HOW TO COOK FARRO
This is the BEST and easiest way to cook farro on the stovetop! This technique is similar to cooking pasta and takes only 30 minutes.

- Start by bringing a large pot of salted water (at least 3 cups) to a boil, similar to how you would cook pasta.
- While the water is heating up, rinse the dry farro in a fine-mesh sieve to remove any powdery coating or debris.
- Add the rinsed farro to boiling water, then reduce heat to a simmer. Allow it to cook for the amount of cooking time indicated on the package. NOTE: Most varieties sold in North America will be pearled or semi-pearled, so cooking time is typically around 20-ish minutes.
- Once cooked, drain the farro into the same sieve. The farro will NOT absorb all the water in the pot; again, just like pasta.
- Once drained, spread the farro onto a large baking sheet in a single layer. Allow the farro to dry for about 10 minutes. This step is key - it really helps prevent farro from getting mushy!
- After that, your farro is ready to be used in whatever recipe you choose, or can be easily stored and kept for later.

- Place the farro and cooking liquid of choice in a pot. Bring to a boil, then reduce to a simmer and cover the pot.
- Cook until the liquid is absorbed and farro is cooked, see times in notes.
- Place 1 cup farro and 2 cups vegetable stock in the inner pot. Press the manual or pressure cook button and adjust the timer to 10 minutes.
- When the timer beeps, let the pressure release naturally for 10 more minutes, then quick release any remaining pressure.
- Most of the liquid should be absorbed, but you can drain it if there is more than you would like. I like it with a small amount of liquid remaining in the pot and not completely dry.

Farro is probably my favorite grain. I love it in salads, pilafs, and soups! I find the Instant Pot® gets it to the perfect texture and I don't have to worry about overcooking it on the stove.

- Combine water, farro, and salt in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure naturally according to manufacturer's instructions for 10 minutes. Release remaining pressure through the vent. Unlock and remove the lid. Drain any excess liquid that was not absorbed.

- Add the farro, water, and salt to the Instant Pot and stir. Lock the lid of the Instant Pot. Place the pressure release handle (vent) in the “Sealing” position.
- Press the Pressure Cook button, making sure the “High Pressure” setting is selected, and set the time. Note that it takes about 5 minutes for the pot to “preheat” and come up to pressure before it starts cooking. (During cooking, avoid touching the metal part of the lid.)
- After the Instant Pot beeps, set a timer and wait to let the Instant Pot naturally release pressure. Then vent any remaining steam by moving the vent to “Venting”, covering your hand with a towel or hot pad. Never put your hands or face near the vent when releasing steam. (The pressure indicator in the lid may drop on its own during this time, meaning that there is no remaining steam in the pot.)
- Open the lid and drain off any excess water. Serve immediately, or store in the refrigerator for 3 to 4 days.
