutes; remove from heat. Pour into a bowl through a fine mesh strainer lined with two layers of damp cheesecloth. Gather cheesecloth; tie into a bundle. Suspend from a wooden-spoon handle set over bowl; drain, without pressing solids, 1 hour, to yield about 4 cups juice.
- Place juice in a saucepan over medium-high heat; bring to a simmer. Cook for 10 minutes; skim foam. Add sugar; stir to dissolve. Clip on a candy thermometer; cook until the temperature reaches 220 degrees, skimming foam. Pour into jars, let cool, and keep refrigerated for up to 6 months.

- Pour sugar into a heavy 5-quart pot; stir in water until well blended.
- Bring mixture to a boil over high heat, stirring often.
- Reduce heat to medium and cook, uncovered, for 10 to 15 minutes.
- Pare and core apples; cut into small chunks, to make about 8 cups.
- Slice thinly or chop the peppers.
- Add apples, and peppers to sugar-water mixture.
- Cook (boiling gently) over medium heat, stirring occasionally, for 35 to 40 minutes or until preserve is thickened and apples are translucent.
- Meanwhile, prepare 6 half-pint canning jars.
- Fill jars to within 1/8-inch of rim.
- Wipe clean and place lids and rings on screwing on as tight as comfortable.
- Let cool on a towel out of a draft; then press lids with your finger.
- If they stay down, they're sealed.
- Label and store in a cool, dark area.
- If not sealed, store in refrigerator.
