Steps:
- Place a large pot over a medium low heat and add the olive oil. Add the celeriac, leek, potato, garlic and onion, and season with salt and pepper. Gently sweat the vegetables until the celeriac starts to soften, around 10 minutes.
- Add the vegetable stock and bring the soup up to a boil before reducing to a simmer. Simmer for 20 minutes or until the celeriac is completely tender. Add the parsley and use an immersion blender to puree until smooth, or alternatively blend in batches in a blender. Return to the heat and check the seasoning and adjust as necessary.
- Serve with a drizzle of olive oil or a dollop of yoghurt or sour cream.

- Melt the butter in a large, heavy-based pot over a medium-low heat. Add the celeriac, leek, potato, garlic and onion, season generously, and gently sweat the vegetables until they're all starting to soften (this will take about 10 minutes).
- Add the stock, bring the soup up to a boil, turn down the heat and simmer for about 20 minutes or until the celeriac is completely tender. Liquidise until smooth, return to the pan and reheat over a medium flame. Just before serving, check the soup for seasoning and serve.

- Preheat oven to 425 degrees F (220 degrees C). Slice the top off the whole head of garlic, sprinkle with 1 teaspoon olive oil, and season with salt. Wrap loosely in foil, and bake 45 minutes, or until the cloves are very soft. Squeeze the cloves into a small bowl, and mix with the 1/2 cup softened butter.
- Heat 2 tablespoons olive oil in a large pot over medium heat. Melt 2 tablespoons butter in the pot, and blend with the oil. Stir in the onions and celery root, and saute until the onions are lightly browned. Reduce heat to medium low, and mix in the beef broth, wine, and vegetable broth. Mix in the chopped garlic, and season with paprika, parsley, Cajun seasoning, salt, and pepper. Simmer, stirring occasionally, for 1 hour.
- Preheat the oven broiler.
- Spread the toasted bread slices with the garlic butter. Ladle the soup into oven safe bowls, and place the bowls on a baking sheet. Reserving remaining bread, place one slice of toasted bread on top of the soup in each bowl, and sprinkle with Swiss cheese.
- Broil soup 5 minutes in the preheated oven, until the Swiss cheese is melted. Cool for about 2 minutes before serving warm with remaining garlic bread.

CREAM OF CELERIAC SOUP WITH CRISPY PANCETTA AND CROûTONS
Celeriac is a great winter vegetable and it's put to wonderful use in James Martin's creamy soup.

Steps:
- For the soup.
- heat a wide, deep sauté pan or large saucepan until medium hot,.
- add 25g/1oz of the butter, the onion and bacon and fry for a couple of minutes to just soften.
- Add the garlic, leek, celery and thyme sprigs and fry for another minute; then add the chopped celeriac.
- Pour in the stock and bring to the boil, then reduce the heat to a simmer and cook for 10-15 minutes, or until the celeriac is just tender.
- Place into a food blender, in batches if necessary, and blend to a fine purée. Return to the heat in a clean pan.
- Add the cream and whisk in the remaining 50g/2oz of butter. Season with salt and white pepper.
- For the garnish.
- preheat the oven to 200C/400F/Gas 6.
- Place the pancetta onto a flat baking tray and cover with a second tray of the same size.
- Place in the oven and cook for 10 minutes until browned and cooked through.
- Remove from the oven and cool for five minutes until crispy.
- Heat a frying pan until hot, add half of the butter and the olive oil and heat until foaming.
- Add the celeriac and stir fry for 1-2 minutes, or until just softened, then remove from the pan and drain on kitchen paper.
- Add the rest of the butter and the bread to the pan and cook until golden-brown and crispy, tossing to cook on each side.
- Drain on a plate lined with kitchen paper and season with salt and freshly ground black pepper.
- To serve.
- pile the julienned celeriac into the centre of each of four soup plates.
- Ladle the soup around.
- Crumble the crispy bacon over the top and then scatter over the croutons.
- Finish with swirls of extra virgin olive oil and cream, and top with coriander cress.
YOSEMITE CELARIAC SOUP
This is served by Chef Percy in the Great Bracebridge Hall at the Ahwahnee Lodge in Yosemite, California. A little history: In the early 1920's, Stephen Mather, the National Park Service Director, realized that the Park needed accommodations to suit the affluent and influential traveler. The concept of a hotel such as The Ahwahnee became the impetus to draw such a visitor. The site for The Ahwahnee, once a village of the native Miwoks, was chosen because of its exposure to the sun and stunning views of Yosemite's icons - Half Dome, Yosemite Falls and Glacier Point. In July 1925, Gilbert Stanley Underwood was selected as the architect for Yosemite's new luxury hotel. Due to its remote location, the construction of The Ahwahnee was the most complex trucking endeavor of its day. Over 5,000 tons of stone, 1,000 tons of steel, and 30,000 feet of timber were hauled over the challenging mountain roads. To protect The Ahwahnee from fire, a fate of many of the Park's earlier hotels, its wood-like facade is actually concrete, poured into rough-hewn wooden forms and stained to look like redwood. Today, The Ahwahnee is a major attraction to visitors to Yosemite as they explore this unique relationship of architecture and nature.

- Preheat oven to 400 degrees F.
- Roast garlic by slicing off the top of the whole head. Place in the center of a 8"X12" piece of aluminum foil. Drizzle a teaspoon or so of olive oil over the sliced area. Bring the corners of the foil up together and gather them up into a cone. Place in oven for 30 minutes. Remove and let cool. Simply squeeze the roasted garlic cloves or pulp out of the garlic head and reserve for remainder of the recipe.
- Preheat a 4 qt sauce pan over medium heat. Saute diced onions in whole butter until the onions turn translucent, but not brown. Add marsala and cook for 3 minutes. Add remaining ingredients except heavy cream. Bring to simmer and cook for 30 minutes or until vegetables are very soft.
- Remove from heat. Remove star anise and bay leaf and blend with a hand blender until smooth. Strain through a fine meshed strainer. Season with salt and white pepper to desired taste. Place back into sauce pot and keep warm.
- Just before serving, add heavy cream and stir until incorporated. Adjust seasoning if necessary.
- Serve garnished with a nice extra virgin olive oil, sliced truffles, sliced chives, sourdough croutons or crostini, a dollup of crème fraiche or a drizzle of white truffle oil.

- Spice and herb sachet: Bundle the bay leaf, thyme, black peppercorns and coriander seeds loosely in a small piece of cheesecloth to create a sachet. Tie with cooking twine to secure.
- Cook onion and leek: Melt butter in large pot over medium-low heat. Add onion, leek, celery and garlic. Cook for 10 minutes until onion is soft but not golden. Don't rush this part – this creates an important flavour base so we can make this soup using water not stock.
- Cook celeriac and potato: Add celeriac and potato. Cook for 10 minutes, stirring regularly, until the outside of the celeriac and potato starts to soften. Be careful to not colour the celeriac - we're going for a white soup here!
- Simmer 25 minutes: Add salt, pepper, Spice and Herb Sachet, and water. Bring to a boil, then turn down to a simmer. Simmer for 25 minutes (no lid) until celeriac is very soft.
