HOW TO SEASON IRON TAWA | IRUMBU DOSA KALLU SEASONING
How to season iron tawa | Irumbu Dosa kallu seasoning is a basic yet very useful post for seasoning new iron dosa tawa, pan, or ladle. Though there are pre-seasoned iron vessels available in the market, it is quite expensive, but the same seasoning can be finished within Rs 5/- with very little effort at home within 3 days, the only time-consuming part is the resting time in every step.

Steps:
- Day 1: Take the iron dosa tawa and pour some liquid dishwashing gel.
- Using a metal scrubber, scrub the tawa in running water. Rinse well for about 3 to 4 times, till the water runs clear.
- Wipe it well with a tissue or waste cloth. Then, sun dry it for 2 hours.
- Ensure there is no moisture leftover before proceeding with this step. Sprinkle 2 tsp of salt and drizzle 2 tsp of oil on the tawa. Apply it thoroughly on the tawa and keep by side for 1 day.
- Day 2: The next day rinse it with dish wash gel in running water. Then, dry it completely.
- Rub it with lemon peel and set aside for 12 hours. Again, rinse well and dry it completely. If there is rust leftover, rub with lemon peel, rinse and dry it again.
- Apply oil and set aside for 12 hours. Day 3: Heat the tawa in low flame, then pour 2 tsp of oil. Add the mustard seeds, once it starts to splutter, add the urad dal, chopped onion and saute well. Then, discard everything.
- Wipe the tawa well and pour 1 ladle of dosa batter. Then, spread it like the regular dosa. Discard 1 or 2 dosa and after that, you can use the tawa as usual. Do check the notes section on how to maintain the dosa tawa.Do this Irumbu Dosa Kallu Seasoning and make crispy Dosa.
