1 boneless chuck roast 3 to 4 pounds approx.
1 tbsp olive oil
1 large yellow onion chopped, or two small onions
4 cloves garlic coarsely chopped
2 sprigs fresh rosemary or ½ teaspoon dried rosemary
3 sprigs fresh thyme or ½ teaspoon dried thyme
1 bay leaf
1 c red wine
2 c beef broth or as needed to fill halfway

Steps:

  • Preheat the oven to 350 degrees.
  • Season chuck roast with sea salt and pepper.
  • Place the Dutch oven on the stovetop. Sear the meat on both sides in butter until golden brown. About 3 minutes.
  • Add the garlic, onions, and rosemary. Mix in the red wine and broth. Saute for about 5-10 minutes.
  • Cover the lid and place it in the oven. Bake for an hour.
  • Remove the pot and add potatoes, green beans, and carrots. Bake for about 2 more hours.
  • Remove the pot and let cool slightly. Serve while hot.
