THE BEST TOMATO SAUCE

The Best Tomato Sauce image

There are about as many versions of tomato sauce as there are cooks in the world. The Italian-American heritage of one of our test-kitchen team members informed the development of this recipe, leading us to a version of her family's favorite tomato sauce. A variety of canned tomatoes adds richness. A long simmer helps the flavors meld and results in a sauce that is perfect on pasta or nestled around chicken cutlets or meatballs.

Provided by Food Network Kitchen

Categories     condiment

Time 1h50m

Yield 12 cups

Number Of Ingredients 13

1/2 cup extra-virgin olive oil
6 cloves garlic
1 medium onion, diced
One 28-ounce can whole San Marzano tomatoes
One 28-ounce can crushed tomatoes
One 14-ounce can tomato sauce
2 tablespoons tomato paste
1 teaspoon granulated garlic
1 teaspoon onion powder
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 piece Parmesan rind, optional
1 sprig basil

Steps:

  • Combine the olive oil and garlic cloves in a large saucepan over medium-low heat and cook, stirring occasionally, until the garlic is soft and golden brown, about 6 minutes (do not let the garlic burn). Once the cloves are nicely browned remove them from the pot with a slotted spoon and set aside.
  • Add the onion to the garlic-infused oil and cook until translucent, about 5 minutes. Crush the can of San Marzano tomatoes into the pot with your hands, then fill the can with water and pour it into the sauce. Stir in the crushed tomatoes, tomato sauce, tomato paste, granulated garlic, onion powder and crushed red pepper flakes. Season with salt and pepper.
  • Finely chop the reserved browned garlic cloves and add to the sauce.
  • Stir in the Parmesan rind, if using, and the basil sprig. Bring the sauce to a simmer and cook, stirring occasionally, until it has deepened in color and reduced slightly, about 1 hour 30 minutes (if the sauce begins to scorch, lower the heat). Season to taste with salt and pepper. Discard the Parmesan rind and basil before serving.

HOW TO MAKE TOMATO SAUCE FROM SCRATCH

How to Make Tomato Sauce from Scratch image

Tomato sauce from scratch means making the sauce using fresh ingredients, including the tomatoes. That may seem difficult, but once you know how to prepare the tomatoes, making the sauce isn't that difficult. That means you can impress...

Provided by wikiHow

Categories     Sauces

Number Of Ingredients 10

2 pounds (907 g) ripe tomatoes
Water
2 tablespoons (30 ml) olive oil
1 medium onion, finely chopped
2 to 3 garlic cloves, crushed
1 teaspoon (4 g) sugar
Dash red wine vinegar
3 stems fresh basil
Salt and pepper to taste
Extra virgin olive oil for drizzling

Steps:

  • Boil a large pot of water, and create an ice water bath in a bowl. Fill a large stockpot halfway full with water, and bring it to a boil on your stove. While you're waiting for the water to boil, place cold water in a large bowl until it's halfway full and add a couple of handfuls of ice to make an ice water bath for the tomatoes.
  • Place the tomatoes in the boiling water. Once the water has come to a boil, place 2 pounds (907 g) of ripe tomatoes in the pot. Add the tomatoes one at a time, though, to prevent splashing. Leave the tomatoes in the water for approximately 45 seconds to a minute, or until their skins begin to split. Any kind of red tomatoes will work for the sauce, but roma tomatoes are a good option. You can also do a combination of several types of tomatoes. Use a pair of tongs to drop the tomatoes into the boiling water so you don't burn yourself.
  • Place the tomatoes in an ice water bath. When the tomatoes have sat in the boiling water for approximately 45 seconds, use your tongs to remove them from the pot and drop them into the ice water bath. Let them sit until their skins begin to crack and peel away from the fruit. Depending on how large your ice water bath is, you may need to boil and bathe the tomatoes in small batches so you don't overcrowd them.
  • Peel off the tomato skins and chop. After the tomatoes' skin begins to crack, remove them from the ice water and use your fingers to gently peel away the skin. Use a sharp knife to roughly chop the tomatoes, cutting away any hard pieces. While you can throw away the tomato skin, you may want to save it to make your own tomato paste.
  • Squeeze the excess water and seeds from the tomatoes. Place a large bowl on your work surface, and gently squeeze the tomatoes over it to remove any excess water and seeds. Next, place the tomatoes in a strainer over the bowl and press again to remove any seeds that you might have missed. You don't have to remove all of the seeds, but try to get rid of as many as you can.

