Steps:
- Clean and sanitize all cider making equipment before starting.
- Pour the Apple juice into the fermenting vessel.
- Take a hydrometer reading to measure the original gravity and record.
- Add Campden if using fresh unpasteurized cider if desired.
- Add yeast nutrient if desired.
- Pour the yeast into the fermenter.
- Close the fermenter and install an airlock filled with sanitizer.
- Allow the cider to ferment in a cool and dark place for about two weeks.
- Cold crash, rack and bottle.

- Make a Plan! Here is your Ingredient List: Apple Juice. Yeast. Priming Sugar (aka carbonation sugar, optional) Decide on batch size: 1 gallon or 5 gallon.
- Concoct the Batch. Clean and Sanitize your fermentation vessel. Make sure anything that touches your cider or other ingredients has been thoroughly cleaned and sanitized.
- Ferment the Cider. Store in a dark, cool area. (Ideally between 50°F-65°F) Monitor for the next 3 days. Vigorous fermentation should start and you’ll see lots of bubbling through the airlock.
- Age the Hard Cider. Keep your cider in the cool dark place. I recommend 2wks-2mos. This stage is often called “bulk aging” Top off your vessel if you lost some cider during primary fermentation.
- Bottle your Hard Cider to Enjoy! Clean and sanitize your bottles, lids, siphon, and tubes. (anything that will contact the cider) Siphon the cider off into bottles.
