1/4 cup rice vinegar
1/4 cup soy sauce

Steps:

  • In a small bowl, whisk all of the ingredients. Cover and store in the refrigerator.

1 and 1/2 c. sugar
2 t. dry mustard
2 t. salt
2/3 c. vinegar
2 t. soy sauce
3 T. onion juice or 1/2 c. chopped onion
2 c. salad oil
3 T. toasted sesame seeds

Steps:

  • In a food processor or blender combine sugar, mustard, salt, vinegar and soy sauce on medium speed for about 20 seconds or until completely blended. Add onion juice or onions. Blend until smooth. With the motor running on low speed add oil slowly in a thin, steady stream. Mix until thickened. Pour into a refrigerator container and stir in sesame seeds. Cap tightly and refrigerate to use within 1 month. (Makes about 1 quart). Sesame Salad Dressing like Hudson's recipe published in our August, 1989 Menu Minder.

1 cup mayonnaise, regular or 1 cup low fat

1 hard-boiled egg, diced

14 ounces ham, cut into strips
14 ounces cooked turkey breast, cut into strips
14 ounces swiss cheese, cut into strips
1/2 cup slivered sweet gherkin
1 head iceberg lettuce, shredded
12 -16 pimento stuffed olives

Steps:

  • Combine the first 6 dressing ingredients and stir to dissolve the sugar.
  • Add remaining dressing ingredients and mix well.
  • Combine the ham, turkey, cheese and pickles together in a large bowl.
  • Toss together with the dressing.
  • Divide the lettuce among plates, top with salad and garnish each plate with 2 olives.

1 large shallot, finely chopped
1 cup fresh lime juice
Kosher salt, freshly ground pepper
1/2 cup toasted sesame oil
1/2 cup vegetable oil
1/4 cup soy sauce
2 tablespoons honey or maple syrup

Steps:

  • Combine shallot and lime juice in a large jar or medium bowl; season with salt and pepper and let sit 10 minutes.
  • Add sesame oil, vegetable oil, soy sauce, and honey to shallot mixture; cover and shake (or whisk) to combine. Season sesame-lime vinaigrette with salt and pepper.
  • Do Ahead
  • Vinaigrette can be made 1 week ahead. Cover and chill. Shake to reincorporate just before serving.