REAL AUTHENTIC ITALIAN TOMATO SAUCE (NO CAN'S HERE)

Real Authentic Italian Tomato Sauce (No Can's Here) image

Here's the deal....if you want REAL authentic Italian tomato sauce, you've come to the right place. Sure you can save yourself all the time by opening a couple cans of diced/peeled tomatoes, but then again, that's not authentic at all. You can freeze this sauce for later use. This sauce is perfect for anything that requires a tomato sauce: e.g. spaghetti, lasagne, pizza sauce, etc. My girlfriend learned this authentic recipe while living in Italy for several years. It's simple, but takes a lot of time and a lot of love, but its well worth the effort! This is for your free Saturday or Sunday when you will be in the house for the day. Add more tomatoes, garlic, or basil if you wish. There really is no set amount for each of these, but I do suggest a minimum of 10 whole red ripe tomatoes, and a minimum of 5 garlic cloves. Add some crushed red pepper to give it a kick if you wish. This recipe is the rundown of how I make the sauce now. It took me several attempts to really master this, but once you get it down you can make more tomatoes at a time. I usually work with two pots and start out with 10 in each pot, skin all the tomatoes in both, combine and start more in the empty pot to really make a large pot to freeze. The local vegetable stand sells 25 lb. baskets for $9 while in season. We do 50 lbs. a week for a month, so we can freeze and have great sauce all during the winter. I'm going to put this makes 4 servings, but I'm really not sure. The amount of sauce used per person differs.

Categories     Sauces

Time 7h10m

Yield 4-6 serving(s)

Number Of Ingredients 6

10 red ripe whole tomatoes (beefsteak, use more for romas)
5 garlic cloves
1 cup fresh basil leaf
2 tablespoons extra virgin olive oil
salt
crushed red pepper flakes, for arrabiata sauce (angry sauce) (optional)

Steps:

  • Wash, and core tomatoes. I also like to cut the little "nub" off of the bottom of the tomato. Just the nub, and this will make it easier to remove the skins from the tomatoes.
  • Place whole tomatoes in a large pot and drizzle 2 tablespoons of extra virgin olive oil over tomatoes. Place lid on pot and heat over medium.
  • After about 15 minutes give the tomatoes a stir (I use a fork to do this), ensuring not to break them up. This moves the ones on top to the bottom to help the skins to become loose and to prevent burning any skins. Cover and allow to cook for 15 more minutes.
  • After 15 minutes, take a fork and fish out a tomato from the bottom. Keeping the tomato in the pot, use two forks, or a fork and wood spoon to start removing the skins. If you like, you can take the tomato out and place on a plate or in a bowl to do this, just make sure you keep the juices. If the tomatoes are not fully ready to be skinned, put the lid back on and check every 5 minutes. (This is the most time consuming part, but once you get the hang of it, it becomes really simple.).
  • After all or most of the skins have been discarded, lower the temperature to medium low and allow to simmer uncovered. This is simply stewed tomatoes at this point.
  • Once an hour, check the sauce and stir thoroughly. Using a wooden spoon, start to break up the tomatoes over the period of checking them. (Note: Don't break them all the way up on the first, second of even third time of checking them. Break them down over time).
  • After about 5 hours, smash all tomatoes with whatever instrument you can find that will work. Add garlic cloves whole, use more than 5 if you like, I DO! (Do not mince/chop garlic) Allow to simmer for another hour. (Note: If you feel the sauce has reached your desired consistency or is nearing, you can add the garlic earlier).
  • After 1 more hour, the garlic should be soft enough to smash easily on the side of the pot and the garlic will literally disintegrate into the sauce. If sauce is at your desired consistency, you can remove from the hot eye at this point and go to the next step, if you like your sauce a little less runny, or thicker, leave on and continue to monitor to your liking.
  • Once the sauce is to your desired consistency, remove from heat and add 1 cup of fresh basil leaves, stir. Fresh is important to making really good sauce. Salt to taste. If you like a little spice, add some crushed red pepper.

THE ULTIMATE TOMATO SAUCE RECIPE BY TASTY

The Ultimate Tomato Sauce Recipe by Tasty image

Here's what you need: canned whole tomatoes, garlic, olive oil, unsalted butter, large onion, kosher salt, pepper, anchovies, red pepper flakes, tomato paste, dry red wine, water, spaghetti, parmesan cheese

Provided by Rie McClenny

Categories     Dinner

Yield 8 servings

Number Of Ingredients 14

28 oz canned whole tomatoes, 2 cans
8 cloves garlic
¼ cup olive oil
2 tablespoons unsalted butter
1 large onion, finely chopped
kosher salt, to taste
pepper, to taste
2 oz anchovies, 1 tin or jar
1 teaspoon red pepper flakes
½ cup tomato paste
½ cup dry red wine
1 cup water
1 lb spaghetti, or paste of choice, dry
1 parmesan cheese, for grating

Steps:

  • Add the tomatoes to a deep, large bowl. Using your hands, crush the tomatoes until no large pieces remain, just a coarse tomato puree.
  • Peel the garlic cloves and finely chop.
  • Heat the olive oil and butter in a large pot over medium heat. Add the onion and garlic and season with salt and pepper. Cook, stirring occasionally, until the onion is softened but not browned, about 10 minutes.
  • Add the anchovies and the oil they are packed in. Cook, stirring occasionally, until dissolved into the oil, about 2 minutes.
  • Add the red pepper flakes and stir to combine.
  • Add the tomato paste and cook until it turns a dark, brick-red color, about 4 minutes (this caramelizes the sugars in the tomato, which will give a really great flavor and take the edge off that raw tomato-y taste).
  • Add the wine and cook for about 1 minute, just to burn off the alcohol.
  • Add the tomatoes and stir everything together, making sure to scrape the bottom of the pot to get all those good bits. Add water and bring it to a boil.
  • Reduce the heat to medium-low and cook the sauce for 1½-2 hours at a very low simmer; there should just be a few bubbles here and there. If medium-low is too high (every stove is different), reduce the heat to low. Stir every 30 minutes.
  • Ladle out about 2 cups of sauce: This is what is known as your "extra sauce." You'll serve it alongside the pasta or freeze it for later.
  • To serve, cook the spaghetti in a large pot of salted boiling water.
  • Drain the pasta and add it to the sauce. Serve it right out of the pot, or transfer to a serving bowl. Top with grated Parmesan cheese.
  • Enjoy!

Provided by Becca Miller

Categories     Sauces

Time 1h10m

Yield 2-3 cups, 4-5 serving(s)

Number Of Ingredients 10

1 tablespoon butter
1 small onion, roughly chopped
2 tablespoons brown sugar
6 roma tomatoes, woody stems removed
3 garlic cloves, smashed
2 1/2 cups beef stock
2 tablespoons tomato paste
3 tablespoons extra virgin olive oil
1 tablespoon italian seasoning
salt and pepper

Steps:

  • In a large saucepan, add butter, brown sugar, and onions, cook on medium high heat until onions are soft and caramelized.
  • Add tomatoes in a single layer, along with garlic.
  • Pour in enough stock to cover tomatoes 2/3 of the way up.
  • Stir in tomato paste until desolved.
  • Occasionally roll over tomatoes for even cooking, until the skins of the tomato start to fall off.
  • With a wooden spoon crush tomatoes, and continue to stir until tomatoes break down into bite sized piece and the stock has reduced by about half.
  • Now, break out the siv and put it on top of a large bowl.
  • Now, ladle in some of the sauce and push through the siv with a wooden spoon, occasionally scraping the bottom of the siv. You'll notice that the onion, tomato, and even the big chunks of garlic get pushed through, leaving behind the tomato skins.
  • Do this in batches till you've sivved all of the sauce.
  • If the sauce is still too thin, return to the sauce pan and reduce until desired thickness.
  • Turn off heat and stir in extra virgin olive oil, Italian seasoning, and salt and pepper to taste.

QUICK FRESH TOMATO SAUCE

Quick Fresh Tomato Sauce image

In August and September, when tomatoes are at their ripest, make a batch of fresh tomato sauce. At the market, look for the cracked, slightly bruised tomatoes sold at a discount. The flesh of the tomato should be dense, sweet and blood red. This makes a very fresh- and bright-tasting sauce in a manageable small batch. Take advantage of good tasty tomatoes and fill a few zip-top bags for the freezer.

Provided by David Tanis

Categories     sauces and gravies

Time 30m

Yield About 2 1/2 cups

Number Of Ingredients 7

5 pounds tomatoes
3/4 teaspoon salt
2 tablespoons olive oil
1 tablespoon tomato paste
1 garlic clove, halved
1 basil sprig
1 bay leaf

Steps:

  • Cut tomatoes in half horizontally. Squeeze out the seeds and discard, if you wish. Press the cut side of tomato against the large holes of a box grater and grate tomato flesh into a bowl. Discard skins. You should have about 4 cups.
  • Put tomato pulp in a low wide saucepan over high heat. Add salt, olive oil, tomato paste, garlic, basil and bay leaf. Bring to a boil, then lower heat to a brisk simmer.
  • Reduce the sauce by almost half, stirring occasionally, to produce about 2 1/2 cups medium-thick sauce, 10 to 15 minutes. Taste and adjust salt. It will keep up to 5 days in the refrigerator or may be frozen.

Estimated Reading Time 3 mins
  • Add Olive Oil and Onions. Use a wide skillet or a wide-bottomed pot. Start with plenty of olive oil and add diced onion. Sauté until translucent and very soft.
  • Season. Season the onions with salt so they release their liquids. This will help to bring out the natural sweetness of the onions. Take your time with this — it’s the first step in layering good flavor.
  • Crush Tomatoes. Open a can of whole, peeled tomatoes and crush them with clean hands. The pros like to use San Marzano tomatoes for the best flavor.
  • Add the Tomatoes and Simmer. Add the tomatoes to the garlic and onions. Taste and season. Simmer for about 20 minutes until the flavors come together.
  • Add Flavor and Spice. We're making a basic tomato sauce here. If you want to mix it up, try adding chili flakes, capers or olives while it simmers.
  • Enjoy! And those are the basics for homemade tomato sauce. If you like a smoother sauce, just purée in a blender when you're done cooking. Use it with pasta or as an ingredient in stews like cacciatore.
